SPICY CHICKEN KEBABS

3 garlic cloves , roughly chopped
knob of fresh ginger , roughly chopped, plus extra to serve
1 orange , grated zest and juice
3 spring onions , roughly chopped
2 tbsp clear honey
1 tbsp light soy sauce
2 tbsp vegetable oil
4small skinless boneless chicken breast fillets , cut into cubes
20 button mushrooms
20 cherry tomatoes
2large red peppers , seeded and each cut into 10

Steps:

  • Grind the garlic, ginger, orange zest and spring onions to a paste in a food processor. Add the honey, orange juice, soy sauce and oil, then blend again. Pour the mixture over the cubed chicken and leave to marinate for at least 1 hr, but preferably overnight. Toss in the mushrooms for the last half an hour so they take on some of the flavour, too.
  • Thread the chicken, tomatoes, mushrooms and peppers onto 20 wooden skewers, then cook on a griddle pan for 7-8 mins each side or until the chicken is thoroughly cooked and golden brown. Turn the kebabs frequently and baste with the marinade from time to time until evenly cooked. Arrange on a platter, scatter with chopped spring onion and eat with your fingers.

MARINADE FOR CHICKEN KABOBS

This is a great marinade for kabobs, do not marinade the chicken for more than 5 hours or the lemon juice will start to *cook* the chicken. This recipe may be doubled to 10-12 breasts but prepare two separate marinades in two separate bowls, do not combine the doubled marinade into one bowl. Feel free to thread on you favorite veggies such as mushrooms, cherry tomatoes or whatever you desire! If you prefer a sweeter glaze then increase the honey by a couple tablespoons.

1 cup vegetable oil
1/2 cup low sodium soy sauce
1/3 cup honey (can use more) or 1/3 cup light corn syrup (can use more)
1/4 cup lemon juice
3 large garlic cloves (sliced into thirds, or use 1/2 teaspoon garlic powder or to taste)
1/2 teaspoon black pepper
1 pinch cayenne pepper (optional) or 1 pinch cayenne pepper, to taste (optional)
6 large boneless skinless chicken breasts (cut into 1-inch cubes)

Steps:

  • In a bowl mix together the oil with soy sauce, honey, lemon juice, garlic slices, black pepper and cayenne.
  • Place the chicken cubes in the bowl and toss to coat with the marinade.
  • Cover and chill for 4 hours.
  • Remove the chicken from the marinade.
  • Pour marinade into a saucepan then remove the garlic slices and discard; boil for 10 minutes over medium-low heat (start timing the 10 minutes after boiling starts).
  • Thread the chicken onto wooden skewers that have been soaked in cold water for 30 minutes.
  • Place the skewers on a grill and cook for 18-20 minutes or until the chicken is cooked through, basting with cooked marinade during the last 10-12 minutes of cooking.
  • Delicious!

⅓ cup honey
⅓ cup soy sauce

Steps:

  • In a large bowl, whisk together oil, honey, soy sauce, and pepper. Before adding chicken, reserve a small amount of marinade to brush onto kabobs while cooking. Place the chicken, garlic, onions and peppers in the bowl, and marinate in the refrigerator at least 2 hours (the longer the better).
  • Preheat the grill for high heat.
  • Drain marinade from the chicken and vegetables, and discard marinade. Thread chicken and vegetables alternately onto the skewers.
  • Lightly oil the grill grate. Place the skewers on the grill. Cook for 12 to 15 minutes, until chicken juices run clear. Turn and brush with reserved marinade frequently.

GREEK CHICKEN KEBAB

This version of Greek gyro chicken kebabs uses thigh instead of breast to keep the meat really succulent

12 boneless, skinless chicken thighs
2 garlic cloves , crushed
zeast and juice 1 lemon
1 tsp ground cinnamon
1 tsp ground allspice
1 tbsp dried oregano (wild if possible)
2 tsp paprika
4 tbsp olive oil
small bunch parsley , finely chopped
pitta bread
dill yogurt sauce , see tip, below left
tomato, red onion & cucumber salad , see tip, below left
romaine heart lettuce leaves, shredded, or other crunchy lettuce

Steps:

