12 large eggs
1/2 cup mayonnaise
Grated zest of 1 lemon plus 2 tablespoons lemon juice
1 tablespoon yellow mustard
1/4 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
1 avocado, diced
Watercress leaves, for garnish

Steps:

  • Fill a large saucepan with water and bring to a boil. With a ladle, slowly lower the eggs into the water one by one. Reduce the heat to a low boil and cook for 10 minutes. Drain.
  • When the eggs are cool enough to handle, remove the shells. Slice each egg in half lengthwise. Remove the yolks and place them in a food processor. Arrange the whites cut-side up on a serving platter.
  • To the food processor, add the mayonnaise, lemon zest and juice, mustard, salt, pepper and avocado. Process until well blended and smooth, then transfer to a resealable plastic bag. With scissors, snip off a bottom corner from the bag. Using the bag like a pastry bag, pipe the yolk mixture into the egg whites. Garnish with watercress. Serve immediately or cover loosely and chill until ready to serve.

1 avocado - peeled, pitted, and diced
3 slices cooked turkey bacon, chopped, divided
2 ½ tablespoons mayonnaise
2 teaspoons lime juice
1 clove garlic, crushed
⅛ teaspoon cayenne pepper
sea salt to taste
1 jalapeno pepper, sliced
1 dash hot sauce, or to taste

Steps:

  • Scoop egg yolks into a bowl; add avocado, 2/3 of chopped turkey bacon, mayonnaise, lime juice, garlic, cayenne pepper, and salt. Mash egg yolk mixture until filling is evenly combined.
  • Spoon filling into a piping bag or plastic bag with a snipped corner. Pipe filling into each egg white; top with a turkey bacon piece, jalapeno slice, and dash hot sauce.

I found this particular recipe on the website 12 Tomatoes it says at the bottom of it from Martha Stewart. These are amazing. Only change I made was a little less mayo and I subbed sliced jalapeno peppers for a whole pepper. I only used 3 slices, not a fan of anything that is very hot.

10 hard-boiled eggs
1 ripe avocado
1/4 cup mayonnaise (or less)
1/4 teaspoon black pepper
1/2 teaspoon salt
2 teaspoons lemon juice
1 jalapeno pepper, seeds removed minced
2 tablespoons cilantro, minced
1/4 cup shallot, minced
1/2 cup bacon, cooked and crumbled

Steps:

  • Slice eggs in half, and scoop out yolks. Set whites aside, and place yolks in a mixing bowl.
  • Add mayonnaise, salt, pepper, lemon juice and avocado to the bowl with the egg yolks.
  • Mix egg yolk mixture until mostly smooth and everything's combined.
  • Stir cilantro, shallots and jalapeño peppers, if desired, into the egg yolk mixture.
  • Scoop avocado egg yolk mixture into the empty egg white halves.
  • Top each egg half with crumbled bacon.
  • Refrigerate until ready to serve. Sprinkle with hot sauce for a extra kick.

1/2 ripe avocado, pitted, peeled and mashed (about 1/2 cup)
Juice of 1 lime (about 5 teaspoons)
2 tablespoons sour cream
1 teaspoon chopped fresh cilantro, plus 24 small leaves, for serving
Kosher salt
Cayenne pepper, for serving
Flaky sea salt, for serving

Steps:

  • Bring a large saucepan of water to a boil over high heat and prepare a large bowl of ice water. Gently lower the eggs into the boiling water with a slotted spoon and cook for 10 minutes. Drain the eggs with the slotted spoon and transfer to the ice water to cool completely, about 5 minutes.
  • Peel the eggs, halve each lengthwise and remove the yolks from the whites. Place the yolks in a food processor and set the whites aside on a plate. Add the avocado, lime juice, sour cream, chopped cilantro and 1 teaspoon kosher salt to the yolks and process until the mixture is smooth and light.
  • Spoon or pipe the yolk mixture into the cavities of the whites then sprinkle each egg lightly with cayenne and some flaky sea salt. Top with a cilantro leaf and serve the eggs immediately or cover and refrigerate up to 6 hours.

1 avocado, peeled and pitted
2 teaspoons freshly squeezed lemon juice
1/4 cup Homemade Mayonnaise
Coarse salt and freshly ground pepper

Steps:

  • Peel eggs and cut in half, either lengthwise or crosswise. Carefully scoop out yolks, and arrange whites on a platter or tray.
  • In the bowl of a food processor, process egg yolks, avocado, lemon juice, and mayonnaise until smooth. Season with salt and pepper.
  • Transfer egg yolk mixture to a pastry bag fitted with a large star tip. Pipe mixture carefully and very neatly into egg halves. Cover with plastic wrap, and refrigerate until ready to use, up to 3 hours.
