1 tablespoon dry yeast
2 cups water
2 tablespoons sugar
1/4 cup olive oil
1 tablespoon sea salt
2 tablespoons fresh basil
2 tablespoons fresh oregano
1 teaspoon garlic powder
1 teaspoon onion powder
1/2 cup freshly grated pecorino romano cheese
6 cups all-purpose flour

Steps:

  • Mix yeast, warm water and sugar together in a large bowl. Set aside for five minutes, or until mixture becomes foamy.
  • Stir in olive oil, salt, herbs, garlic powder, onion powder, cheese and 3 cups flour into the yeast mixture.
  • Gradually mix in next three cups of flour. (Dough will be stiff). Knead for 5 to 10 minutes, or until it is smooth and elastic.
  • Place in an oiled bowl, turning to cover sides with oil. Cover with a damp linen towel, or plastic wrap. Let rise for 1 hour, or until dough has doubled.
  • Punch down to release all the air. Shape into two loaves. Place loaves on a greased cookie sheet, or into two 9x5 inch, greased pans.
  • Allow to rise for 1/2 hour again, until doubled in a warm place.
  • Bake at 350 degrees for 35 minutes.
  • Remove loaves from pans and let cool on wire racks for at least 15 minutes, before slicing.

1 1/2 teaspoons kosher salt
1 teaspoon dried basil

1/4 cup Parmesan cheese (plus 1 tablespoon for topping)
2 cups milk (OR buttermilk)
2 tablespoons cider vinegar (OMIT IF USING BUTTERMILK)

Steps:

  • Preheat oven to 350 degrees.
  • To make the buttermilk add the milk and vinegar to a medium size bowl and stir.
  • If using store bought buttermilk, omit the above step.
  • Place all of the dry ingredients (except for the cheese to top the bread) into a large bowl and whisk to combine.
  • Pour in the milk mixture into the flour mixture and stir with a wooden spoon until it's a thick, lumpy and pasty consistency.
  • Spoon the batter evenly into a loaf pan that has been liberally sprayed with cooking spray.
  • Top the batter with the remaining Parmesan cheese and bake in a preheated oven for approximately 60 minutes or until the bread is golden brown.
  • Allow the loaf to cool for 5 minutes and then turn the loaf out onto a cooling rack for at least 30 minutes before slicing and serving.

Steps:

  • Follow instructions for your bread machine.
  • My machine instructs to measure ingredients in the order listed into the baking pan. (I mix the water and powdered milk and microwave for about 30 seconds on high before putting in pan.).
  • Insert baking pan into oven chamber and secure pan.
  • Select basic bread setting and 2 pound loaf.
  • When cycle ends, I put the loaf into a large zip lock bag, seal, and place on wire rack to cool completely before slicing.

  • Bread Machine settings - 1.5 or 2 pound loaf, light color and "basic" bread setting
  • Make sure the bread machine is unplugged and remove the bread pan from the bread machine.
  • Pour the milk into the bread pan and then add the other ingredients (including the Italian herb seasoning). Place the bread machine yeast in last and the yeast should not touch the liquid (until the bread machine is turned on and the ingredients start to be mixed together).

2 1/2 teaspoons dried Italian seasoning
1 teaspoon garlic powder
1 lb frozen bread dough, thawed
2 tablespoons melted butter

Steps:

  • Combine first 3 ingredients.
  • Cut dough into 24 pieces. Roll each piece into a 12-inch rope. Sprinkle evenly with Parmesan mixture.

2 (1/4 ounce) envelopes active dry yeast
1 tablespoon sugar
1/2 cup sweet onion, minced
3 cups white flour
1 cup whole wheat flour
1 1/2 teaspoons salt

1 teaspoon sweet basil
3/4 teaspoon garlic powder
1/2 teaspoon medium grind black pepper
1/2 teaspoon celery seed
6 tablespoons butter, melted (or margarine)
1 3/4 cups white flour (or a mix of 1 cup white and 3/4 cup whole wheat)
1 egg white

Steps:

  • Heat tomato puree in microwave or on stovetop to 100º F-110ºF. Stir in yeast and sugar; allow to stand 5 minutes. Add onions.
  • Combine 4 cups (white and whole wheat) flour, salt, Italian seasoning, basil, garlic powder, black pepper and celery seed in large mixing bowl. Beat in tomato mixture and melted butter. Stir in 1-3/4 cups flour; mix well with electric mixer.
  • Knead 5 to 10 minutes on a floured surface until dough is smooth and elastic. Place in a greased bowl; cover and let rise about 40 minutes or until double.
  • Punch down; divide the dough in half. Form each half into a round loaf and place in a greased 9-inch round cake pan, or place both loaves on a greased baking sheet. Cover; let rise about 40 minutes or until double. Brush surface with egg white.

1/4 ounce fast rise yeast

  • In large bowl, mix 1 1/4 C flour, sugar, yeast, oregano, thyme and salt.