  • In a large bowl, combine all the ingredients for the marinade, along with a good few pinches of salt and some pepper. Add the chicken thighs and mix everything together. Cover and chill overnight.
  • Light a lidded barbecue, then let the flames die down. Once the coals have turned ashen, mound them up on one side. Thread the chicken thighs onto 2 metal skewers - so that both skewers go through each piece of meat - packing the thighs down so that they are really compact. Place the chicken kebab on the side without any coals underneath. Pop the lid down and cook for 45-55 mins, turning regularly, or until cooked through - prise the chicken pieces apart in the centre to check this. Cover the chicken with foil and leave to rest for 20 mins before slicing. (If cooking in the oven, heat to 200C/180C fan/gas 6. Rest a wire rack over a roasting tin and place the chicken on top. Cook for 45-55 mins or until cooked through.)
  • Slice strips of chicken from the kebab and stuff into pittas, warmed on the barbecue. Serve with Dill yogurt sauce, tomato, red onion & cucumber salad, and crunchy lettuce.

150 g Natural yoghurt
2 tsp Paprika
2 tsp Ground cumin
0.5 tsp Cinnamon
0.5 tsp Dried chilli flakes
2 tsp Garlic granules ((or 3 cloves of fresh garlic))
1 Lemon (Zest and juice)
Salt and freshly ground pepper

Steps:

  • Mix the marinate ingredients together well in a large bowl.
  • Add the chicken thighs and marinade for at least 30 minutes or even better, overnight. (Cover with cling film and put in the fridge.)
  • Thread onto skewers and cook for about 20 minutes until golden on the outside and cooked through.

i don't always have the grill readily available considering i live in Wisconsin where this year - 2008 - we've had more snow than ever, so i was looking for a baked chicken kabob recipe and low and behold, couldn't find one on Recipezaar. well, i decided to put two recipes i found on the internet together and came up with an easy to make Baked Chicken Kabob recipe which my whole family enjoyed. easy to make, good to eat. hope you enjoy it as much as we did!

12 wooden skewers
4 extra large boneless chicken breasts, cut into large chunks
1/4 cup light soy sauce
1/4 cup Russian salad dressing
1 tablespoon sesame seeds
2 tablespoons lemon juice
1/4 teaspoon garlic powder
1/4 teaspoon ground ginger
2 -3 small zucchini, sliced into 1/2-inch chunks
16 ounces whole fresh mushrooms
2 -3 assorted bell peppers, cut into chunks
1 large red onion, cut into chunks
1 -2 lb mini baby red potato, sliced into 1/2-inch chunks
1 pint small tomatoes

Steps:

  • soak 12 wooden skewers in water overnite so they won't burn in the oven.
  • place uncooked cubed chicken in a 9x13 pan.
  • mix all marinate ingredients together (soy sauce, Russian dressing, sesame seeds, lemon juice, garlic powder, ground ginger) and brush over chicken (use all of the marinate sauce). cover with wrap and place in refrigerator. allow to marinate 4-6 hours (i prepare early in the a.m. if cooking that day for dinner, or the night before if making for lunch - the longer it marinates, the better it tastes and more moist). NOTE: save the marinate sauce as you will be using it later to baste the kabobs.
  • cut up all veggies in to 1/2" slices or chunks (of course, not the baby tomatoes or whole mushrooms).
  • alternate your assorted veggies on the skewers with the marinated meat. fill those skewers! the more on the skewer, the more satisfied you will be. we find two (2) skewers per person is more than enough.
  • pre-heat your oven to 450 degrees.
  • place skewers on greased jelly roll pans (i use Pam spray) or any lipped baking pans to catch any drippings. approximately 5-6 kabobs should fit on each pan depending on the pan size and skewer length. baste each skewer with the marinate sauce -- use it all up!
  • place the basted skewers in the pre-heated 450 degree oven on the center rack. bake for 10 minutes, turn over once. bake for 10-15 minutes longer (20-30 minutes maximum of baking time total depending on size of chicken chunks). check chicken on a few of the skewers to make sure it is thoroughly cooked; also, if using potatoes, check them for doneness, too. if chicken is not completely cooked, bake an additional 5-10 minutes longer than noted above.
  • remove the kabobs from the oven and let sit a few minutes. serve with a side of wild rice and mixed greens salad.
  • leftovers of these kabobs are wonderful -- warm or cold!
  • NOTE: if you don't want to use skewers, use a 9X13 or larger greased pan. place the chicken and veggies in the pan alternating as if you were using skewers. brush completely with the marinate. don't cover the pan. bake at 450 degrees center shelf for 20-30 minutes - don't turn the meat/veggies. check a few pieces of chicken (potatoes too) for doneness. you may need to cook an additional 5-10 minutes. take out of oven and let sit for a few minutes. (i haven't made it this way yet, but understand from a close relative it's easy and tastes great!).

