Steps:
- Preheat the oven to 350 degrees F (175 degrees C).
- Place beef cubes into a large bowl. Season with kosher salt and black pepper. Add flour and paprika and toss until evenly coated.
- Heat oil in an oven-safe Dutch oven over medium-high heat. Sear the beef cubes in batches until dark brown, about 4 minutes per side. Flip or stir gently with a wooden spoon until all edges are dark brown, 2 to 3 minutes more. Remove beef and set aside.
- Add onions to the beef fat with more salt and pepper; cook and stir until they begin to caramelize, about 10 minutes. Add garlic and stir until aromatic and soft, about 30 seconds. Stir in tomato paste and cook until it turns brown and begins to caramelize and stick to the bottom of the pan. Deglaze with red wine, scraping up the flavorful browned bits on the bottom. Let the wine reduce until almost dry again, about 3 minutes.
- Add dried thyme, dried rosemary, herbes de Provence, and bay leaves. Add 2 cups beef broth and Worcestershire, stir, and bring to a boil. Add the seared beef cubes back into the stew liquid. Remove from heat and cover the pot.
- Braise in the preheated oven until meat is almost tender, about 1 1/2 hours. Remove from the oven. Add carrots, potatoes, and more beef broth if needed. Cover and return to the oven to braise until meat and vegetables are tender, about 30 minutes longer.
- Discard bay leaves. Stir in peas, fresh rosemary, and fresh thyme. Serve hot.

HEARTY BEEF, POTATO, AND CARROT SOUP
This is an original recipe I created yesterday with the remains of a boneless chuck roast beef cooked with carrots and sliced baby portabella mushrooms. We enjoyed its unique flavor and hope you will as well. If you are looking to stretch your food dollars, this is a great recipe! The beef was on sale for $1.75 a pound! Note: Salt is optional; I did not use it. However, I did add a few twists of freshly ground peppercorns. I used a small package of sliced baby portabellas . Also, I removed the fat that had risen to the top of the bowl after refrigerating left-overs.

- Add vegetables and rice to pot. Add more water if needed. Note the squash will break down so that you don't notice it in the soup, it just makes the broth creamier. It is a great way to get your kids to eat more veggies without them knowing!
- Simmer an additional 1/2 hour to 40 minutes - until rice is cooked.

- If you're not making your own broth, skip to step # 6 . In a large baking dish, place the bones and sprinkle the montreal steak seasoning and olive oil over them. Roast in the oven for 30 minutes.
- Sprinkle the bones with Montreal steak seasoning, or you're favorite all-purpose seasoning. Place the bones in a roaster and roast, covered, for approximately 1 hour at 350F.
- When the bones are done roasting, remove them from the roaster and place them in a large soup pot. Fill the pot with 8 cups of water, or enough water to cover the bones by 1".
- Bring the bones up to a boil and then turn down the heat to a simmer. Simmer the bones for at least 4 - 6 hours, covered. (The longer the better, actually.) Check on the broth levels as the bones are simmering to replenish any evaporated broth.

- Pat the roast dry with paper towels. Remove all visible fat and any silver skin. Cut into 1-inch pieces and season with salt and pepper. Heat 1 tablespoon vegetable oil in a large Dutch oven or heavy bottom soup pot until shimmering. Brown half the beef, about 10 minutes, and transfer to a bowl using a slotted spoon; cover to keep warm. Brown the remaining beef cubes and remove to the bowl along with any beef juices.
- Add the remaining tablespoon of oil to the now empty Dutch oven. Add the onions, carrots, and celery and cook until vegetables are softened and the onions start to brown and caramelize, about 8 minutes. Add the garlic, thyme leaves, paprika and tomato paste to the vegetables. Sauté for about 30 second or until the garlic is fragrant. Stir in the wine and deglaze the bottom of the pot to remove any browned bits.
- Add the cooked beef to the pot along with the beef broth. Add the bay leaf to the soup, cover and reduce the heat to medium/medium-low. Simmer the soup, stirring occasionally, until the beef and vegetables are tender, about 1 ½ to 2 hours.
- Mix the cornstarch and the water until dissolved. Slowly stir the slurry into the soup. Add the soy sauce, red pepper flakes and gnocchi. Cook for 3-5 minutes or until the gnocchi is cooked through (check package directions for cooking time). The gnocchi will float to the top once cooked. Remove the bay leaf, stir in the peas and parsley and check the seasoning. Serve with crusty bread for sopping up the broth.

- Season the beef with 1 teaspoon of Kosher salt and ¼ teaspoon of freshly ground black pepper.
- Over medium high heat, heat a few drizzles of olive oil on a large 6 or 8 quart Dutch oven pot. Sear the beef on all sides until nicely browned. Do this in batches to not overcrowd the pan (this will prevent steaming). Tip: If you notice that it begins to steam up, remove the excess liquid and continue browning.
- Transfer the browned meat to a plate and set aside. It will not be fully cooked at this point. Leave the brown bits, don’t wipe the pot clean.
- To the pot, add a few more drizzles of olive oil, and over medium high heat, cook the onions, celery and carrots for about 10 minutes until softened. The moisture from the veggies will release the brown bits (left from searing the meat) and add a lot of flavor.
