POTATO SKIN BURGERS

Steps:
- Preheat oven to 350º. Season potatoes with salt and pepper and rub with olive oil. Bake until tender, 1 hour 30 minutes. Raise oven temperature to 450º.
- Let potatoes cool, then halve lengthwise and scoop out potatoes, leaving 1/4" potato on all sides.
- Place potato skins facedown and brush with oil. Bake until golden, 10 minutes.
- Meanwhile, shape ground beef into burgers the same size as buns. Season with salt and pepper and cook until medium, 5 minutes per side.
- Flip and fill potato skins with bacon and cheese. Return to oven until cheese is melty, 5 minutes.
- Fill skins with sour cream and chives, then top one with a cooked burger and another potato skin.
- Serve.
POTATO SKINS BAR

- Preheat the oven to 400 degrees F.
- Wash the potatoes and rub the skins liberally with vegetable oil. Put the potatoes on a baking sheet and bake until fork-tender, 45 minutes to 1 hour.
- Slice the baked potatoes in half lengthwise, then scrape out the inner flesh with a cookie scoop or spoon, leaving a small margin of potato in the skins. Brush both sides of the potato skins with vegetable oil. Salt both sides liberally. Place the skins cut-side down on the baking sheet and return to the oven. Bake for 7 minutes, then flip the skins to the other side. Bake until the skins are crispy, about 7 minutes more.
- Meanwhile, fry the bacon in a skillet until crisp, then remove to a paper towel-lined plate to cool.
- When ready to serve, chop the bacon into bits and transfer to a small bowl. Put the cheese, ham, salsa, sour cream, ranch and chives in separate bowls. Lay out the fixings, put the skins on a platter and have everyone help themselves at the skins bar.
ITALIAN HAMBURGER POTATO SKILLET
This is a recipe I just made up, after being inspired by my friend's daughter's odd habit of eating hamburger with Italian dressing on it. This recipe is a great one to play around with. you can adjust seasoning or amount of dressing. Be creative.

Steps:
- In a large skillet, brown ground beef and drain off fat.
- Slice or chop the onion, whichever you prefer, and add to the ground beef toward the end of browning.
- While the ground beef is browning, wash and slice the potatoes leaving the skins on.
- Add the potatoes to the hamburger/onion mixture, and mix together.
- In a large 4 cup liquid measuring cup, measure the 2 cup Italian dressing, and add 2 cup water to make 4 cups of liquid.
- Pour the dressing/water mix over the hamburger/potato mixture, and cook at high heat until liquid reaches a boil.**.
- Sprinkle seasoning salt over mixture (or seasoning of your choice, as desired), and stir.
- Turn heat down to low and cover skillet.
- Simmer mixture for 20-30 min., stirring occasionally, adding seasoning if desired.
- The dish is done when the potatoes are soft, and the liquid is cooked down, and the entire mixture is "saucy", but not watery.
- **You may need to add water during cooking time, if liquid cooks down too fast, and potatoes aren't soft yet.
