- In a small bowl, combine 2 tablespoons salt, sugar, peppercorns and garlic; rub onto all sides of brisket. Cover and refrigerate 8 hours or overnight. In a small bowl, combine mayonnaise, blue cheese, horseradish and cayenne. Refrigerate until assembling., Place carrots, chopped onions and celery in a 6- or 7-qt. slow cooker. Place brisket on top of vegetables. In a small bowl, combine red wine, mustard and bay leaves; pour over brisket. Cook, covered, on low 7-9 hours or until meat is fork-tender., Meanwhile, in a large skillet, heat oil over medium heat. Add sliced onions and remaining salt; cook and stir until softened. Reduce heat to medium-low; cook 30-35 minutes or until deep golden brown, stirring occasionally., Remove brisket; cool slightly. Reserve 1 cup cooking juices; discard remaining juices. Skim fat from reserved juices. Thinly slice brisket across the grain; return to slow cooker. Pour juices over brisket., Serve brisket on buns with mayonnaise mixture and caramelized onions and, if desired, arugula and tomato slices.

- Preheat the oven to 375 degrees F. Line a sheet pan with aluminum foil (for easy cleaning) and place a wire baking rack on top.
- Combine the brown sugar and pecans in a food processor and process until the pecans are finely ground. Add the salt, black pepper and cayenne pepper and pulse to combine. Add the maple syrup and pulse again to moisten the crumbs.
- Cut each bacon slice in half crosswise and line up the pieces on the baking rack without touching. With a small spoon, evenly spread the pecan mixture on top of each piece of bacon, using all of the mixture. Bake for 25 to 30 minutes, until the topping is very browned but not burnt. If it's underbaked, the bacon won't crisp as it cools.
- While it's hot, transfer the bacon to a plate lined with paper towels and set aside to cool. Serve at room temperature. (The caramelized bacon can be made early in the day and stored at room temperature.)

- Melt butter in a large nonstick skillet over medium-high heat.
- Add onion, and sauté 4 minutes.
- Reduce heat; cook 10 minutes or until golden brown, stirring occasionally.
- Add bell pepper; cook for 1 minute.
- Remove from heat; stir in bacon.
- Arrange 3 cups bread in an 11x7-inch baking dish coated with cooking spray; top with half of onion mixture.
- Repeat layer with remaining bread and onion mixture.
- Combine milk and next 5 ingredients (milk through eggs) in a medium bowl; stir well with a whisk.
- Pour egg mixture over bread mixture, and top with the cheese.
- Cover and refrigerate at least 8 hours or overnight.
- Preheat oven to 375°F.
- Let the casserole stand 30 minutes at room temperature.
- Uncover and bake at 375°F for 40 minutes or until golden brown.
- Let stand 5 minutes before serving.

- Heat greased grill to medium heat.
- Cook bacon in medium skillet until crisp. Remove bacon from skillet, reserving 2 Tbsp drippings in skillet. Drain bacon on paper towels.
- Add onions to reserved drippings; cook on medium heat 5 to 7 min. or until golden brown, stirring frequently.
- Mix ground beef and dry seasonings just until blended; shape into 6 (1/2-inch-thick) patties. Grill 4 to 5 min. on each side or until done (160°F), adding buns, cut sides down, to the grill to toast for the last minute of the burger grilling time.
- Chop bacon coarsely; mix with cream cheese spread until blended. Spread onto bottom halves of buns. Fill buns with lettuce, tomatoes, burgers and onions.

- Heat large skillet over MED heat, melt butter. Slice onions into half rings and add to the hot skillet. Reduce heat to MED-LOW, add sprigs of thyme and cook for 40 minutes, stirring often. Onions will soften and eventually turn a caramel brown color.
