Excellent hearty, healthy low carb bread. Great toasted with almond butter or cream cheese. Highly filling so cut thin slices. This recipe was designed for a horizontal loaf Zojirushi bread machine, may require adjustment for smaller machines. * Substitute blanched almond flour for a lighter bread. *Ingredients listed in order to be placed in bread machine.

1-1/4 cups Water
2-1/4 cups Unblanched Almond Flour
1/2 cup Vital Wheat Gluten
1/3 cup Psyllium Husk Powder
3/4 cup Ground Golden Flax Seed
1/3 cup Badia Trilogy seed mix (optional or other seeds_nu
6 large Eggs slightly beaten
1/3 cup Extra Virgin Olive Oil
1 tsp Sea Salt
2 tsp Coconut Palm Sugar
2 tbs Red Star Brewers Yeast

Steps:

  • Add water first then the rest of ingredients in listed order into bread machine. Pile dry ingredients in center of machine. Pour remaining liquid ingredients on each side of dry ingredient pile. Cup dry ingredient pile and place sugar and yeast in the center. Start bread machine and use the Gluten free course, medium. (Zojirushi machines) Make sure to scrape down sides of bread machine pan while mixing/kneading. Manually reform loaf as required once the baking process begins.

This low carb bread is just 3g net carbs per slice, with all the flavor and texture of real bread. It makes great toast, french toast, and sandwiches. You can even use it as a base for cheese bread, cinnamon bread, and flavored keto breads.

Dry Ingredients:
1/2 c. Anthony's Oat Fiber
2/3 c. Flaxseed Meal
1 1/4 c. Anthony's Vital Wheat Gluten
1 t. salt
1/4 c. Xylitol
1/2 t. Xanthan Gum
Wet Ingredients:
1 c. Room Temp Water
2 eggs, beaten
1 t. honey
2 T room temp butter
1 T Active Dry Yeast (Must be Active Dry Yeast)

Steps:

  • In a bowl, combine all the dry ingredients and whisk well to combine.
  • In your bread machine bowl, add all of the wet ingredients, besides the yeast.
  • Add the dry ingredients on top. Then pour in the yeast.
  • Close the machine and start the bread machine on the regular setting.

Honey Wheat Bread for Zojirushi Bread Machine image

This recipe was made for my Zojirushi® Bread Machine. My family loves this bread. I can barely get it cooled down before its gone.

2 5/8 cups bread flour
7/8 cup wheat flour
1 1/3 cups water
5 1/4 tablespoons honey
1 3/4 teaspoons salt
1 3/4 tablespoons dry milk
2 5/8 tablespoons unsalted butter
1 3/4 teaspoons fast rising yeast

Steps:

  • Start by:.
  • 1,Gathering and measure out all ingredients.
  • 2, Warm the Water to 105 degrees Fahrenheit.
  • 3, Warm the Honey to 80 to 90 degrees Fahrenheit.
  • 4, Warm the Butter to room temperature.
  • 5, Mix the Bread Flour and the Wheat flour together (DRY) in a bowl before you add it to the bread pan.
  • 6, Put the water and honey in the bread pan and add the flour making sure to cover all liquids by leveling off the flour with a rubber spatula.
  • 7, Make a small well in the middle for the yeast making sure not to go to deep.
  • (Reminder: The yeast can not touch any wet ingredients until the mixing starts.).
  • 8, Add salt and 1/2 of the butter to one side of the bread pan on top of the flour.
  • 9, Add dry milk and 1/2 of the butter to the other side of the bread pan on top of the flour.
  • 10, Place the yeast into the well you made in the flour.
  • 11, Now place the bread pan inside the bread machine and select the cooking cycle.
  • 12, You can use the quick bread cycle on your Zojirushi® Bread Machine, however I have found that the Home Made Cycle below works better.
  • Bread Machine Home Made Cycle Setting:.
  • 5min Pre Heat, 28 Min Kneading, 20min First Rise, 40min Second Rise and 60min Bake time.
  • Bake on the light setting. (you can change the bake time depending on how you like your bread).
  • Softer Crust:.
  • If you like a softer crust, once the bread is done, remove the bread pan from the bread machine and leave the bread in the bread pan cooling for 10 to 15 min depending on how soft you like your crust. The longer you leave it the softer it will be.(be careful to long and it will get soggy). Then remove the bread from the pan, place it on a cooling rack and continue to cool for another 15 to 20 min for a total of 30min of cooling, then slice and eat.
  • For slicing I recommend using an electric knife.
  • Note:.
  • Even though the Zojirushi® bread machine will preheat the ingredients I have found it works best to warm some of the ingredients before you put them in the bread pan.

  • You may need to adjust water or flour for your climate, i.e., Temperature, Humidity and Altitude!

It's a pretty robust recipe, I've swapped a few of the ingredient (like apples for carrots, or hemp/chia for flax) at times and the results are usually very good. The end result will be a heavy bread...probably closer to 3 pounds. Easy to cut into thinner pieces.

1 cup unbleached flour
1/4 cup ground quinoa
1/3 cup fine ground soybeans
1/3 cup fine ground flax seeds
2 cups shredded carrots
2 cups skim milk
2 1/2 teaspoons bread yeast
2 tablespoons sugar
2 tablespoons tahini
1 teaspoon salt

Steps:

  • Blend the carrots with 1 cup milk until liquidfied.
  • Add all liquids to bread pan.
  • Add all dry ingredients except yeast.
  • Makes small well in the top of the dry ingredients for yeast.
  • Set machine for wheat bread and start.
