Steps:
- 1 Place the raisins in a small bowl and add enough boiling water to cover them. Let the raisins sit in the water until they plump and soften, about 5 to 7 minutes. 2 Bring the chicken broth to a boil in a large saucepan and add the olive oil, salt, and pepper. 3 Stir in the couscous, making sure that all of it is wet. Cover and set the saucepan aside in a warm place until the couscous is tender, 15 to 20 minutes. 4 Stir in the raisins, toasted almonds or pine nuts, and parsley. Drizzle the extra-virgin olive oil over the top.

WHOLE-WHEAT COUSCOUS WITH ALMONDS
Using whole-wheat couscous adds fiber to this side dish. Serving it at room temperature, rather than chilled, allows the flavors to come through.

COUSCOUS WITH SAUTéED ALMONDS AND CURRANTS
Make a double batch of the almond-currant topping, then use it as a crunchy finish for salads and grain dishes. Though Admony calls for whole-wheat couscous, plain works just as well.

BUTTERED COUSCOUS WITH POMEGRANATE AND ALMONDS
This is from the December 2006 edition of Sainsbury's magazine. It is outstanding! The recipe is for 12 servings but I adjusted it to 150g couscous to 250ml of boiling water for two very generous servings. I also used flaked almonds instead of whole blanched almonds. DH said it's the best couscous he's ever had :)

Steps:
- Halve the pomegranates and pick out the seeds. Divide the couscous between two large mixing bowls and pour 570ml (1 pint) boiling water into each one. Cover with a clean cloth and leave for 10 minutes.

- Season the cousous and fluff with a fork. Divide the buttery almonds, pomegranate seeds and herbs between the bowls of couscous and stir.

COUSCOUS WITH DATES, RAISINS, AND ALMONDS
This is a slightly sweet recipe of middle eastern origin. You can add more sugar if you like, but for those wanting to cut down on sugar and fat, this is a great way to indulge in a bit of sweet with an ethnic flair.
