Cucumbers are a wonderful alternative to chips and dip at snack time. Here seedless cucumbers are stuffed with feta, yogurt, cream cheese, and walnuts. Yum!

Ingredients

6 tablespoon(s) nonfat greek yogurt
1 1/2 tablespoon(s) reduced fat cream cheese
2 tablespoon(s) feta
4 teaspoon(s) walnuts, chopped
1 - long seedless cucumber

Steps:

Cut cucumber in half lengthwise and remove seeds.
Mix yogurt, cream cheese, and feta. Spoon into cucumber; top with walnuts. Cut into 2" pieces.
Calories: 122 per half cucumber.

Ingredients

1 English cucumber
½ block (100 g, 3.5 oz) Saputo Feta cheese
2 tbsp (30 mL) extra-virgin olive oil
1 tbsp (15 mL) minced garlic flowers, or 1 tsp (5 mL) minced garlic
Zest and juice of ½ lemon
¼ cup (60 mL) mixed fresh herbs (basil, oregano, flat-leaf parsley, chives)
Black pepper
Kalamata olives, pitted and quartered or chopped in rounds

Steps:

Cut the cucumber into 1-cm-thick (0.4-in) slices. Set the slices on a serving plate.
In a food processor, combine the Feta cheese, extra-virgin olive oil, garlic flowers, lemon zest and juice, and fresh herbs, and process until the mixture is creamy. If the mixture seems too thick, add an additional spoonful of extra-virgin olive oil. Season with black pepper, to taste.
Top each cucumber slice with a spoonful of the creamy herbed feta mixture. Decorate with Kalamata olives and serve.

1 garlic clove , crushed
200g feta cheese
100g ricotta
4 tbsp chopped dill , plus extra fronds, to garnish
1 large cucumber , halved lengthways, seeds scooped out and discarded
cracked black pepper , to serve

Steps:

Add the garlic, feta, ricotta and dill to a food processor and whizz until smooth but thick.
Fill the middle of the cucumber with the cheese mix and smooth over. Cut into 3cm-thick slices. Sprinkle with cracked pepper and garnish with the dill fronds.
