HONEY SOY CHICKEN

Steps:
- Preheat oven to 425 degrees Fahrenheit. Line a 8x8" oven-proof pan with 2 layers of tin foil. I HIGHLY advise using foil in this dish because soy sauce & honey are STICKY and tend to adhere heavily on glass dishes when cooked at high temperatures. Unless you want to be scrubbing forever, use the foil!
- In small bowl, whisk together vegetable oil, soy sauce, sesame oil, honey, garlic, ground ginger, and pepper.
- Place the chicken thighs in the foil layered pan then pour the mixture on top of it. Turn the chicken around in the sauce to make sure it gets all coated.
- Bake, uncovered, for 40 minutes, checking occasionally to make sure the tops are not browning too quickly. If they are, cover with foil and resume baking until chicken is done.
- Remove from oven and let chicken sit for 5 minutes then transfer to a plate. Do NOT discard the liquid.
- Immediately after plating chicken, pour sauce over top of chicken. It's delicious so you want all the sauce you can get!
- Serve with white or brown rice and some steamed veggies.

HONEY SOY CHICKEN

- Marinating and preparing the Chicken
- Take the diced chicken in a bowl and mix the above ingredients together. Cover the bowl and keep it in the fridge for 10 minutes. After 10 minutes take the chicken out of the marinate and keep it aside. Reserve the marinate. Fry the chicken in a pan on a high heat for 10 minutes until cooked.
- Preparing the Egg Noodles
- Add the egg noodles to the hot water with green tea leaves, dark soy sauce, fish oil and 1/2 Tbsp. olive oil for 7 minutes in a bowl. After 7 minutes strain the noodles and reserve 1 cup of the liquid. Heat a pan and add 1/2 Tbsp olive oil to the pan. Fry the garlic clove, red onion, pepper for a couple of minutes on high heat. After 2 minutes, add the peas and corn kernel to the pan. Once the onions are brown add the strained egg noodles to the pan. Fry the mixture for another 2 minutes and leave it to the rest. Add salt to taste.
- Preparing the Sauce
- Heat the pan and add the ingredients to the pan. Add the reserved marinate and the noodles liquid to the pan. Reduce the Sauce until thick.
- Serving
- Place 5 forkfuls of egg noodles on a plate. Put 4 pieces of chicken on the egg noodles. Take a Tbsp of the Sauce and pour it on the top of the chicken. Finish it with Garnish.

- Cut chicken into strips.
- Prepare vegetables as described above.
- In a large frying pan or wok (which has a lid) coated with cooking spray.
- Saute chicken, garlic, ginger together for 4 minutes.
- Toss in beans, zucchini and carrots and cook with lid on for a further 4 minutes or until vegetables are cooking to your liking.
- Add shallots, soy sauces, honey and chicken stock.
- Mix cornflour with water and add to pot, bring to boil.
- Serve immediately with cooked rice or noodles.

STICKY HONEY-SOY CHICKEN WINGS

- Rinse chicken wings and pat dry. Remove tip and discard; separate each wing at the joint into 2 pieces. Place wings in a shallow dish and pour over the soy sauce, ginger, cilantro, garlic, and lemon juice. Toss well to coat; marinate, refrigerated, for 2 hours.
- Remove wings from marinade and pat dry; season with salt and pepper. In a large saute pan over medium-high heat, melt the butter in the olive oil. When the butter stops foaming, add the honey and chicken wings and fry until browned on each side, about 5 minutes. Continue cooking the wings, turning them over often to coat them as the glaze reduces. Cook until the wings are sticky and cooked through. Garnish with sesame seeds and serve.
HONEY CHICKEN
Steps:
- Cut chicken into serving pieces: breast into halves, legs, thighs, and wings separated for a total of 8 pieces. Clean thoroughly. Heat shortening in a heavy duty skillet pan to 360 degrees. Dip chicken pieces in buttermilk. Sprinkle with salt, paprika, and black pepper. Place flour into a heavy plastic bag, put chicken pieces into the bag and shake vigorously until well coated. Dust off excess flour. Place pieces into skillet, and fry both sides until golden brown and the juices run clear when pierced with a fork. Do not over-crowd the skillet. Approximate cooking time, 25 minutes. Take chicken out of skillet and place on paper towel to drain off excess oil. Immediately dip warm chicken into hot honey, and serve.

- Heat oven to 200C/180C fan/gas 6. Mix the soy, honey, 1 tbsp of the oil and ½ tbsp garlic & ginger paste in a bowl. Pour over the chicken thighs and leave to marinate if you have time, but don't worry if not - they will be delicious either way. Tip the chicken with all the marinade into a roasting tin, skin-side up. Cook for 45 mins until sticky and the skin is crispy.
- When the chicken has 15 mins left, start cooking the rice following pack instructions, if using, and heat the remaining oil in a frying pan. Add the remaining garlic & ginger paste, sizzle for 1 min, then tip in the broccoli along with a splash of water. Cover and cook for 10 mins until tender, then take the lid off, tip the sesame seeds into the pan and give everything a good toss around. Season. Serve with the chicken, and all the caramelised bits from the bottom of the tin.

- Heat the oven to 425 degrees. Heat 1 tablespoon oil in a small saucepan over low heat. Add the garlic and ginger and cook, stirring occasionally, until softened, 3 minutes.
