1 stick unsalted butter, at room temperature
2 tablespoons minced garlic
1 tablespoon minced shallots
1 tablespoon minced parsley leaves, plus more for garnishing
1 pint shucked raw oysters, drained well and patted dry on paper towels
1 pint shucked raw oysters, drained well and patted dry on paper towels
3/4 teaspoon salt
1/4 teaspoon ground white pepper
1/4 pound crabmeat, picked over for shells and cartilage
1/2 lemon, juiced, plus lemon wedges, for serving
1/4 cup fine dry bread crumbs
2 tablespoons finely grated Parmesan, plus 2 tablespoons, for garnish
1 tablespoon olive oil

Steps:

  • In a small bowl combine the butter with the garlic, shallots, and 1 tablespoon of the parsley. Stir to blend thoroughly, and then transfer to the refrigerator while you prepare the oysters.
  • Set the oven to the broil setting or preheated to 500 degrees F. Position the top oven rack in the upper third of the oven.
  • Season the oysters with salt and pepper. Divide the oysters evenly between 6 individual gratin dishes just large enough to hold the oysters in 1 layer. Shallow gratin dishes approximately 4 by 6 by 1-inch that have a volume capacity of about 8 ounces work well. Sprinkle the crabmeat evenly over the oysters in the ramekins. Using a small spoon, place dabs of the compound butter over the tops of the dishes, dividing the entire amount of butter evenly among the 6 dishes. Squeeze fresh lemon juice over the top. In a small bowl combine the bread crumbs, grated cheese and olive oil. Sprinkle evenly over the oysters and transfer the gratin dishes to a large baking sheet and place in the oven. Broil until the crumbs are golden brown and the oysters are just cooked through and curled around the edges.
  • While the oysters are baking, in a small bowl combine the bread crumbs, 2 tablespoons of the Parmesan, and the olive oil. Stir until thoroughly combined.
  • Remove the oysters from the oven and sprinkle the crumb mixture evenly over the tops of the oysters in the dishes. Return to the oven and bake until the crumbs are golden brown and the oysters are just cooked through, about 3 to 4 minutes longer.
  • Remove the oysters from the oven, garnish with the remaining Parmesan and parsley, and serve immediately, with lemon wedges for guests to use according to taste.

6 tablespoons unsalted butter
3/4 cup finely chopped onion
3/4 cup finely chopped celery
1 teaspoon kosher salt, divided
1 tablespoon minced garlic
1 (14-ounce) can artichoke hearts, drained and finely chopped
1 cup Japanese (panko) bread crumbs
2 teaspoons finely chopped lemon zest
1/2 teaspoon freshly ground black pepper
1 teaspoon dried oregano
4 cups rock salt
24 oysters on the half shell, with their liquor

Steps:

  • Preheat oven to 425 degrees F.
  • Melt butter in a 12-inch saute pan over medium-low heat. Increase the heat slightly and add the onion, celery, and 1/2 teaspoon kosher salt; sweat for 5 to 7 minutes. Add garlic and cook for an additional 1 to 2 minutes. Reduce the heat to low and add the artichoke hearts, bread crumbs, lemon zest, remaining 1/2 teaspoon kosher salt, pepper, and oregano. Continue cooking for 2 to 3 more minutes. Remove from the heat and set aside.
  • Place the 4 cups rock salt on a sheet pan with sides and spread evenly. Set oysters atop the salt and divide the bread crumb mixture evenly among them. Place in oven and bake for 10 to 12 minutes. Bread crumbs should be lightly browned. Serve immediately.

1 sheet nori seaweed
1 cup (2 sticks) unsalted butter, room temperature
Finely grated zest of half a lemon
3 tablespoons lemon juice
1 tablespoon salt
1 teaspoon black pepper
1 1/2 inch square of dried wakame seaweed
1/4 cup fresh bread crumbs
1 teaspoon olive oil
12 Belon oysters, opened, top shells discarded
Wedge of lemon
2 radishes, finely shredded on a grater

Steps:

  • Make the seaweed butter: Heat oven to 250 degrees. Place the nori on a baking sheet and bake until crisp and fragrant, about 15 minutes. Break into pieces and grind to a powder using a spice grinder or mortar and pestle. Transfer to a mixing bowl and add the butter, lemon zest, lemon juice, salt and pepper. Mix until thoroughly blended.
  • On a sheet of parchment paper or plastic wrap, shape mixture into a small log about 1 1/2 inches in diameter. Roll up, seal the ends and chill until firm. May be refrigerated for 1 week or frozen for up to 1 month.
  • Prepare the oysters: Heat a broiler, with a rack about 6 inches below heat. Place the wakame in a small bowl of hot water until rehydrated, about 10 minutes, then cut into 12 tiny squares; set aside. In a small skillet, toss the bread crumbs with the olive oil. Place over medium heat and stir until toasted, 2 to 3 minutes; remove from heat and set aside.
  • Arrange oysters on a rimmed baking sheet. Top each with a small knob (about 1/2 teaspoon) of seaweed butter and 1 teaspoon of the toasted bread crumbs. Place under broiler until warmed through and butter is bubbling, about 2 minutes. Carefully (shells will be hot) transfer to a serving platter, and garnish each oyster with a squeeze of lemon, a bit of radish and a square of wakame. Serve hot.

1 cup fresh white breadcrumbs (made from about 3 slices French or Italian bread)
1 teaspoon finely chopped garlic
2 tablespoons finely chopped fresh parsley, flat-leaf preferred
2 dozen fresh oysters, shucked
3 tablespoons freshly grated imported parmesan cheese
2 tablespoons butter, cut in tiny pieces

Steps:

  • Preheat the oven to 450*. Choose an ovenproof platter or a shallow baking dish that is just large enough to hold the oysters in one layer (about 8 x 10"). Butter the dish generously.
  • In a heavy 6-8" skillet, melt 2 Tblsp. of butter over moderate heat. When the foam subsides, add the fresh, white bread crumbs and the garlic, and toss them in the butter for 2-3 minutes, or until they are crisp and golden. Stir in the fresh parsley.
  • Spread about 2/3 cup of the bread-crumb mixture in the bottom of the buttered baking dish, and arrange the oysters over it in one layer.
  • Mix the rest of the bread-crumb mixture with the grated cheese and spread the combination on the oysters. Dot the top with the tiny bits of butter.
  • Bake the oysters in the top third of the oven for 12-15 minutes, or until the crumbs are golden and the juices in the dish are bubbling. Serve at once, either as a main course or as part of the antipasto.
