Steps:
- Heat the oven to 375 degrees F.
- In a small bowl, mix the goat cheese, herbs, and 2 tablespoons olive oil; season with salt and pepper. Halve the pears and scoop out the seeds and cores. Stuff each pear half with about a tablespoon of the cheese. Wrap each stuffed pear with a slice of bacon and place it on a baking sheet. Drizzle some olive oil over the pears and season them with salt and pepper. Bake them until the pears are tender and the bacon is crisp, about 25 to 30 minutes. Place the pears onto a platter, drizzle with the honey, and garnish with the arugula.
RED RASPBERRY GOAT CHEESE CROSTINI

- Preheat the oven to 375 degrees F.
- Arrange the baguette slices on a foil-lined rimmed baking sheet. Bake until slightly dried out, about 6 minutes.
- Meanwhile, mix together the chevre, chives, parsley, lemon zest, a pinch of salt and a few grinds of pepper in a bowl until well combined. Stir in the lemon juice to loosen the mixture so it will be easier to pipe. Transfer the mixture to a resealable plastic bag and cut off the tip of one corner with scissors.
- Pipe the goat cheese mixture onto the crostini. Return the crostini to the oven and bake until warm, about 8 minutes. Meanwhile, whisk together the honey and balsamic in a small bowl.
- Place 2 raspberries on top of each crostini and transfer to a serving platter. Spoon a little of the balsamic mixture on each crostini and serve immediately.
POTATO LATKES WITH CARAMELIZED PEARS, GOAT CHEESE, AND SHERRY VINEGAR DRIZZLE
Steps:
- Place shredded potatoes in cheesecloth and wring out any excess moisture.
- Mix potatoes, eggs, flour, onion, and salt together in a bowl.
- Heat 1/2 cup oil in a large skillet over medium-high heat until oil shimmers. Working in batches, drop spoonfuls of the potato mixture into the hot oil, pressing each down to form a pancake. Cook latkes until browned and crisp, 3 to 5 minutes per side; transfer to paper towels to drain.
- Heat 1 tablespoon oil in a separate skillet over medium-high heat. Cook pears in hot oil and sprinkle 2 tablespoons brown sugar over pears. Cook pears until browned and sugar is melted, 3 to 5 minutes per side.
- Place latkes on a serving platter. Top each latke with 1 round of goat cheese and a pear. Sprinkle brown sugar on the pears and drizzle sherry vinegar over the top.

- Pre-heat oven to 400º F.
- Melt butter in ovenproof baking dish.
- Arrange pears, cut-sides-down, in a layer of the butter and roast for about 20 minutes, or until tender.
- Pour balsamic vinegar over pears and roast 5 minutes longer.
- Remove pears from baking dish and arrange on serving plates.
- Add honey to the juices in the baking dish, stirring until melted and combined.
- Add the slices of goat cheese to the hot mixture and warm the cheese until just soft.
- With a spatula, place the warm goat cheese on the plates next to each pear and drizzle with the balsamic and honey sauce.

- Transfer pears, cut sides down, to serving plates with cheese and spoon some of juices from baking dish over pears. Drizzle pears and cheese with honey and sprinkle with pepper.

- In a small skillet, dry roasted pecans over medium heat for 1 to 5 minutes; stirring frequently. Finely chop.
- Meanwhile, arrange ½ cup salad greens on each of eight plates; set aside.
- Cut pears in half lengthwise. With a melon baler, remove seeds and make a small, round cavity in each pear half.

- Remove pear cores with melon baller and sharp knife; brush with lemon juice.
- Place pears in a 12x9-inch baking dish, cut side up, in single layer.
- Combine orange juice and sweetener and pour over pears.
- Cover pears tightly and bake at 375F for 30-45 minutes or until tender.
- Transfer Pears to serving plate, reserving juices.
- In small saucepan,combine jam, reserved juices, and black pepper; bring to a boil and cook for 2-3 minutes, or until thickened.