By using a flavorful, yogurt-based marinade, like the one seen herein, even inexperienced grillers can produce impressive results. I'm not sure how 'Turkish' this is--it's loosely based on a lamb marinade I've used for a long time.

1 cup whole-milk Greek yogurt
2 tablespoons freshly squeezed lemon juice, or more to taste

Steps:

  • Whisk yogurt, lemon juice, olive oil, ketchup, garlic, red pepper flakes, salt, cumin, black pepper, paprika, and cinnamon together in a bowl.
  • Place chicken thigh halves into the yogurt marinade and coat them thoroughly on all sides. Cover bowl with plastic wrap and refrigerate 2 to 8 hours.
  • Preheat an outdoor grill for medium-high heat and lightly oil the grate.
  • Using 2 skewers for each kebab, thread half of the chicken thighs onto each pair of skewers making a fairly thick "log" shape.
  • Place kebabs on grill. Do not try to turn them until they begin to unstick from the grill, 3 or 4 minutes. Turn kebabs and grill the other side 3 or 4 minutes; turn. 4 skinless chicken breasts , cut into bitesize chunks
2 red peppers , cut into chunks
1 red onion , cut into chunks
4 flatbread or pittas
chilli sauce and shredded lettuce to serve
1 tsp turmeric
1 tbsp mild or hot curry powder
2 tsp smoked paprika
1 tbsp tomato purée
150g natural yogurt , plus more to serve
1 tbsp vegetable oil , plus a little for brushing
1 garlic clove , crushed
2 tbsp lemon juice , plus wedges to serve

Steps:

  • Mix the marinade ingredients with some seasoning. Add the chunks of chicken, mix well, cover and chill. Leave to marinate for at least 2 hours or overnight.
  • Soak 12 bamboo skewers in cold water - this will prevent them burning when cooking (or use metal skewers). Thread the marinated chicken onto the skewers (discard any remaining marinade), alternating with pieces of pepper and onion. Brush the skewers lightly with oil and season.
  • Heat the grill to high. Grill the kebabs for 15 minutes, turning every few minutes, until golden and lightly charred. The veg should be tender, and the chicken cooked through, so it easily slides off the skewers.
  • Warm the flatbreads in a griddle pan or dry frying pan on a medium heat until golden and toasted. Serve with the kebabs, lettuce, chilli sauce, extra yogurt and squeeze over some lemon just before eating.

1 1/2 lbs boneless chicken breasts, cut into 1 inch cubes
1 (15 1/4 ounce) can unsweetened pineapple chunks
1/2 cup soy sauce
1/4 cup vegetable oil

1 teaspoon dry mustard

Steps:

  • Put chicken in large shallow dish.
  • Drain pineapple, keep 1/2 cup juice.
  • Set pineapple aside.
  • Mix juice with the next 7 ingredients in small pan.
  • Bring to a boil.
  • Reduce heat and simmer for 5 minutes.
  • Pour over chicken.
  • Cover and chill for 1 hour.
  • Remove chicken from marinade, reserve marinade.
  • Alternate chicken, pineapple, green pepper, mushrooms, and tomatoes on skewers.
  • Grill kabobs over hot coals 20 minutes or until chicken is done.
  • Turn and baste frequently with marinade.
  • Serve over hot rice.

ALBANIAN CHICKEN KEBABS

Beautifully tender chicken with Albanian Salami on skewers forming a delicious combination of textures complimented with spicy and smokey flavours.

