This is a really great batter for anything you wish to deep fry. I've had it on fish and onion rings. You mix the batter and then let it stand for about an hour before using. This batter is not gluten free (I haven't tried to adjust the recipe as yet). I don't think that there would be any Aussie who has not eaten beer batter or wouldn't have their own favourite recipe.

1 3/4 cups self-raising flour
1 pinch salt
1 pinch pepper
1 pinch paprika
1 pinch onion powder
1 pinch cayenne (optional)
1 egg yolk
100 ml water
1 1/4 cups beer
2 egg whites

Steps:

  • Sift the flour, salt, pepper, paprika, onion powder and cayenne into a mixing bowl.
  • Add 1 egg yolk, the water and beer. Mix until well combined.
  • Let the batter rest for an hour.
  • Stiffly beat two egg whites and lightly fold into the batter.
  • To use the batter dip your items into flour and then the batter.

2/3 cup all-purpose flour
1 teaspoon salt
1/2 teaspoon baking powder
1/2 cup beer
1 egg
1 tablespoon vegetable oil

Steps:

  • Mix flour, salt, and baking powder in a bowl using a fork.
  • Beat beer, egg and oil together in a separate bowl.
  • Stir into flour mixture until well blended.
  • Batter should be pretty smooth and moderately thick.
  • Dip fish, shrimp, or onion slices in coating and deep-fry in hot oil that has been heated to 350 degrees, until it becomes golden.
  • Drain, and serve while hot and crispy.
  • This recipe also works well with chicken tenders and vegetable pieces; whatever you like to coat with beer batter.

1 cup self-rising flour
2 tablespoons self-rising flour
1 teaspoon baking powder
3/4 teaspoon salt
2 tablespoons yellow cornmeal
1 egg, beaten
7 ounces beer (small 1/2 bottles) or 1 cup beer
oil, to fry

Steps:

  • If using onions, I cut them into thick slices (about 1/2") and soak the rings in ice water for about 15 - 30 minutes to get rid of any strong flavor. Drain on paper towels or towel to get dry.
  • Mix the dry ingredients together; then add the egg and beer, stirring until smooth and completely blended. You can put the batter in the refrigerator for 15 to 20 minutes while the onions are soaking.
  • Dip the rings or choice of veggies, etc. into the batter, making sure all sides are covered.
  • Fry the rings in hot oil (about 375 degrees) for 3 to 5 minutes or until golden on all sides. Drain on paper towels and eat as soon as they are cool enough to pick up.

12 ounces beer
1 cup all-purpose flour
1 tablespoon salt
1 tablespoon paprika
½ teaspoon ground red pepper

Steps:

  • Peel the shrimp and devein if desired. Pat shrimp dry with a paper towel and lay shrimp out in one layer on a plate.
  • Preheat vegetable oil to 350 degrees.
  • Pour beer into a mixing bowl.
  • Sift dry ingredients into the beer, and whisk until frothy and combined. While using the batter, whisk lightly from time to time.
  • Gently dip shrimp into the batter and deep fry for 2 to 3 minutes or until the batter is golden and the shrimp float in the oil.
  • Lay cooked shrimp on a wire rack resting on a cookie sheet to drain the oil.
