OLD-FASHIONED MARBLE BUNDT CAKE

Steps:
- For the vanilla batter: Preheat the oven to 350 degrees F. Generously spray a 12-cup Bundt pan with the baking spray.
- Combine the butter, sugar, salt, baking powder, vanilla and oil in the bowl of a stand mixer fitted with the paddle attachment. Beat on medium speed for 4 minutes. Stop and scrape the bowl and paddle with a rubber spatula. Add 2 of the eggs at a time, beating on medium speed for 30 seconds after each addition. Scrape the bowl.
- Add half of the cake flour and mix on low speed just until combined. Add the cream and buttermilk and mix again on low speed just until combined. Scrape the bowl.
- Add the remaining cake flour and start mixing on low speed to combine, then increase the speed to medium and beat for 4 minutes.
- For the chocolate batter: Transfer 2 cups of the vanilla batter to a medium bowl. Add the cocoa, sugar and baking powder and stir with a fork or small whisk until completely combined. Add the hot water and stir slowly until completely combined.
- Pour about half of the vanilla batter into the prepared pan. Dollop about half of the chocolate batter on top. Repeat with the remaining vanilla and chocolate batters. Run a skewer or butter knife through the pan to slightly swirl the 2 batters together.
- Bake until a toothpick inserted near the center comes out with a few moist crumbs, 65 to 70 minutes. The cake will rise to fill the pan and will settle slightly once removed from the oven. Let the cake cool in the pan for about 30 minutes then turn it out onto a wire rack to cool completely.

- Preheat oven to 350; grease& flour two 9X5X3 loaf pans.
- Set aside cocoa packet from mix.
- Combine cake mix, pudding mix, eggs, water and oil in lge bowl; beat at medium speed for 2 minutes.
- Measure 1 cup batter; place in small bowl and stir in contents of cocoa packet.
- Spoon half the yellow batter into each loaf pan.
- Spoon half the chocolate batter over yellow batter in each pan; run knife thru batters to marble.
- Bake at 350 for 45 to 50 minutes.
- Cool in pans 5 minutes; Loosen cakes from pans; invert onto cooling racks.
CHOCOLATE SWIRL MARBLE POUND CAKE
This has been my favorite pound cake for the last 15 or 20 years. But I must admit that I recently made Juenessa's recipe #188525 and now I have two favorites. :-)

- Heat oven to 350°F Grease a 10" tube pan.
- Beat sugar and butter until blended; then increase speed to high and beat until light and fluffy.
- Add flour and remaining ingredients EXCEPT cocoa. Beat at low speed until well mixed, scraping bowl often; then increase to high and beat 4 minutes longer, scraping bowl as needed.
- Scoop out 2 1/2 cups of batter into a small bowl. Whisk in cocoa powder.
- Alternately spoon vanilla and chocolate batters into prepared tube pan. Using a knife, cut and twist through batter to create a marble effect.
- Bake 60 minutes or until a toothpick comes out clean.
- Cool in pan on a wire rack for 10 minutes. Then run a spatula or knife around the pan to loosen the cake. Remove cake and cook on a wire rack.

- Heat oven to 325°F. Grease and flour 12-cup fluted tube cake pan, or spray with baking spray with flour. In large bowl, beat cake mix, pudding mix, water, oil, vanilla and eggs with electric mixer on low speed 30 seconds, then on medium speed 2 minutes, scraping bowl occasionally.
- In medium bowl, mix powdered sugar and cocoa. Remove 1 1/4 cups batter; stir into cocoa mixture. Pour remaining batter into pan. Drop chocolate batter by generous tablespoonfuls randomly onto batter in pan. Cut through batter with knife for marbled effect.
- Bake 40 to 46 minutes or until toothpick inserted in center comes out clean. Cool in pan 15 minutes; turn upside down onto heatproof serving plate. Remove pan. Cool completely, about 1 hour.
- In microwavable bowl, microwave frosting uncovered on Medium 15 seconds. Spread over top of cake, allowing some to drizzle down side. Store loosely covered.

- Preheat oven to 350 degrees.
- Grease a 10 inch tube pan and lightly dust with flour.
- Melt the chocolate in the top of a double boiler or in a heatproof bowl set over a pan of hot water. Set aside.
- With an electric mixer, cream the butter, cream cheese and vanilla until smooth.
- Add sugar beat until light and fluffy, approximately 5 minutes.
- Add the eggs two at a time.
- Gradually incorporate the flour mixture on low speed.
- Pour half of the batter into the prepared pan.
- Stir the chocolate into the remaining batter and then pour into the plan.
- With a metal spatula or knife, swirl the two batters to create a marbled effect.
- Bake, 60-75 minutes, or until cakes tests done. Cover with foil halfway through the baking.

- Turn out the cake onto a wire rack to unmold.
- To serve, sift together grated chocolate and confectioners' sugar. Dust on top of cake.

