These are great as an appetizer! Someone brought these to a pot luck and everyone couldn't get over how good they were! You can serve them with chili or BBQ sauce or they are just as delicious plain.

Steps:
- Heat oven to 350. Lightly grease bottom & sides of Jelly Roll pan (15 1/2 x 10 1/2 x 2 x 1-inch).
- Stir together all ingredients.
- Shape into 1-inch balls. Place in pan.
- Bake 20-25 minutes until brown. Immediately remove from pan. Serve with sauce--BBQ or chili (they are great served plain as well).
- Makes 30-40 balls.

These are a little more moist than the standard sausage ball recipe. Use whatever flavor of 'cream of' soup you like. I generally use cream of mushroom, but cream of celery or chicken is also good.

- Preheat oven to 375 degrees. Spray baking sheets with cooking spray.
- Using a heavy-duty stand mixer with a dough hook (or your hands), mix the raw sausage and cheese together, then add the cream of mushroom soup. Add the garlic powder and Italian seasoning, then gradually add the biscuit mix until all is thoroughly combined.
- Shape into small balls about the size of a walnut, and place on baking sheet. Bake for 18-20 minutes, then remove and cool on a rack.
- You can also freeze these, either after they're cooked or (the way I prefer to do it) after you shape them and put them on the pan. I put them into the freezer for a couple of hours right on the baking sheets, then take them out and put them in a zip-top bag. Then I can take out a few at night, thaw them in the fridge, and pop them into the oven the next morning for a quick breakfast.

- Heat oven to 350 degrees. Grease one or two cookie sheets, depending on your oven and how many you want to cook at one time.
- Dump sausage, baking mix, and cheese in a BIG bowl and mix with your hands. It's gross feeling if your not used to it but you have to do it this way.
- If the mix is too dry, and mine have always been, put about 1/4 cup of the water in, mix around. If you are still not able to roll the mix into little balls because it's too dry then pour a little bit more water into it. If it gets too wet pour a little bit more baking mix into it.
- Roll into 1 inch balls and place on cookie sheet. Bake for 20-25 minutes. They should be golden brown and sausage cooked through.
- Repeat with remaining mix until all gone. Enjoy!

- Mix together sausage, cheese and green onion.
- In separate bowl, mix together dry ingredients. (This is equivalent to biscuit mix or self rising flour--so you could substitute if you wish).
- Mix flour mixture with meat/cheese mixture.
- When mixed fairly well, sprinkle in milk and mix until you get mixture to where it can be shaped into balls.
