- Place corned beef in large pot or Dutch oven and cover with water. Add the spice packet that came with the corned beef. Cover pot and bring to a boil, then reduce to a simmer. Simmer approximately 50 minutes per pound or until tender.
- Add whole potatoes and carrots, and cook until the vegetables are almost tender. Add cabbage and cook for 15 more minutes. Remove meat and let rest 15 minutes.
- Place vegetables in a bowl and cover. Add as much broth (cooking liquid reserved in the Dutch oven or large pot) as you want. Slice meat across the grain.

EASY CORNED BEEF PASTA BAKE
Delicious, easy corned beef pasta bake can be made ahead of time and then baked for a warming and substantial family supper. Make it in advance to pop in the oven when you get home.

Steps:
- Pour the olive oil into a large frying pan, add the onion and bacon, and fry, After a couple of minutes, add the garlic and cook until the onion is starting to turn golden.
- Add the pepper, season with pepper and salt and fry until soft.
- Add the canned tomatoes, the chilli and cook for about 5 minutes. The sauce will start to reduce and thicken.
- Once the sauce has thickened add in the corned beef. Stir and cook for few more minutes until you have a rich thick corned beef sauce.
- While the sauce is cooking, bring a large pan of water to the boil, salt well, add the pasta and cook for a few minutes less than the time on the packet instructions.
- Drain the pasta, reserving some of the cooking water. Return to the pan and stir in the corned beef pasta bake sauce. Add a few spoons of the cooking water if needed to loosen the mixture.
- Transfer to a shallow oven proof dish. Sprinkle with half the cheese, reserving the rest.
- Bake at 160°C fan / Gas Mark 4 for 15-20 minutes if cooking right away, or for about 30 minutes if cooking from chilled. When you have about five minutes left to go, add the rest of the cheese and cook until golden and piping hot throughout.

Steps:
- Preheat oven to 375°F
- Spray 13x9-inch baking dish with cooking spray.
- Bring water to a boil in large saucepan over high heat.
- Add macaroni; cook 5 minutes, stirring occasionally.
- Add cabbage; cook an additional 5 minutes, stirring occasionally.
- Drain well.
- Return to saucepan; stir in corned beef and onions.
- Mix soup, milk, mustard and pepper in small bowl until well blended.
- Pour over corned beef mixture; toss to coat.
- Stir in cheese. Spoon into prepared baking dish.
- Combine bread crumbs and butter in small bowl; sprinkle over corned beef mixture.
- Bake 30 minutes, or until hot.
- NOTE:
- If using leftovers simply omit the part about cooking the cabbage.

CORNED BEEF, CABBAGE AND PASTA BAKE
This is what I made up with my corned beef and cabbage leftovers. The amounts can vary, just use what you have leftover and add enough pasta to fill a 13x9 inch baking dish. Also, use any kind of corned beef: with or without cabbage, potatoes, onions, carrots etc. Really just use what you have. A scoop of sour cream would go nicely on top. Prep time does not include cooking pasta or corned beef.

- In a 6 quart Dutch oven, Place the beef brisket, peppercorns, garlic powder, onion, bay leaves and salt. Fill pan with water to cover everything plus one inch. Bring to a boil and cook for 20 minutes. Skim off any residue that floats to the top. Reduce heat to a simmer and cook for 2 to 3 hours, until meat can be pulled apart with a fork.
- Once the meat is done, add the cabbage, potatoes and carrots, pressing them down into the liquid. Simmer for an additional 15 minutes or until the potatoes are tender. Skim off any oil that comes to the surface. Stir in the butter and parsley. Remove the pot from the heat.
- Remove meat from the pot and place onto a serving dish and let rest for 15 minutes. Also remove vegetables to a bowl and keep warm. Slice meat on the diagonal against the grain. Serve meat on a platter and spoon juices over meat and vegetables.

- Place brisket, contents of seasoning packet, brown sugar and bay leaves in a large Dutch oven or stockpot; cover with water. Bring to a boil. - In a large skillet, melt the butter; stir in the cabbage, onion, and caraway seeds. Cover and cook over medium heat for 8-10 minutes or until the cabbage is crisp tender, stirring occasionally; set aside.
- Meanwhile, in a large bowl, combine the corned beef, Swiss cheese, and salad dressing.
