ZUCCHINI PATTIES WITH FETA

Yield Makes about 18 patties
Number Of Ingredients 12
Steps:
- Toss zucchini and 1/2 teaspoon salt in large bowl. Let stand 5 minutes. Transfer to sieve. Press out excess liquid; place zucchini in dry bowl. Mix in egg, yolk, 1/2 cup flour, cheese, and 1/2 teaspoon salt. Mix in parsley, onions, and dill. If batter is very wet, add more flour by spoonfuls.
- Heat 2 tablespoons olive oil and 2 tablespoons corn oil in large skillet over medium heat. Working in batches, drop batter by rounded tablespoonfuls into skillet. Fry patties until golden, 5 minutes per side, adding more olive oil and corn oil as needed. Transfer to paper towels. DO AHEAD Can be made 1 day ahead. Place on baking sheet, cover, and chill. Rewarm uncovered in 350°F oven 12 minutes. Serve with yogurt.

My sister gave me this recipe and I, in turn, have given it to many of my friends. These patties have a nice flavor and are compatible with just about any entree.

- In a bowl, combine first seven ingredients. Stir in eggs; mix well. Shape into six patties, using about 1/4 cup of zucchini mixture for each patty. , In a skillet, melt butter; cook patties for 4-5 minutes on each side or until lightly browned.

- In a medium bowl, combine the zucchini, eggs, onion, flour, Parmesan cheese, mozzarella cheese, and salt. Stir well enough to distribute ingredients evenly.
- Heat a small amount of oil in a skillet over medium-high heat. Drop zucchini mixture by heaping tablespoonfuls, and cook for a few minutes on each side until golden.

GREEK ZUCCHINI CAKES
Steps:
- Combine the grated zucchini and kosher salt. Set aside for 5 minutes (no more, or it will be mush). Rinse in cold water and squeeze dry in a kitchen towel or press in a strainer or colander until dry.
- Combine the cheese, egg, green onions, flour, pine nuts, dill, oregano, garlic, and pepper in a large bowl; fold in the zucchini. Form into 24 small cakes (about 2 tablespoons of mixture for each) and saute in olive oil, turning once, until browned, about 3 minutes on each side. Serve immediately.
SAUTEED ZUCCHINI WITH FETA
Steps:
- In a 12-inch skillet, heat the oil on low. Slowly saute the zucchini and garlic, with a little salt, until golden and slightly caramelized, about 20 minutes. Season with salt and pepper. Mix in parsley or basil, cilantro and feta.

Fry the patties until golden, 5 minutes per side, adding more olive oil and corn oil as needed. Transfer to paper towels to drain. Serve with yogurt.

ZUCCHINI PATTIES
Found this in a newspaper a few weeks ago by Sherry McCarty, Albuquerque, NM. I only added extra onion and cheese. Marinara Sauce is suggested for an Italian flair. I used Dee514's recipe #30903. This is a very good light meal.

- Combine Bisquick, cheese, salt, eggs, zucchini and onion in a mixing bowl.
- Blend well. Melt butter in a large skillet.
- Spoon heaping tablespoons of zucchini mixture into skillet.
- Fry for 3 to 5 minutes per side, until golden brown.
- Place browned patties on a paper towel.
- Add more butter to skillet when necessary for additional batches.
- Serves 5 to 6.

- Whisk all Dill Yogurt Sauce ingredients together in a bowl. Cover and allow to rest in refrigerator while preparing patties.
- Sprinkle 1/2 tsp salt over zucchini, toss and let rest 5 minutes. Using paper towels or a sieve, press excess liquid from zucchini. Place zucchini in a mixing bowl.
- Add egg, egg yolk, lemon zest, garlic, flour, feta and 1/2 tsp salt (or less to taste), and toss to evenly coat. Mix in parsley, green onions and dill. If batter is very wet, mix in more flour by the spoonful.
- Heat 2 Tbsp olive oil and 2 Tbsp corn oil in a large skillet over medium heat. Working in batches, carefully drop batter about 3 Tbsp at a time into skillet (I just used a 1/4 cup and filled 3/4 full, I also flattened them a little with the back of a measuring cup once in the skillet).
