1 cup coarse fresh bread crumbs (from 2 slices white sandwich bread)
1/3 cup whole milk
2 medium celery ribs, finely chopped
1 medium carrot, finely chopped
1 medium onion, finely chopped
2 garlic cloves, finely chopped
1 tablespoon ancho chile powder
1/4 cup extra-virgin olive oil
2 pound ground dark-meat turkey
1/2 cup dried California apricots, finely chopped
1/2 cup chopped flat-leaf parsley
3 tablespoons apricot preserves, divided
1 1/2 tablespoons soy sauce, divided
1 tablespoon Worcestershire sauce
2 large eggs, lightly beaten
2 teaspoons water

Steps:

  • Preheat oven to 350°F with rack in middle.
  • Soak bread crumbs in milk in a large bowl.
  • Meanwhile, cook celery, carrot, onion, and garlic with chile powder and 1/2 teaspoon salt in oil in a large heavy skillet over medium heat, stirring occasionally, until softened, about 10 minutes. Add to bread-crumb mixture with turkey, dried apricots, parsley, 1 tablespoon preserves, 1 tablespoon soy sauce, Worcestershire sauce, eggs, 1 1/4 teaspoon salt, and 1/2 teaspoon pepper and mix with your hands until just combined. Form into a 9- by 5-inch oval loaf (mixture will spread slightly) in a 13- by 9-inch shallow baking dish.
  • Stir together water, remaining 2 tablespoons preserves, and remaining 1/2 tablespoon soy sauce and brush over surface of meatloaf. Bake until an instant-read thermometer inserted into center registers 165°F, 1 to 1 1/4 hours. Let stand 10 minutes before serving.

1/2 cup skim milk
1 medium onion, peeled
2 pounds ground turkey breast
1/2 cup chopped red bell pepper
2 eggs, beaten
2 teaspoons Worcestershire sauce
1/4 cup ketchup
1/2 teaspoon salt
Freshly ground black pepper
1 (8-ounce) can tomato sauce

Steps:

  • Preheat the oven to 350 degrees F.
  • In a small bowl, stir together the oats and milk. Thinly slice 1/4 of the onion and set aside. Finely chop the remaining onion. In a large bowl, combine the turkey, oat mixture, chopped onion, bell pepper, eggs, Worcestershire sauce, ketchup, salt and a few grinds of pepper. Mix just until well combined.
  • Transfer the mixture to a 9-by-13-inch baking dish and shape into a loaf about 5 inches wide and 2 1/2 inches high. Pour the tomato sauce over the meatloaf and sprinkle with the sliced onions. Bake for about 1 hour or until an instant-read thermometer registers 160 degrees.F.
  • Remove from the oven and let rest for 10 to 15 minutes before slicing.

I know everyone says their mum's meatloaf is the best and I am one of those who agree--my mum's recipe is the best! This has been one of my favorites since my childhood. While I love it served fresh and hot, a good next-day meatloaf sandwich is also a comfort food. I serve it with a nice arugula salad with cherry tomatoes, raisins, chopped walnuts, and vinaigrette dressing, or for a southern flare--garlic-smashed potatoes and freshly steamed snap green beans. Just yummy deliciousness and mum is always right!

1 cup bread crumbs
1 small onion, minced

This recipe was modified from one I found in a cookbook published by "The Turkey Store". My family, and everyone I have ever served it too love it and can't believe that it is low fat, low cholesterol. And recently I started substituting oatmeal for bread crumbs since my husband's doctor put him on an even stricter diet than before. It is easy, there is no need to sauté the onions, bell pepper and garlic before mixing with the rest of the ingredients. It is also moist and very tasty. I usually serve with baked sweet potatoes and fresh green beans. It makes GREAT sandwiches the next day.

1 lb ground turkey breast
1/2 cup fat free egg substitute or 2 eggs
1/4 cup bell pepper, finely diced
1/2 cup onion, chopped
1 teaspoon dried oregano
1/2 teaspoon salt
1/4 teaspoon pepper
2 teaspoons bottled minced garlic or 6 garlic cloves, minced
2 tablespoons Dijon mustard
2 tablespoons Worcestershire sauce, divided
1 teaspoon dried basil
1 cup tomato sauce
3/4 cup rolled oats, not instant oatmeal
cooking spray

Steps:

  • Spray 9 x 5 loaf pan with cooking spray.
  • Combine all ingredients except tomato sauce and 1 tbsp Worcestershire in large bowl and mix well.
  • Add more egg if too dry, or add more oatmeal crumbs if too wet.
  • Press turkey mixture into pan.
  • Bake at 375°F for 45 minutes.
  • Mix tomato sauce and remaining 1 tablespoon Worcestershire together in small bowl.
  • Remove meatloaf from oven and pour tomato sauce mixture over meatloaf.
  • Return to oven for an additional 15- 20 minutes.
  • If using 99% Fat Free ground turkey breast meat, there is no need to drain fat before pouring tomato sauce on and returning to oven.
  • If you use the regular ground turkey, which is about 7% fat you might want to drain the fat off before pouring the tomato sauce on the loaf.

My husband is not a fan of meatloaf but BEGS for this one, as do my 2 and 4 year old. It's super easy and can be made early in the day and then just spread the sauce on top and bake.
