EASY BALSAMIC CHICKEN
This easy balsamic chicken is a 20-minute weeknight dinner with just 4 simple ingredients but great flavor!

Steps:
- Heat oil in a large pan over medium-high heat.
- Add onion and sauté until lightly browned and softened, about 3-4 minutes.
- Season chicken strips with salt and pepper. Push the onion to the sides of the pan and add the chicken to the pan.
- Cook until chicken is well browned, then flip the pieces over and cook on the other side until it is browned, about 6-8 minutes total.
- Add balsamic vinegar and chicken broth.
- Reduce heat to medium low and cook until it's reduced by half and chicken is cooked through, about 3-5 minutes.
- Serve chicken with extra juices drizzled on top.

- Sprinkle chicken with salt and pepper. In a large skillet, heat oil over medium heat. Add chicken; cook 4-6 minutes on each side or until a thermometer reads 165°. Stir in vinegar, honey and Italian seasoning; heat through., Meanwhile, in a small saucepan, bring broth, garlic powder and pepper to a boil. Stir in broccoli and couscous. Remove from heat; let stand, covered, 5-10 minutes or until broth is absorbed. Stir in cheese. Serve chicken with couscous.

ROASTED CHICKEN WITH BALSAMIC VINAIGRETTE

- Whisk the vinegar, mustard, lemon juice, garlic, olive oil, salt, and pepper in small bowl to blend. Combine the vinaigrette and chicken pieces in a large resealable plastic bag; seal the bag and toss to coat. Refrigerate, turning the chicken pieces occasionally, for at least 2 hours and up to 1 day.
- Preheat the oven to 400 degrees F. Remove chicken from the bag and arrange the chicken pieces on a large greased baking dish. Roast until the chicken is just cooked through, about 1 hour. If your chicken browns too quickly, cover it with foil for the remaining cooking time. Transfer the chicken to a serving platter. Place the baking dish on a burner over medium-low heat. Whisk the chicken broth into the pan drippings, scraping up any browned bits on the bottom of the baking sheet with a wooden spoon and mixing them into the broth and pan drippings. Drizzle the pan drippings over the chicken. Sprinkle the lemon zest and parsley over the chicken, and serve.
TOASTED ISRAELI COUSCOUS WITH VEGETABLES AND LEMON-BALSAMIC VINAIGRETTE

- Heat large saute pan on grates of the grill over medium heat. Add couscous and toast until lightly golden brown.
- Bring 6 cups of water to a boil over high heat, add 1 tablespoon salt and toasted couscous and cook until al dente. Drain well and place in a large bowl. Add grilled vegetables, olives, basil, and vinaigrette and toss until combined; season with salt and pepper. Let sit at room temperature for 30 minutes before serving or cover and refrigerate.
- Whisk shallot, juice, zest, vinegars, and salt and pepper together in a small bowl. Slowly whisk in oil until emulsified.
MOROCCAN-INSPIRED CHICKEN COUSCOUS

- Heat the oven to 425 degrees F.
- Make the seasoning rub. In a small bowl or glass measuring cup, add the olive oil, red wine vinegar, tomato paste, garlic, and spices. Whisk to combine.
- Pat the chicken dry and season with kosher salt and black pepper on both side. Pour about 3/4 of the rub you just made all over the chicken (reserve the rest for later) and toss to make sure all the pieces are well coated. Set aside for now.
- Put the vegetables and onions in a mixing bowl. Season with kosher salt and black pepper and pour the remaining seasoning rub. Toss to combine.
- Transfer the chicken and vegetables to a large baking pan or rimmed sheet pan.
- Bake in the center of the heated-oven for 40 to 45 minutes or until the chicken is fully cooked and the juices run clear. The vegetables should also soften and gain some char.
- While the chicken and veggies are baking, prepare the couscous. Boil the water or both until bubbling. Heat a tablespoon of olive oil in a saucepan. Add the couscous and cook, tossing regularly, until the couscous is toasted to golden brown. Season with kosher salt and ½ teaspoon ground cinnamon. Add the boiled water. Immediately turn the heat off and cover the saucepan. Leave the couscous undisturbed for 10 minutes, the couscous should absorb all the liquid. When ready, add the fresh parsley and fluff the couscous with a fork.
- When the chicken is fully cooked through, remove it from the oven. Spoon the couscous between the chicken pieces and allow it about 5 minutes to sop up some of the pan juices. Finish with the raisins, if you like.

- Sprinkle a desired amount of garlic powder, salt, and pepper over the chicken breasts. Then place them in a deep baking dish.
- Add balsamic vinaigrette to dish, until chicken breasts are covered.
- Cover and refrigerate for 30-45 mins and allow to marinate. (The longer it refrigerates, the better the flavor!)
- Preheat oven to 350°F When chicken is done marinating, place the baking dish, uncovered, in oven to bake for 30-45 minutes (until chicken is cooked through). Be careful not to overcook, as chicken can become tough and dry.
- **15 MINUTES BEFORE CHICKEN IS READY:
- In a medium skillet, heat oil and minced garlic on medium until garlic is fragrant and light brown.
- Add vegetables and cook until tender. Meanwhile, in a medium saucepan, bring chicken broth to a boil. Cook couscous according to box instructions.
- Add lemon juice to vegetables, and lower heat to a simmer.
- After fluffing couscous with a fork, add to the vegetables in skillet.
- TO SERVE: Place cooked chicken breast on a bed of vegetables and couscous, and then spoon out 2-3 tablespoons of balsamic vinaigrette to cover top of chicken. Enjoy!

This is a recipe I developed when I couldn't find one that was exactly what I wanted. This is a good side dish recipe for many different menus. It's also very versatile. You can add any different kind of veggies along with the onion (celery, peas, zucchini, carrots, tomatoes, corn). I use tri-color couscous in this recipe, but any kind will work.

- Heat olive oil in a medium saucepan over low heat. Saute onion and garlic slowly until tender, approximately 15 minutes.
- Stir in chicken broth and bring to a boil.
- Add couscous, cover pan, remove from heat, and let stand for 5 - 10 minutes.
- Pour couscous into a bowl and top with vinegar, salt and pepper. Stir until combined. You may wish to add less or more vinegar depending on what you like. 3T works for us.

I had this in a pile with other recipes. I am marinating my chicken now and will prepare this for dinner this evening. I'm posting it for safe keeping. To save calories, you could substitute chicken broth for the olive oil. Prep time does not include marinating time in the refrigerator.
