TUNA RICE
A simple but oh so tasty meal of tuna rice! Just mix canned tuna with Kewpie mayonnaise (a Japanese mayo that is delicious!) and a bit of black pepper. Spoon over rice, eat and enjoy ^_^

Steps:
- Divide the rice into two serving bowls. Set aside.
- In another bowl, mix together the drained tuna, Kewpie mayonnaise, and black pepper.
- Divide the mixed tuna over the two rice bowls. Top with the chopped green onions.
- Eat and enjoy!
- P.S. Feel free to also add a dash of Maggie seasoning and/or shichimi togarashi.

Remove the bay leaf, add the tuna and season with a little salt and pepper. Stir and cook for about 3 to 4 minutes. Add the rice, stir and pour the water (twice the rice volume). Boil over medium-high heat. When starts boiling, reduce to low heat and cook the rice for about 10 to 12 minutes. When the rice is almost cooked, add the grated cheese and mix in the rice and tuna. Turn off the heat, season with a little more pepper and serve.

SPICY TUNA RICE BOWL
What we have here is equal parts tuna and rice by weight, which for me, gives this the perfect balance between protein and starch. While this may remind some people of a fried rice dish, this is significantly lighter, and actually very low on the fat content, but that doesn't mean it's not satisfying, and like most rice dishes, it's very comforting.

- Pour rice into a heavy pot and add water; swirl to allow rice to settle. Bring to a simmer over medium-high heat; do not stir. Reduce heat to low, cover, and continue to simmer for 15 minutes.
- While rice is cooking, place tuna into a large mixing bowl and break up with your hands or a fork. Toss in red bell pepper, jalapeno, 1/4 cup green onions, rice vinegar, soy sauce, sesame oil, Sriracha, and lemon juice. Mix with a fork until thoroughly combined.
- Turn off heat and let rice sit, covered, for 10 minutes.
- Fluff rice with a fork to separate the grains and break up any large clumps; transfer into the mixing bowl. Mix thoroughly with a spoon until all the ingredients are evenly incorporated. Taste and adjust seasoning if needed. Serve warm, at room temperature, or cold like a rice salad, topped with red pepper flakes and 1 teaspoon green onion.

- In a non-stick pan, head oil and splutter mustard seeds.
- Add cumin seeds and curry leaves, roast for a few seconds.
- Add the onions, green chillies and salt, cook till onion is done.
- Add the ginger, garlic and tomato and cook again till the tomatoes become totally cooked.
- Add the turmeric, chili, coriander, pepper and garam masala powders and mix well.
- Roast them till a nice smell comes.
- Add the tomato paste and mix well.
- Add the tuna, and mix well.
- Leave to cook for 3-5 minutes or till tuna is done.
- Add the cooked rice after that and mix very well, till the whole rice becomes the color of the tuna mixture.
- Close the lid and leave the rice for a couple of minutes on low flame.
- Serve hot with raita, pickle and fried chicken.
