Having done some catering, I especially appreciate interesting, appetizing finger foods. I'm constantly asked to make these popular squares to serve at parties. They're almost like a zippy, crustless quiche. -Linda Wheeler, Middleburg, Florida

1 pound bulk pork sausage
1 cup shredded cheddar cheese
1 cup shredded Monterey Jack cheese
1/2 cup finely chopped onion
1 can (4 ounces) chopped green chiles
1 tablespoon minced jalapeno pepper, optional
10 large eggs
1 teaspoon chili powder
1 teaspoon ground cumin
1 teaspoon salt
1/2 teaspoon garlic powder
1/2 teaspoon pepper

Steps:

  • Preheat oven to 375°. In a large skillet, cook sausage until no longer pink; drain. Place in a greased 13x9-in. baking dish. Layer with cheeses, onion, chiles and jalapeno if desired. In a bowl, beat eggs and seasonings. Pour over cheese. , Bake, uncovered, until a knife inserted in the center comes out clean, 18-22 minutes. Cool for 10 minutes; cut into 1-in. squares.

Got this recipe years ago from a former boyfriend. So good (and so rich) I like to make it for my birthday dinner. It makes plenty so invite your friends.

2 9-inch deep dish pie crusts
1 lb hot sausage
1 sweet white onion, chopped
1/2 lb mushroom, chopped
2 tablespoons butter
1/4 cup white wine
garlic powder
oregano
1 lb sharp cheddar cheese, grated
1 lb swiss cheese, grated
5 eggs
1 pint half-and-half
cinnamon (optional)
cayenne (optional)

Steps:

  • Prick the crusts liberally with a fork, and bake in a 450°F oven 1 or 2 minutes until lightly browned.
  • Brown the sausage in a skillet, remove from skillet, drain, and set aside.
  • In the same skillet, sauté the onion in butter.
  • Add the mushrooms and sauté.
  • Return the sausage to pan, add the wine, garlic powder and oregano and mix together with the onion and mushrooms.
  • Mix the cheeses together.
  • Spread 1/4 of the cheese in the bottom of each crust.
  • Spread 1/2 of the sausage mixture over the cheese in each pie.
  • Cover with the rest of the cheese.
  • Beat the eggs with the half and half and pour into the pies until each is filled to the rim.
  • If desired sprinkle liberally with more oregano and/or cinnamon and/or cayenne.
  • Bake at 450°F for 15 minutes.
  • Lower the oven to 350° and bake 10-15 minutes more until a knife, inserted into the quiche, comes out clean.

I got this recipe from a magazine probably 15 years ago. It's a great dish for breakfast, snack, and freezing for later. It's portable for DH - drop it in a baggie, and he heats it up when he gets to work. Even the kids like it. Plus you can add different meats (ground pork or turkey sausage, sweet italian sausage, or even crab), a variety of vegetables, and different spices and cheese mixtures. Try this one and then let me know your favorite combinations.

1 lb hot Italian chicken sausage, removed from casings
4 ounces mozzarella cheese, shredded
4 ounces sharp cheddar cheese, shredded
4 ounces monterey jack cheese, shredded
4 ounces grated parmesan cheese
1/2 cup finely chopped onion
1/2 cup finely chopped sweet red pepper
1/2 teaspoon garlic powder
1 teaspoon dried basil
1 teaspoon dried oregano
1 teaspoon dried rosemary
1/4 teaspoon fresh ground black pepper
10 large eggs, well beaten
sea salt (to taste)

Steps:

  • Preheat oven to 375 degrees.
  • Lightly brown sausage in a pan, breaking apart into small pieces. Drain on paper towels to remove excess grease.
  • Place sausage in a 13 x 9 inch baking dish.
  • To the beaten eggs, add the dry ingredients, mixing well.
  • Add cheeses to the egg mixture, stirring to combine.
  • Pour (or spoon) egg mixture over sausage to cover.
  • Bake for 18-22 minutes. Edges of casserole may brown slightly when done.
  • Cool for 5-10 minutes before cutting.
  • Cut into 12 - 16 squares, depending on serving size desired.
  • TO REHEAT: Microwave for about 1 minute each to reheat when quiche squares have been refrigerated.

Stir in chives. , On a lightly floured surface, unroll crescent dough into a long rectangle; seal seams and perforations. Cut into 48 pieces. Press onto the bottoms and up the sides of greased miniature muffin cups. , Fill each with about 2 teaspoons of sausage mixture. In a large bowl, combine the eggs and cheeses. Spoon 2 teaspoons over sausage mixture in each cup. Sprinkle with paprika. , Bake at 375° until a knife inserted in the center comes out clean, 20-25 minutes. 2 tablespoons prepared mustard
2 teaspoons Worcestershire sauce

Steps:

  • Preheat oven to 350 degrees.
  • Remove seeds from chiles and lay flat on bottom of a greased 9 x 13 pan.
  • Mix cheese, eggs and mustard, Worcestershire sauce and a dash of hot sauce.
  • Add salt and pepper if desired.
  • Pour over chiles and sprinkle with paprika.
