RED, WHITE, AND BLUE JELLO
My mom has been making this simple and delicious dessert for years. You can easily make this for other holidays by using different colored gelatins (e.g. try black cherry and orange for Halloween). IMPORTANT: Make sure that the bottom two layers are chilled long enough to become firm and that the top layer is cool before pouring in step 4 or the top layer will go under the cream cheese layer and not make the pretty layered dessert that you want.

Steps:
- Prepare berry blue jello according to directions on box. Pour into 13x9 baking dish and place in the refrigerator. Allow to chill until firm, about 1 hour.
- Prepare lemon flavored gelatin using 1 cup of boiling water. Beat cream cheese slightly and then add the lemon gelatin mixture. Beat gelatin and cream cheese until smooth. Set aside and allow to cool to room temperature.
- Once the cream cheese mixture has cooled, fold in the whipped topping until mixed thoroughly. Pour this mixture over the firmly set bottom layer. Return to the refrigerator and chill until firm, about 1 hour.
- Prepare raspberry jello according to directions on box. Cool this mixture until room temperature and then pour over the middle cream cheese layer.
- Return the 3 layers to the refrigerator and chill until top layer is firm.
- Cut into squares to serve.
- Top with a little whipped topping and a couple of blueberries, if desired.

- Preheat oven to 375 degrees F. Spray 9-inch glass pie plate with cooking spray; set aside. Stir together graham cracker crumbs and 1/4 cup sugar in medium bowl. Add melted butter; mix well. Press mixture firmly in bottom and up sides of pie plate. Bake 6 minutes or until golden brown and set. Cool completely, about 35 minutes.

- Preheat oven to 400 degrees F.
- Prepare pie crust according to package directions. Divide into 6 equal portions, roll into balls and refrigerate covered for at least 1 hour. On a lightly floured surface, roll each into a circle about 1/4-inch thick.
- For Pies:
- Place each of the rolled out circles onto the baking sheet. Divide cherry pie filling into the center of each of the 6 pie crusts and sprinkle each with the pumpkin pie spice. Fold the edges of the pie dough over the cherry pie filling, making sure to leave the center of the pie exposed. Place a few of the reserved blueberries on top of each pie. Brush the sides of the pies with milk and sprinkle with 2 teaspoons of the sugar. Place pies in the oven and bake for 30 minutes, or until crust is golden brown and filling is bubbling. Remove from oven and allow to cool slightly.
- For Blueberry Topping:
- In a medium sauce pan over medium heat, stir together blueberries, sugar, and two tablespoons water. Bring to a boil, reduce heat and simmer for 10 minutes. Turn off the heat and allow to cool to room temperature.
- To serve, place 1 warm pie on 6 plates, top each pie with a scoop of vanilla ice cream and a generous drizzle of the blueberry sauce.

- Heat oven to 450°F. Place 1 crust in ungreased 9-inch glass pie plate. Press crust firmly against side and bottom. Fold excess crust under and press together to form thick crust edge; flute. Prick bottom and side with fork. Unroll second crust onto wax paper. Using 2-inch star-shaped cookie cutter, cut stars from pie crust; place on cookie sheet. - Preheat the oven to 400 degrees F (200 degrees C).
- Measure flour and salt into a bowl. Add oil and mix well. Sprinkle water in 1 tablespoon at a time, mixing until dough almost cleans the side of the bowl. Gather dough into your hands and press into a ball. Divide dough in half and flatten each piece into a 1/2-inch thick round. Let rest about 30 minutes.

- Roll out the first chilled pie crust into a 12-inch circle. Gently place the crust into a 9 or 10-inch deep pie dish, carefully pressing the dough into the bottom and up the sides. Refrigerate for 30 minutes.
- Preheat oven to 400º F with a rack in the middle.
- Remove the second crust from the fridge and roll into a 12-inch circle. Using a pastry wheel or pizza cutter, cut the dough lengthwise into stripes. Use a star cookie cutter to cut some stars. Place the designs on a parchment paper lined baking sheet, and freeze while you prepare the filling.
- In a small bowl, whisk together the potato starch and sugar. Reserve.
- Place the strawberries in a large bowl and the blueberries in a medium bowl. Add ⅔ of the sugar mixture to the strawberries and the remaining ⅓ to the blueberries. Mix with a spoon so the berries are coated with the mixture.
- Add 1 teaspoon of lemon juice to the strawberries and the remaining 2 teaspoons to the blueberries. Mix to combine. Let the berries sit for at least 5 minutes to release the excess liquids.
- Fold a piece of aluminum foil to form a thick and long strip. Place it into the pie dish, blocking off a 90° wedge of the crust. Spread the blueberries into that smaller section and the strawberries into the larger section. Carefully remove the foil, arranging the berries so they don't invade each other's spaces.
- Remove the flag designs from the freezer and arrange on top of the berries. The stars go over the blueberries and the strips over the strawberries.
- Make an egg wash by whisking one egg with 1 tablespoon of milk. Brush over the crust and designs. If desired, sprinkle the crust and designs with sugar.
- Cover the edges of the pie with a crust shield or foil.
- Place the pie on a baking sheet and bake for 20 minutes. Then, remove the shield and lower the heat to 375º F. Continue baking for 30 to 45 minutes, or until the filling is bubbly and the crust is golden brown.
- Remove the pie from the oven and let it cool for at least one hour before serving.

- In a medium saucepan, mix sugar, cornstarch, and water; cook, stirring, until thickened and clear.

- Use the single pie crust recipe from a previous blog post. Pie crust recipe is here. Thaw the single pie crust and roll it out on a flour-dusted board on the counter. Lay out the pie crust on a 9-inch pie pan. Brush the top with melted butter. Prick the middle of the crust with a fork in four places. Bake in a preheated oven of 400 F for 11 minutes. Take the pie crust out of the oven and cool on the counter for about 25 minutes while you prepare the vanilla filling.
- In a medium sauce pan, over medium high heat, combine the heavy cream, cornstarch, vanilla extract and granulated sugar. Use a wire whisk to blend mixture well. The cream will thicken in about 6 minutes. The creamy mixture should coat a cooking spoon. Remove from stove top and pour the vanilla cream over the baked pie shell. Set aside.
- In a large bowl, combine the hulled strawberries, blueberries and organic powdered sugar. Mix lightly making sure the fruits do not get mashed. Pour the fruits over the vanilla cream layer in the baked pie shell. Cool on counter for about 10 minutes. Cover with a plastic wrap and refrigerate pie till ready to serve.