400 g cubed chicken breasts
15 cm sliced albanian salami
1 cubed red pepper
1/2 teaspoon salt
1/2 teaspoon pepper
2 cloves diced garlic
1 tablespoon paprika
1 tablespoon honey
1 tablespoon oregano
2 tablespoons olive oil

Steps:

  • You will need 5 kebab sticks / skewers. If you are using wooden ones then leave them to soak in cold water for 10 minutes first to prevent them burning.
  • Start with a piece of chicken and push it down the skewer leaving about 5cm at the bottom to hold.
  • Add a piece of red pepper followed by a piece of Albanian salami then another piece of chicken. Repeat the pattern 5 times and finish with a piece of chicken on top.
  • Follow this pattern for the rest of the skewers making 5 in total. If there is any ingredients left, make up an extra skewer or add another layer to each one using them up.
  • Place on a tray or board to rest while the marinade is made.
  • Mix together the olive oil, garlic, salt, pepper, paprika, oregano and honey in a small bowl.
  • Brush the marinade over the kebabs ensuring you cover all sides and leave to rest for 10 minutes before cooking. Alternatively you can cover these with cling film and keep these in the fridge for up to 24 hours.
  • Place the kebabs on a grilling machine such as a George Foreman, close the lid and cooking for 10 -12 minutes on a high setting. Turn the kebabs occasionally. You can also cook these kebabs under the grill on a baking tray or on the BBQ.
  • Serve as kebabs or great when removed the skewers and mixed into a salad.

3 chicken fillets (cut in 1-inch cubes)
2 red bell peppers
2 green bell peppers
1 red onion
2/3 cup extra virgin olive oil (divided)
juice of 1 lemon (divided)
6 clove of garlic, chopped (divided)
2 teaspoon paprika (divided)
2 teaspoon thyme (divided)
4 teaspoon oregano (divided)
4 teaspoon salt (divided)

Steps:

  • Mix 1/2 of all ingredients for the marinade in small bowl. Place chicken in a ziplock bag and pour marinade over it. Marinade in the fridge for at least 30 minutes.
  • Mix the other HALF of the ingredients in the same bowl pour into a ziplock bag with the vegetables. Marinade for at least 30 minutes.
  • If you are using wood skewers, while the chicken and veggies are marinating, soak the skewers in water for about 15 minutes. You need to soak wooden skewers in water for about 20- 30 minutes to keep them from igniting right there on the grill. I have also noticed that it's much easier to slide out the meat and veggies on your plate if the skewers have been soaked before grilling.
  • Thread the chicken and peppers and onions on the skewers. I usually place about 5-6 chicken pieces and a combo of peppers and onion in between.
  • Heat an outdoor grill or indoor grill pan over medium-high heat. Spray the grates lightly with oil and grill for about 5 minutes on each side, or until the center is no longer pink.
  • You can also bake this Mediterranean chicken skewers in the oven if you want to. Preheat the oven to 425 F. Place chicken skewers on roasting racks over two foil-lined baking sheets and bake for about 10-15 minutes, turn over once and bake for another 10 - 15 minutes on the other side, or until they are baked through.

1 1/2 lb. boneless, skinless chicken breasts, trimmed and cut into 1 1/2-in. pieces
1 lemon
2 scallions, finely chopped
1/4 c. fresh flat-leaf parsley
3 tbsp. olive oil, divided
Kosher salt and pepper
Veggie Combos
12 cherry or grape tomatoes + 1 small zucchini, cut into thick half-moons
1 red bell pepper + 8 oz fresh pineapple (both cut into 1-in. chunks)
1 sweet potato, cut into 1 1/2-in. chunks + 1 medium red onion, cut into 8 wedges, each halved crosswise

Steps:

  • Heat grill to medium-high. Place chicken in large bowl. Finely grate zest of lemon over chicken. Add scallions, parsley, 2 Tbsp oil, 1/2 tsp salt, and 1/4 tsp pepper and toss to combine. Squeeze lemon juice over top and toss again.
  • Choose a veggie combo and, in second bowl, toss vegetables with remaining Tbsp oil and 1/4 tsp each salt and pepper.