- In top of a double boiler or a metal bowl over barely simmering water, melt chocolate and 3 tablespoons butter; stir until smooth. Cool to room temperature., Preheat oven to 375°. Line bottoms of three greased 8-in. round baking pans with parchment; grease parchment., In a large bowl, cream remaining butter and sugar until light and fluffy. Add 1 egg at a time, beating well after each addition. Beat in vanilla. Whisk flour, baking powder and salt; add to creamed mixture alternately with sour cream, beating well after each addition., Remove 2 cups batter to a small bowl; stir in cooled chocolate mixture and, if desired, chocolate chips, until blended. Drop plain and chocolate batters by tablespoonfuls into prepared pans, dividing batters evenly among pans. To make batter level in pans, bang cake pans several times on counter., Bake until a toothpick inserted in center comes out clean, 20-25 minutes. Cool in pans 10 minutes before removing to wire racks; remove parchment. Cool completely., For frosting, in a large bowl, beat butter until smooth. Gradually beat in confectioners' sugar, vanilla and enough milk to reach desired consistency., If cake layers have rounded tops, trim with a serrated knife to make level. In a microwave, melt chocolate chips; stir until smooth. Cool slightly., Place 1 cake layer on a serving plate; spread with 1/2 cup frosting. Repeat layers. Top with remaining cake layer. MARBLE FUDGE POUND CAKE
Steps:
- Measure flour & sugar and sift together. Add shortening & can milk and blend. Add baking powder, salt, eggs (one at a time), and vanilla. Mix till well blended.
- Put 2/3 of the batter in greased and floured large tube cake pan (at least 10 inch). To the other 1/3 batter, add cocoa and milk. Mix well.
- Use a tablespoon and make holes in the batter already in the tube pan. Put cocoa mixture in holes. Run spoon or table knife around the cake batter. Do not mix well. Just enough to make swirls (to make the cake pretty when cut).
- Bake in a 325 deg. pre-heated oven for 1 & 1/2 hours, or until you insert a toothpick in the center and it comes out clean. Let cake cool in pan for 10 minutes. Icing cake when cool.
- To prepare icing, pour boiling water over margarine. Add cocoa, beat mixture until well blended. Add sugar and beat well. Add vanilla and beat to a fluffy consistency.

- Preheat the oven to 350°.
- Spray an 8" X 4" bread pan with non-stick cooking spray and line the pan with parchment paper. Spray the paper.
- Mix flour, baking powder and salt in a medium mixing bowl. In a separate bowl, combine the melted butter with the cocoa and blend until smooth.
- Using a food processor, mix the softened butter with the granulated sugar. When combined, add eggs and vanilla and continue to process until creamy. Add the dry ingredients and pulse until JUST combined. Finally, add cream and process until smooth. Add 1 cup of this batter to the bowl with the cocoa and stir until smooth.
- Pour half of the remaining batter into the prepared pan and smooth the surface with the back of a spoon. Spread the chocolate batter in the pan and then top with the rest of the batter. Using a butter knife, decoratively cut 5 swirls in the batter.
- Bake for 25 minutes at 350°. Reduce the temperature to 325° and bake for an additional 25 minutes. Loosely cover with foil and bake 15 to 20 minutes longer, or until the top is lightly browned and a toothpick inserted in the center comes out with moist crumbs attached. Let the pound cake cool in the pan for 10 minutes before removing. Let cool completely on a wire rack. Dust with confectioners' sugar before serving.

- Allow butter and eggs to stand at room temperature for 30 minutes.
- Meanwhile, grease and lightly flour a 10-inch fluted tube pan.
- In a medium bowl stir together flour, baking powder, baking soda, and salt.
- Set aside.
- In a large mixing bowl beat butter with an electric mixer on low to medium speed about 30 seconds.
- Add sugar and vanilla; beat until fluffy.
- Add eggs one at a time. Add milk and flour mixture alternately. Beat on high for 2 minutes.
- Reserve 2 cups batter.
- Pour remaining batter into prepared pan.
- In a mixing bowl combine chocolate syrup and reserved 2 cups batter.
- Mix well.
- Pour chocolate batter over vanilla batter in pan.
- Do not mix.
- Bake in a 350° oven about 50 minutes or until wooden toothpick inserted near center comes out clean.
- Cool 15 minutes on wire rack.
- Remove from pan: cool completely on wire rack.
- Drizzle cake with Semisweet Chocolate Icing recipe #45105.
SPECIAL MARBLE FUDGE CAKE
Marble cake was one of the first cakes that I ever learned how to make, this is an adult version of the easy cake I made in brownies. I don't remember where I got this recipe from, it was on a hand written card in one of my cookbooks. I have been making this cake for at least 5 years. This cake gets better after it has sat for a day or two, so make in advance of occasion for best results. Store in an airtight container.

- Preheat oven to 350 degrees F.
- Crust:.
- Add the melted butter and crushed graham crackers to a bowl and mix well.
- Press the crumb mixture into the bottom of a pan to make a thin, even layer. Use an 8" springform pan.
- Put into fridge to chill until needed.
- Chocolate Batter:.
- Coarsely chop the chocolate and melt gently in pot over steaming water, stir until smooth and stir in the butter, remove from heat.
- In a bowl beat the eggs and sugar until frothy, add the flour, salt and baking powder and stir well.
- Next add the melted chocolate and vanilla extract mix well and pour the batter over the prepared crust.
- Vanilla Batter:.
- Beat the butter until creamy, add the vanilla and cream cheese and beat until the batter is light and fluffy.
- Slowly beat in the sugar and then the egg.
- Now add the flour and stir well.
- Spoon the mixture overtop of the chocolate batter, swirl the tip of a knife through both batters to achieve a marbled look.
- Bake in a preheated 350 degree oven for 25 minutes, should be firm.
- Remove from oven, cool in pan before removing.
- Serve at room temperature with vanilla ice cream, pudding or whipped cream.
