Steps:
- Heat oven to 325°F.
- Spread nuts on baking sheet and toast in the oven until golden brown, 8 to 10 minutes.
- Cool and chop.
- With an electric mixer set at medium low speed, beat butter, sugar, salt and almond extract until creamy.
- On low speed, beat in flour until mixture just comes together.
- Stir in nuts.
- Chill until firm.
- Roll into approximately 1-inch balls.
- Put on ungreased baking sheets.
- Bake until golden brown on bottom, 15 to 18 minutes.
- Cool completely on wire racks.
- Chop chocolate, put in a small bowl and melt in a 250°F oven.
- Put coconut in a bowl.
- Drop cookies, one at a time, into chocolate.
- Coat and remove with a fork, letting excess drip off.
- Drop the cookies into coconut.
- Lightly press coconut onto the cookies.
- Set on a rack to dry.

ANGEL ALMOND BALLS
These are melt-in-your-mouth buttery rich wonderful! you can also make these cookies using vanilla in place of almond extract and chopped pecans in place of the almonds. These are a wonderful for your holiday cookie platter!

- Set oven to 300 degrees.
- Butter a large baking sheet.
- In a large bowl using an electric mixer on medium speed beat butter with 1/2 cup powdered sugar and almond extract until smooth (about 3 minutes).
- In a medium bowl mix the flour with baking powder; add to the creamed mixture; beat until blended.
- Stir in chopped almonds.
- Shape into 1-inch balls and place about 1-inch apart on the buttered baking sheet.
- Bake about 20-25 minutes or until pale golden brown (do not overbake!).
- Let the cookies stand on sheet until cool enough to handle.
- Place about 1-1/2 cups powdered sugar in a shallow dish.
- Roll the warm cookies in powdered sugar evenly to coat all over.
- Set the cookies on racks to cool completely.

ALMOND ANGEL FOOD CAKE
With creme anglaise & strawberries. Angel food cake was another thing (along with custard and floating islands) that I didn't think could be homemade. Imagine my elation when I found this recipe in Cooking Light. We always had Angel food cake on the 4th of July (along with root beer floats). This is a good recipe - worth getting a special pan for.

Steps:
- Preheat oven to 325°F.
- For strawberries, combine berries, 2 Tbsp sugar, 2 Tbsp orange juice and orange rind in a bowl. Chill, covered, in fridge 2 hours.
- For cake, place almonds and 2 Tbsp sugar in food processor and pulse until finely chopped. Sift together the flour, powdered sugar and salt into a bowl. Tip in almond mixture and stir to combine. Set aside. Beat egg whites in a large bowl at high speed until foamy. Add cream of tartar and beat to soft peak stage. Add 3/4 cup sugar, 1 Tbsp at a time, gradually beating to stiff peaks. Sprinkle flour mixture over egg white mixture, 1/4 cup at a time and fold together. Fold in almond extract. Spoon batter into an ungreased 10-inch tube pan and spread evenly. Bake at 325 degrees F for 1 hour or until cake springs back when lightly pressed with finger.
- While cake bakes, prepare creme anglaise. Combine 2/3 cup sugar and yolks in large saucepan, stirring with wire whisk til blended. Gradually add milk stirring constantly with whisk. Cook over medium heat until mixture coats back of a spoon (around 8 minutes), stirring constantly. Pour mixture inot a bowl and stir in vanilla. Cover and chill. Mixture will thicken as it cools.
- Invert cake pan and cool (my mom always balanced it on a glass pop bottle). Loosen cake from sides of pan using a narrow metal spatula. Invert onto serving plate. Serve with strawberries and creme anglaise.

- Line two cookie sheets or large flat surface with waxed paper and place large cooling rack on top. Place coconut in large bowl. Heat corn syrup, one minute in microwave, until syrup boils. Pour immediately over coconut and stir until well mixed.
- Using a tablespoon measure, shape coconut into 26 balls with hands and place on wire racks. Let rest 10 minutes, then re-roll each ball to keep loose ends from sticking out.
- Melt shortening and chocolate together in large glass bowl in microwave, or in saucepan on stovetop, stirring once or twice. Working quickly, spoon 1 tablespoon of chocolate over each ball. Lightly press an almond on top of each ball. Let balls stand until set.

COCONUT ALMOND BALLS

Steps:
- With an electric mixer cream together sugar & butter in a bowl. Add milk until well blended. Stir in almond extract, coconut & nuts (you may omit the nuts if you do not like them). Roll the candy filling into one inch balls and place on waxed paper. Refrigerate for at least 3 hours.
- Using a double boiler melt chocolate until smooth (you may also melt chocolate in the microwave according to the directions on the chocolate). I like to add approximately 2 Tbls of butter or shortening in the chocolate but this is not necessary to do so. Dip the balls in chocolate and let stand at room temperature until set.
- Store in a tightly sealed container and preferable in the refrigerator until ready to serve.