These chicken skewers in flatbreads taste great as well as being healthy and an easy-to-make dinner for hectic weeknights

1 small pack mint , leaves picked
150g natural yogurt , plus extra to serve (optional)
1 lemon , zested and juiced
½ tsp ground cumin
½ tsp ground coriander
2cm piece ginger , grated
4 skinless chicken breasts, each cut into 6 pieces
4 wholemeal flatbreads or pittas
2 Little Gem lettuces , sliced
1 small red onion , sliced, to serve
pickled red cabbage , chilli sauce and hummus, to serve (all optional)
4 metal or wooden skewers

Steps:

  • Chop half the mint and put in a bowl with the yogurt, half the lemon juice, all the lemon zest, spices and ginger. Mix well and season with lots of black pepper and a pinch of salt. Add the chicken pieces, mix well and put in the fridge for 20-30 mins. Meanwhile, soak 4 large wooden skewers in water for at least 20 mins (or use metal ones).
  • When you're ready to cook the chicken, heat your grill to a medium heat and line the grill tray with foil. Thread the chicken onto the soaked wooden or metal skewers and grill for 15-20 mins, turning halfway through, until browned and cooked through.
  • Warm the flatbreads under the grill for a couple of seconds, then serve them topped with the lettuce, chicken, red onion, remaining lemon juice and mint, and any optional extras such as extra yogurt or pickled cabbage, chilli sauce and hummus.

3 Tbsp. whole-milk plain Greek yogurt
2 Tbsp. vegetable oil

1½ lb. skinless, boneless chicken breasts, cut into 1" pieces
Sumac onions
1 small red onion, halved, thinly sliced
1 Tbsp. sumac
2 tsp. Diamond Crystal or 1¼ tsp. Morton kosher salt
Hari chutney and assembly
Juice of 1 lime
1 green or red Thai chile, seeds removed if desired
1 garlic clove
½ cup coarsely chopped cilantro
½ cup coarsely chopped mint
½ tsp. Diamond Crystal or ¼ tsp. Morton kosher salt, plus more
1 cup sour cream
Vegetable oil (for grill)
4-6 brioche hot dog buns, split
1 English hothouse cucumber, halved lengthwise, thinly sliced on a diagonal
Special equipment:
Four to six 8" metal skewers or bamboo skewers, soaked 30 minutes

Steps:

  • Chicken
  • Smash garlic with a mortar and pestle to make a paste (you should have 1 Tbsp.) and transfer to a medium bowl. Repeat process with ginger (you should also have 1 Tbsp. You can also finely chop and then smash the garlic and ginger with the side of a chef's knife on a cutting board if you don't have a mortar and pestle.) Add yogurt, oil, salt, coriander, cayenne, and cumin to bowl and whisk to combine. Add chicken and turn to coat. Cover and let sit at room temperature at least 30 minutes, or chill up to 4 hours.
  • Sumac onions
  • Toss red onion, sumac, and salt in a small bowl to coat; set aside.
  • Hari chutney and assembly
  • Purée lime juice, chile, garlic, cilantro, mint, and ½ tsp. Diamond Crystal or ¼ tsp. Morton kosher salt in a food processor or blender until smooth and pourable. If you prefer a thinner chutney, drizzle in 1-3 Tbsp. ice water a tablespoonful at a time, processing until you reach the desired consistency. Taste and season chutney with more salt if needed. Transfer to a small bowl.
  • Place sour cream in another small bowl and add 2 Tbsp. chutney; whisk to combine. Season herbed sour cream with salt. Cover both remaining chutney and herbed sour cream separately and chill until ready to serve.
  • Prepare a grill for medium heat; oil grate. Thread chicken onto skewers, taking care not to pack it too tightly. Grill, turning once, until chicken is cooked through and charred in spots, 6-8 minutes. Transfer to a platter and slide chicken from skewers. (Alternatively, broil skewers on a foil-lined rimmed baking sheet, turning once, about 5 minutes per side.)
  • Spread reserved herbed sour cream on cut sides of buns. Stuff buns with chicken, cucumber slices, and reserved sumac onions and drizzle with chutney. Do ahead: Hari chutney and herbed mayo can be made 1 day ahead. Cover and chill.
