MY MOM'S BAJA BURGER



My Mom's Baja Burger image

This isn't your average burger. It's a burger made Baja-style! No grill? No worries! This burger is made in a skillet and is easy to make! My mom made this when we were young. It's a burger creation made with corn chips and spices served up on French bread.

2 pounds ground beef
1 cup corn chips (such as Fritos®, crushed
salt and ground black pepper to taste
1 (28 ounce) can tomato sauce
½ onion, chopped
½ teaspoon garlic salt
½ teaspoon chili powder
½ cup shredded Cheddar cheese
8 (6 inch) French bread rolls, split in half lengthwise

Steps:

  • Mix the ground beef and crushed corn chips; form into 8 oblong patties; season with salt and pepper. In a small bowl, mix together the tomato sauce, onion, garlic salt, and chili powder.
  • Heat a large skillet over medium-high heat.
  • Cook the patties in the hot skillet 4 to 5 minutes; flip and cook an additional 4 minutes. Pour the tomato sauce mixture into the skillet as the burgers finish cooking; simmer for another 4 to 5 minutes. Top each burger with Cheddar cheese and allow to melt. Place burgers on bread and ladle sauce on the patties before closing each sandwich.

1 lb lean ground beef
1 large onion, chopped
2 cans corn, undrained
2 (28 ounce) cans tomato sauce
4 -5 large potatoes, peeled and cubed
water

Steps:

  • Put ground beef and onion in a large pot, break up beef as it browns over medium heat.
  • When meat is browned, add corn, tomato sauce, then potatoes.
  • Add enough water to fill pot almost to the top (I use a 6qt. pot).
  • Bring to a boil, reduce heat and simmer until the potatoes are cooked.
  • Season with salt and pepper.
  • Serve with crusty bread and butter.