500g strong bread flour
7g- a handful of yeast
Pinch of salt
150ml lukewarm water
150ml olive oil- plus a little extra for greasing

Steps:

  • Tip the flour into a bowl and mix in the yeast and salt. Create a well with your hands or the back of the spoon at the bottom of the bowl. Measure out 150ml of both water and oil and stir half of the liquid.
  • Now bring together to make a soft dough- adding what is left of the liquid when needed. I normally use my hand for this bit but a knife or wooden spoon is fine. Tip onto a lightly floured surface and knead for ten minutes- if the bread mix is sticky put flour on your hands. Don't worry if your dough is a bit on the wet side.
  • Oil the bowl you used for the flour and place your dough in the centre- Add a little drizzle of oil over the dough itself as this helps it prove. Cover with cling film- making sure it tightly stretched across the top of the bowl to not let any hot air out and leave in a warm place for 1-2 hrs or till it has doubled in size. Use a spatula to scrape the dough back onto the floured surface you used earlier. Knock back the dough and knead for a further 5 minutes adding the herbs as you go- you can use different herbs then the ones suggested!
  • Place the dough on a baking tray or if you want a proper loaf shape-a loaf tin! and again cover the tray in cling film and leave in a warm place till it doubles in size. When it has done this, uncover and bake your bread at 180C/160 fan/gas 6 for 15- 20 minutes till hollow. Allow the bread to cool for at least 5 minutes before you try to cut or taste the bread.

Parsley Leaves - 1 tbsp.
Rosemary Leaves - 1 tbsp.
Tomatoes - 1 cup
Garlic Powder - 1 tsp.
Milk Powder - 1 tsp.
Onion Powder - 1 tsp.
Rock Salt - ¼ tsp.
Romano Cheese - ½ cup
Margarine - 1 ½ tbsp.
Italian Seasoning - 1 ½ tsp.
Salt - ¼ tsp.
Warm Water - ½ cup
Sugar - ¼ tsp.

Steps:

  • Preheat the oven to 200 degrees C.
  • To make sure that the dry yeast you are using is active, you need to proof it. Soak the dry yeast in the warm water and dissolve sugar in it. Let the mixture stand for 10 minutes. Wait till the bubbles rise from the dissolved yeast-sugar mixture.
  • Wash, Rinse and finely chop the tomatoes, coriander leaves, parsley leaves and the rosemary leaves.
  • Sieve all the flours in one bowl.
  • In a large mixing bowl, add the mixture of sieved flours with the yeast mixture.
  • Combine them properly with each other.
  • Now add the chopped tomatoes and all the chopped herbs.
  • Drizzle some olive oil into the mixture.
  • Sprinkle garlic powder, milk powder, onion powder and oregano with a pinch of salt over the mixture.
  • Add a little water to bind the dough and start folding to form the smooth dough.
  • Knead with light hands till you form one mass.
  • The dough should be pliable but not sticky.
  • Rub some olive oil over your palms and roll the dough with your hands once again.
  • Keep it in a bowl covered with plastic wrap and let it rest for 30 minutes so that it doubles in volume.
  • Take the dough from bowl and keep on a platform surface.
  • Knead once again with smooth hands till it becomes elastic in nature.
  • Make small round or oval shaped balls and place a cut with a knife.
  • Grease the baking tray with the oil or butter.
  • Arrange the dough balls of loaf into the greased pan.
  • Again, keep them to rest for 20 minutes by covering with a lid.
  • Before you keep them in the oven, brush them with the olive oil.
  • Sprinkle rosemary leaves with a little bit of rock salt.
  • Let them bake in the oven for half an hour till they have become golden brown and crispy.
  • If they are cooked perfectly, their base would become hollow on tapping.
  • Take them out from the oven and keep on a cooling tray.
  • Grate the Romano Cheese over the bread loaf.
  • Spread the Italian seasoning over the bread evenly.
  • And finally, Season with extra spice powders.

  • Measure all ingredients using a digital metric scale.Hint: I prefer to make this dough at night, so about 5:00 p.m., I mix this dough and give it folds throughout the evening and then before bedtime, I place it in the refrigerator to bulk ferment overnight. OR, you can mix early morning, about 7:30 a.m., and leave to bulk ferment on the counter for 6-8 hours until doubled in size, plan to shape/bake that evening about 4:00 p.m.
  • After 3-4 folds, allow dough to rest until doubled in size, overnight in the refrigerator, or 6 hours at room temperature. My preferred method is to place this dough in the refrigerator overnight to slow the rise which develops flavor.Hint: Using a clear container allows you to easily see when the dough has risen to double its original size. Mark the outside of the container with a marker or elastic at the desired point.
  • In the morning, pull the dough from the refrigerator, it should have doubled overnight. If not, leave it at room temperature until doubled. When dough has doubled in size it will be lofty with good structure, bubbles on top and inside. Flour a work surface and gently dump dough out. This will achieve "punching" the dough down, or expelling some of the carbon dioxide gas that developed during Bulk Fermentation stage.

  • In a large bowl, dissolve the sugar in the warm water. Stir in the dry active yeast and allow the yeast to “proof”. It will become foamy and will bubble. If it does not do this, then your yeast is no good or your water is either too hot or too cold.
  • Add the Italian seasoning and mix in the oil and salt and add one cup of flour at a time combining until a dough forms
  • On a lightly floured surface, knead the dough for several minutes until the dough becomes less sticky. You may need at add a pinch or two of flour during this process. Lightly grease a large bowl and place your dough into this bowl. Cover bowl with a towel or plastic wrap and set in a warm area and allow the dough to double in size. This will take approximately an hour. If you choose to cover with plastic wrap, grease the plastic wrap with oil so that it does not stick to the dough.
  • Once the dough has doubled in size, “punch” the dough down and place on a lightly floured surface and knead for 2-3 minutes. Again, you may need to add a pinch or two of flour so that the dough does not stick to your hands as you knead. Divide the dough in 2 equal pieces. Place in either 2 well greased loaf pans, or make into rolls by cutting into equal pieces and rolling in small balls and putting in well greased muffin pans. Cover loaf pan, or muffin pans, and allow to rise again until the dough is about 1 inch above pan. This can anywhere between 30 minutes and could be as much at 1 1/2 to 2 hours.
