Steps:
- Wrap shrimp with 1/2 slice of bacon, securing with a toothpick. Be sure and use the large shrimp--the cooking time for the shrimp and the bacon is similar. If you use medium-sized shrimp, you might want to precook the bacon a little--over cooked shrimp are tough and rubbery--and a real shame.
- Preheat the oven to 450 degrees F (230 degrees C).
- Line a jelly roll pan with extra heavy duty foil, and place baking rack in the pan. Place the shrimp on the rack, and sprinkle heavily with the barbecue seasoning. Turn and sprinkle second side. Set aside for 15 minutes. The bacon will turn from creamy white to a little opaque, and the seasonings will soak in.
- Bake in the preheated oven until bacon is crisp and shrimp are tender, 10 to 15 minutes. The rack keeps the shrimp from sitting in the draining bacon fat. With a little luck, you won't tear the foil--you can throw that away and only have to scrub the rack.

Steps:
- Combine butter and spices, add shrimp, stirring to coat the shrimp. Let shrimp marinate for 1 to 2 hours.
- Slice bacon in half and cook over medium high heat to render out some fat, keeping bacon flexible. Drain the bacon and pat grease out with a paper towel.

Steps:
- Preheat grill to medium.
- Soak skewers in water while preparing the BBQ sauce. In a medium saucepan melt butter and saute onions and jalapeno, until tender. Season with cayenne, and salt and pepper. Add ginger, brown sugar, orange juice and ketchup in that order making sure to blend each ingredient completely before adding the next ingredient. Let simmer until the edges begin to caramelize, about 15 minutes. Set aside and let cool. Once cool, remove half of the sauce and reserve for dipping. The other half is for brushing on the shrimp when grilling. Cut bacon in thirds. Thread each shrimp onto a skewer, starting from the tail end. Bend the shrimp as you thread it so it lies in 1 straight line on the skewer, removing its natural curve. Wrap the center of each shrimp with a piece of bacon. Brush with BBQ sauce and place skewers with bacon, seam side down, onto the grill. Cook over medium heat until bacon crisps and shrimp is cooked through, about 8 minutes.

Large shrimp tend to get rubbery when cooked. Grilling them is an excellent alternative. The bacon keeps them from drying out.

- To make the Chipotle Dr Pepper BBQ Sauce, heat the butter in a medium saucepan. Add the onion and garlic and cook until onion is translucent. Add the remaining ingredients. Hit the mixture with an immersion blender (see Notes) until smooth. Simmer the BBQ sauce over medium-low heat for a while (~45 minutes) until thickened and flavors are blended.
- To prepare the Seafood Stuffing, add the stuffing ingredients to a large bowl. Combine with a fork.
- To assemble, lay out the half-cut strips of bacon. Place a butterflied shrimp on each, tails in the air. Place ~ a tablespoon of stuffing on each shrimp. Fold up the bacon to wrap the shrimp and stuffing. Skewer, ensuring that the skewer passes through both ends of the bacon to keep it wrapped while cooking.
- Place Kingsford briquets in your grill in a tight pile (or use a chimney if available), add a little lighter fluid, and light. Let the briquettes burn to almost all white ash, then spread them out into a single layer. Place the grill grate over the coals to heat. - To make the rub – in a bowl mix melted butter, maple syrup(or honey or brown sugar), salt and pepper, smoked paprika, cayenne pepper. Mix everything well and keep aside.
- Cut bacon into half. This is done so the long strips of bacon do not cover the shrimps in whole. We want to leave a small portion of front and tail of shrimp exposed. Note : If you use long strip of bacon and wrap in multiple fold over shrimp, the outer layer of bacon will get cooked to crispy perfection, but the inner layer will remain under-cooked and raw.

- Place shrimp in a large zip-top baggie (or medium bowl) and cover with marinade. Place in refrigerator and allow to marinade for 30-60 minutes.
- Soak bamboo skewers, while bacon cooks. place 2 paper towels n a microwave safe plate, lay bacon in a single layer on towels, top with two more paper towels. Cook on high heat for 5 minutes. Check bacon. It should still be little uncooked, enough that it can bend and be threaded on the skewers. If it's too raw, then it won't finish cooking on the grill and too done and it won't thread on the skewers. Bacon should look similar to this:
- Remove skewers from water. Place a shrimp on skewer, then add the bacon, another shrimp, weave the bacon around and back onto the skewer. Repeat for about 5 shrimps or until bacon is used up. Repeat for other 5 skewers.
- Lightly oil grill and preheat to medium-high heat. Turn down to medium heat. Place skewers over direct heat and cook. Use fresh marinade to baste the shrimp and bacon while cooking. Shrimp cook fast, only a couple minutes on each side (this is why partially pre-cooking the bacon is so important).

- Cook 1 package of Smithfield Hometown Original Bacon in the oven at 350 for 15 minutes, it should be done but still flexible, not crispy.
- Wrap the bacon around the shrimp and then place it on a skewer, layer on your skewer bacon wrapped shrimp, veggies, chunk of pineapple and then repeat. I could fit 3 layers on my 12” skewers. It helps the shrimp and bacon to stay on the skewer if you put the skewer through the shrimp in two places- squeeze the shrimp into a U shape and put the skewer through both ends.
