This pudding, compliments of Thomas Sidney Hanemann of Memphis, Tennessee, is often served with vanilla ice cream or a Southern-style hard sauce.

- Preheat oven to 350 degrees. Butter a 9-by-13-inch (or other shallow 3-quart) baking dish. In a large bowl, whisk together milk, eggs, sugar, vanilla, orange zest, cinnamon, and salt; add bread. Cover with plastic wrap; weight with another bowl. Let stand until bread is soaked through, about 20 minutes.
- Fold in apples, raisins, and 4 tablespoons melted butter; pour into prepared baking dish. Dot top of bread pudding with thin slivers of remaining 2 tablespoons cold butter.
- Bake until pudding is set and lightly golden on top, 50 minutes to 1 hour. Serve warm.

- In a large deep skillet, saute 2 chopped red onions, 2 minced garlic cloves and 3 chopped celery stalks in 1 stick butter for 1 minute.
- Season with salt and pepper and add 4 diced peeled apples, 1 tablespoon chopped thyme, 1 teaspoon aniseed and 1 cup golden raisins; cook 5 minutes.
- Pour in 4 go 6 cups chicken broth. Simmer until step 5.
- In a large bowl, mix 3 eggs, a scoop of grainy mustard and 3 tablespoons each chopped parsley and tarragon.
- Add to the bowl 8 cups each toasted pumpernickel and sourdough bread cubes and the hot broth mixture.
- Gently toss the stuffing, then spread in a buttered 9-by-13-inch baking dish. Dot the top with butter or turkey pan drippings, cover and bake 30 minutes at 350. Uncover and bake until golden, 20 more minutes.

- Cut pastry sheet in half. Repackage and refrigerate one half for another use. On a lightly floured surface, roll out remaining half into an 8-in. circle. Transfer to a 7-in. pie plate; flute edges., In a large bowl, combine the apples, 1 tablespoon sugar and cinnamon; place in crust. In a small bowl, combine the flour, walnuts, raisins, butter, egg and remaining sugar; spoon over top. - 1. Add cubed apples to medium sauce pan. Stir in water, brown sugar, raisins, jam, cinnamon, maple syrup or jam and salt.
- 2. Place sauce pan over medium heat and cook until tender about ten minutes.
- 3. Season pork chops and put in a skillet with hot olive oil and add the Worcestershire sauce.
- 4. Cook for 6-7 minutes per side. Do not over cook, only until just done in middle of the chop or the meat will be dry and tough.
- 5. When chops are browned and almost done, add the apple mixture to the skillet and simmer for two minutes.
- 6. Place the pork chops onto platte3r, top with the raisin mixture and drizzle any sauce left in the pan over the top of the chops!

APPLE AND RAISIN PORK CHOPS

- Apple preparation:
- Combine 3 apples, 6 ounces of dried raisins, 6 ounces of brown sugar, and let marinate for a few hours.
- Pork chops:
- In a hot pan, slowly grill the pork chops until completely cooked. Melt the unsalted butter, mix in the raisin, apple and sugar mixture, add 6 ounces of demi-glace, and saute until apples are soft.

APPLE RAISIN STRUDEL

- Place the oven rack in the middle of the oven. Preheat the oven to 375 degrees F. Combine the first 7 ingredients in a bowl. Lightly brush one sheet of phyllo pastry with melted butter. Top with another sheet and brush it lightly with butter. Repeat these steps until all the phyllo is used. Place the layered phyllo on a large, parchment paper-lined baking sheet. Spoon on the apple mixture, shaping it into a long narrow rectangle along the bottom of the pastry. Fold over the sides of the pastry, about 2 inches on either side, and then carefully roll the filling into the pastry. Brush the top of the strudel with a little melted butter. Make small, diagonal cuts, about 2 inches apart, into the top of the pastry to make it easier to cut after baking. Bake for 25 to 30 minutes, or until puffed and golden. Allow it to rest for 15 minutes before slicing with a sharp, serrated knife. Dust portions with icing sugar and, if desired, serve with whipped cream. Note: To plump up the raisins before baking, soak them in 1 cup of hot water for 30 minutes. Drain well and they are ready to use. You'll find phyllo pastry in the freezer section. Thaw before using. Recipe Options: Instead of apples, use three ripe pears, halved lengthwise, cored and thinly sliced, Use dried cranberries rather than raisins. And for a sweet crust, sprinkle the top of the strudel with a little granulated sugar just before baking.
