OLD FASHIONED MOLASSES COOKIES
A real old fashioned molasses cookie for you to sink your teeth into. These cookies are cut out into circles and each one has a decorative raisin in the middle. To make sour milk, just add 1 teaspoon of vinegar to a cup of milk and let it stand for 5 minutes.

Steps:
- In a large bowl, cream together the sugar and shortening until smooth. Stir in the molasses and vanilla. Combine the flour, cinnamon, baking soda and salt; stir into the mixture alternately with the sour milk. Cover the dough and chill for at least one hour.
- Preheat the oven to 375 degrees F (190 degrees C).Grease cookie sheets. On a lightly floured surface, roll out about 1/3 of the dough to 1/4 inch in thickness. Cut into circles about 3 inches in diameter using a cookie cutter or drinking glass. Place cookies 2 inches apart onto the prepared cookies sheets. Place a raisin onto the center of each cookie.
- Bake for 8 to 10 minutes in the preheated oven, or until lightly browned. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.

MOLASSES COOKIES
My Mom's recipe and one of my favorites. Spicy and chewy, they store well and can be frozen. Great for gift giving or shipping.

Steps:
- In a medium bowl, mix together the melted margarine, 1 cup sugar, and egg until smooth. Stir in the molasses. Combine the flour, baking soda, salt, cinnamon, cloves, and ginger; blend into the molasses mixture. Cover, and chill dough for 1 hour.
- Preheat oven to 375 degrees F (190 degrees C). Roll dough into walnut sized balls, and roll them in the remaining white sugar. Place cookies 2 inches apart onto ungreased baking sheets.
- Bake for 8 to 10 minutes in the preheated oven, until tops are cracked. Cool on wire racks.

- Place applesauce onto several layers of heavy-duty paper towels; spread to 1/2-inch thickness. Cover with additional paper towels; let stand 5 minutes. Scrape into a bowl using a rubber spatula.
- Combine applesauce, 1 cup sugar, and butter; beat at medium speed for 3 minutes.
- Add molasses and egg; beat well.
- Combine flours and next 5 ingredients (flours through cloves), stirring well with a whisk.
- Gradually add flour mixture to sugar mixture, beating until blended.
- Cover and freeze dough 30 minutes or until firm.
- While dough chills, preheat oven to 375°F.
- With moist hands, shape dough into 32 (1-inch) balls.
- Roll balls in 1/4 cup sugar.
- Place 3 inches apart on baking sheets coated with cooking spray.
- Bake for 8 to 10 minutes.
- Cool on pans 5 minutes before removing from pans to cool completely on wire racks.

SPICY MOLASSES COOKIES
A wonderfully full-flavored cookie that is covered in sugar. I usually chill overnight and the dough does not get rock hard. I use tablespoonfuls of dough and get about 28 or 29 cookies.

Steps:
- Mix together shortening, brown sugar, egg and molasses.
- In separate bowl, stir together remaining dry ingredients except white sugar. Then mix dry ingredients into shortening mixture.
- Chill dough 2 hours or overnight.
- Roll dough into balls the size of large walnuts and dip tops in sugar. Place on lightly greased baking sheet about 3 inches apart, sugared side up.
- Bake in a 375º oven about 10 to 12 minutes until just set but not hard.
- Cool on wire rack.

- Cream together shortening and brown sugar. Stir in egg and molasses and mix well. Fold in dry ingredients and stir. Cover and chill until firm (1 - 2 hours).
- Preheat oven to 350 degrees F (175 degrees C).
- Roll dough into small balls (I use a small melon baller to help with this) and roll in white sugar. Place on lightly greased cookie sheets.
- Bake 9 - 10 minutes. Leave on cookie sheet one minute until set.

- Beat shortening ( or butter ) and sugar until light and fluffy. Beat in molasses, egg and 3 tablespoons of flour.
- Sift together remaining flour and other dry ingredients. Mix together the vinegar, water and buttermilk. Add alternately to the molasses mixture and beat batter until it is very smooth.
- Drop teaspoons of the mixture onto greased cookie sheets. Bake at 350 degrees F (175 degrees C) for 12-15 minutes.

FRIEDA'S MOLASSES COOKIES
This recipe has been in our family for a long time. During the 1930s and 1940s, my mother baked a batch of these delicious cookies at least once a week. Neighborhood children who passed our house on the way to school looked forward to stopping on their way home for those cookies, still warm from the oven. Dunked in a glass of cold milk, they were a snack that was hard to beat!
