SWEET POTATO CRANBERRY BAKE

- Place sweet potatoes in a Dutch oven; cover with water. Bring to a boil. Reduce heat; cover and simmer until tender, 20-30 minutes. Drain. When cool enough to handle, peel potatoes and cut into 1/4-in. slices. , Place half in a greased 2-1/2-qt. baking dish. Top with half of the cranberries, brown sugar and butter. Repeat layers. Pour orange juice over top. Cover and bake at 350° for 30 minutes. , In a small bowl, combine the walnuts, brown sugar and cinnamon; cut in butter. Sprinkle over sweet potato mixture. Bake, uncovered, until topping is golden brown, about 10 minutes longer.

STUFFED SWEET POTATOES WITH PECAN AND MARSHMALLOW STREUSEL

- Preheat the oven to 400 degrees F.
- Wash the sweet potatoes, scrubbing them well to remove any dirt. With a fork, prick the sweet potatoes in a couple of spots and place them on a sheet pan. Bake for about 45 minutes, or until a knife inserted in the center goes in easily.
- In a large bowl, mix the butter, brown sugar, and flour together until it's crumbly-looking. Add the cinnamon, salt, pecans, and marshmallows; fold the streusel topping together to combine.
- Slice the sweet potatoes lengthwise down the center and push the ends towards the middle so it opens up. Stuff the sweet potatoes generously with the streusel topping and return to the oven. Bake for another 20 minutes, or until the topping is bubbly and brown.
CRANBERRY-PEAR CRISP

- Preheat the oven to 375 degrees F. Combine the fresh and dried cranberries in a large bowl. Add 1 cup sugar, 3 tablespoons water and the vanilla and toss to coat. Lightly smash with a potato masher or fork to burst some of the cranberries. Add the pears, cinnamon, allspice and 2 tablespoons flour and toss to coat. Transfer to a 3-quart baking dish.
- Make the topping: Mix the remaining 1 cup flour, the pecans, oats, the remaining 1/2 cup sugar and the salt in a medium bowl, then stir in the melted butter. Use your fingers to pinch the topping into small clumps and sprinkle it over the fruit.
- Bake until the fruit is bubbling and the topping is golden brown, about 40 minutes. Serve warm or at room temperature.
CROCK POT SWEET POTATOES & CRANBERRIES WITH TOASTED PECANS
I love the idea of combining these two holiday favorites. Portions size: is based on 1/2 medium potato per person. Choose smaller or larger. Part way through the cooking I stuck a toothpic under the lid to prop it open to vent some of the steam and reduce the liquid. The original recipe did not specify high or low heat setting. *I started my crock on the low setting then kicked it up to high after a couple hours cuz I got nervous about the timing. - Combine all ingredients, EXCEPT pecans.
- Toast pecans in the oven or dry skillet, set aside. Careful not to burn!
- Cook for 6 - 8 hours, until the yams are tender. I stir to combine every hour or so.
- About 1-2 hours before serving, if the mixture is too wet, prop the lid open a bit with a toothpick to let some of the steam out and thicken up the sauce.
- Put in your favorite serving dish and top with pecans for serving.

- Wash and pat dry the sweet potatoes.Poke several times with a fork and wrap in foil. Place potatoes on a baking sheet and roast for 45 to 60 minutes, until very tender when poked with a fork.
- While potatoes are roasting, prepare the caramelized pear stuffing. To do so, peel, core, and chop the pears. Add them to a small saucepan along with the rest of the ingredients for the pears. Cover and heat to medium-high and bring to a full boil. Reduce heat slightly and continue cooking, stirring occasionally, until pears are tender and caramelized, about 8 to 10 minutes. Set aside until ready to use.
- Lower the oven temperature to 350 and remove the potatoes from the oven. Once cool enough to handle, unwrap the potatoes, cut down the length of each, and scoop out much of the flesh into a mixing bowl. Add the yogurt, honey, cinnamon and salt.
