Fluffy Golden Frittata image

This frittata is different from most because the egg whites are stiffly beaten before adding the egg yolks, creating a beautiful light and puffy golden edge/crust. Use the vegetables and cheese of your choice. It's based on a recipe in Martha Stewart's Everyday Food magazine. She suggested leeks, grape tomatoes and crumbled goat cheese, but we used onion, garden tomatoes and light cheddar, and it was fabulous.

3 teaspoons olive oil, divided
2 cups scallions or 2 cups leeks, or combination
coarse salt
fresh ground pepper
1 cup tomatoes (your choice of grape, cherry halved, or regular sliced or chopped)
6 egg whites
4 egg yolks, beaten
4 ounces cheese (shredded or crumbled your choice)

Steps:

  • Preheat oven to 350.
  • Heat 2 tsp olive oil in oven proof non-stick skillet over medium heat.
  • Add onions/leeks and season with salt and pepper.
  • Saute a few minutes, cover and cook 5 more minutes.
  • Add tomatoes, cover and cook 2 more minutes.
  • Transfer to a bowl.
  • In a separate bowl, beat egg whites with salt and pepper to stiff peaks.
  • Gently whisk in egg yolks.
  • Brush skillet with 1 tsp olive oil.
  • Add eggs and spread out to cover pan; sprinkle cooked vegetable mixture over the eggs to within one inch of the edge.
  • Sprinkle cheese shreds or crumbles on top- if large crumbles press in slightly to be partially submerged.
  • Cook over medium heat until sides are dry, 3 minutes.
  • Transfer to oven and bake about 20 minutes until center is set.

Kosher salt and freshly ground black pepper
2 medium red potatoes, par-cooked and sliced
1/2 roasted red bell pepper, sliced
1 cup ricotta cheese
3 tablespoons olive oil
8 eggs, beaten
1 cup baby spinach
1 tablespoon chopped chives

Steps:

  • Preheat the oven to 325 degrees F.
  • For the par-cooked red potatoes: Bring a large pot of salted water to a boil. Add the potatoes, cover and cook until the skin pierces easily but the center is still firm, 7 to 10 minutes. Remove from the water and allow to cool slightly before slicing.
  • For the roasted red bell pepper: Place 1 red bell pepper skin-side down on a burner of a gas stove over medium-high heat. Turn the pepper as it chars until it's black all over. Place in a bowl, cover with plastic wrap and steam for 5 minutes. When the pepper is cool enough to handle, remove the charred skin and the seeds. Cut half of the roasted pepper into slices and reserve the remaining half for another recipe.
  • In a medium bowl, add the ricotta cheese, 1 tablespoon of the oil and some salt and pepper.
  • Pour the remaining 2 tablespoons oil in a 10-inch ovenproof skillet set over medium heat. Add the eggs to the skillet and sprinkle with salt and pepper. Top with the peppers, potatoes and spinach. Dollop the ricotta cheese evenly over the top. Cover the pan, then transfer to the oven and cook for 20 minutes.
  • Cut the frittata into four wedges, and garnish with chives to serve.

Loaded with fresh vegetables and a touch of bacon, this farmer's frittata is my favorite type of frittata. It's a perfect way to use your gorgeous, fresh garden vegetables. Curing the squash with kosher salt pulls out the bitterness and makes the squash taste sweeter. It's got great texture, taste, and visual appeal and can be served hot, warm, at room temperature or cold for any meal of the day.

2 ½ cups cubed zucchini
2 ½ cups cubed yellow summer squash
2 tablespoons kosher salt
2 tablespoons olive oil, divided
1 slice thick-cut bacon, cut crosswise into 1/4-inch strips
8 large eggs
¼ teaspoon kosher salt, or to taste
freshly ground black pepper to taste
1 pinch cayenne pepper
2 tablespoons sliced green onions, or to taste
⅓ cup diced red onion
1 cup diced sweet peppers
2 ounces grated sharp Cheddar cheese
4 ounces goat cheese, crumbled

Steps:

  • Combine zucchini and summer squash in a bowl and sprinkle 2 tablespoons kosher salt over top; toss until everything is evenly coated. Let sit for 15 minutes, tossing occasionally.
  • Thoroughly rinse squash with cold water to remove all salt; transfer to a colander and let drain for 15 minutes.
  • Heat 1 tablespoon olive oil in a 10-inch, oven-proof skillet over medium heat. Add bacon and cook until browned and almost crisp, about 5 minutes.
  • While the bacon is cooking, mix eggs, 1/4 teaspoon kosher salt, black pepper, cayenne, and green onions together with a fork in a large bowl.
  • Raise the heat on the bacon to medium-high; toss in peppers and red onion plus a pinch of salt. Cook and stir until the peppers just start to soften and the onions turn translucent, about 3 minutes. Add drained squash and carefully stir together; cook until squash is just barely tender, about 5 minutes.
  • Meanwhile, set an oven rack about 6 inches from the heat source and preheat the oven's broiler.
  • Toss Cheddar cheese into the skillet and pour egg mixture over top. Stir with a spatula (like you were making scrambled eggs) until it starts to thicken up, 30 to 45 seconds. Shake the pan gently to settle the contents and turn off the heat. Push the edges down a bit with the spatula and sprinkle goat cheese over top. Drizzle with remaining 1 tablespoon olive oil.
  • Place under the preheated broiler until the surface is lightly browned and frittata is firm to the touch, 2 to 3 minutes.
  • Sprinkle with more green onions and let cool for 5 minutes before transferring it onto a serving plate.

1/4 cup shredded reduced-fat cheddar cheese

Steps:

  • Preheat broiler. In a small bowl, whisk the egg substitute, milk, pepper and salt; set aside. In an 8-in. ovenproof skillet, saute orange pepper and onions in oil until tender. Add ham; heat through. Reduce heat; top with egg mixture. Cover and cook until nearly set, 4-6 minutes., Uncover skillet; sprinkle with cheese. Broil 3-4 in. from the heat until eggs are completely set, 2-3 minutes. Let stand for 5 minutes. Cut into 4 wedges.
