STIR-FRIED SCALLOPS WITH BROCCOLI

Stir-Fried Scallops with Broccoli image

This Asian-inspired dish is a quick fix for a delicious dinner. Sea scallops stir-fried with broccoli, mushroom and red pepper, served over white rice - a mild meal!

Provided by By Betty Crocker Kitchens

Categories     Entree

Time 35m

Yield 4

Number Of Ingredients 10

1/2 lb fresh broccoli
1/4 lb fresh mushrooms
1 lb uncooked sea scallops
1/4 cup roasted red bell peppers (from 7-oz jar)
1 cup uncooked regular long-grain white rice
2 cups water
2 tablespoons butter or margarine
3 tablespoons cornstarch
1 can (10 1/2 oz) condensed chicken broth
2 teaspoons soy sauce

Steps:

  • Trim the large leaves from the broccoli, and cut off any tough ends of lower stems. Rinse broccoli with cool water. Cut stems and florets into bite-size pieces. Cut stem ends from the mushrooms, and cut the mushrooms into 1/4-inch slices.
  • If the scallops are larger than 1 inch in diameter, cut each in half. Rinse with cool water, and pat dry with paper towels. Drain the roasted red peppers in a strainer; cut the red peppers into slices.
  • In a 2-quart saucepan, heat the rice and water to boiling over medium-high heat, stirring occasionally to prevent sticking. Once mixture is boiling, reduce heat just enough so mixture bubbles gently. Cover with lid; cook about 15 minutes or until rice is fluffy and tender. While the rice is cooking, continue with the recipe.
  • In a 3-quart saucepan or 12-inch skillet, melt the butter over medium heat. Add the mushrooms; cook about 5 minutes, stirring frequently, until tender when pierced with a fork.
  • Stir in the scallops, broccoli and roasted red peppers. Cook 3 to 4 minutes, stirring frequently, until scallops are white and opaque. Remove the saucepan from the heat.
  • Place the cornstarch in a medium bowl. Gradually stir the chicken broth into the cornstarch until the mixture is smooth. Stir the broth mixture and soy sauce into the scallop mixture. Heat to boiling over high heat, stirring constantly. Continue boiling 1 minute, stirring constantly. Serve over rice.

CHINESE BEEF AND BROCCOLI NOODLES

Chinese Beef and Broccoli Noodles image

Everybody's favourite Chinese Beef and Broccoli - with noodles! I make this in a large skillet because it serves 4 so there's too much for a wok. If you scale it down to serve 2 (use scaler by hovering over Servings), you can make this in a wok. See notes for how to make this with CHARLIE, my all purpose stir fry sauce. Recipe VIDEO below.

CREAMY BAY SCALLOP SPAGHETTI

Creamy Bay Scallop Spaghetti image

This scallop and spaghetti dinner with a creamy sauce is fast and easy. I cook the scallops a bit longer than many chefs, but that's gives the dish more flavor and they're still tender and moist. I think you'll agree, the sherry sauce benefits significantly from the longer cook time.

Provided by Chef John

Categories     Seafood     Shellfish     Scallops

Yield 4

Number Of Ingredients 13

8 ounces uncooked thick spaghetti
1 tablespoon vegetable oil
1 pound bay scallops
2 tablespoons butter
3 cloves garlic, minced
2 teaspoons grated lemon zest
1 pinch red pepper flakes
⅓ cup dry sherry
1 cup heavy cream
salt and pepper to taste
1 lemon, juiced
2 tablespoons chopped Italian parsley, divided
Freshly grated Parmigiano-Reggiano cheese, for serving

Steps:

  • Bring a large pot of lightly salted water to a boil. Cook spaghetti in the boiling water, stirring occasionally until tender yet firm to the bite, about 10 minutes or 1 minute less than directed on the package.
  • Heat oil in a large skillet over high heat. When oil just starts to smoke, add scallops and move them into a single layer. Let sear on high for 60 seconds. Toss to turn. Add butter and stir scallops until butter melts. Stir in garlic. Add lemon zest and red pepper flakes. Stir in sherry and cook and stir until alcohol cooks off, about 1 minute. Pour in cream. When mixture begins to simmer, reduce heat to medium-low. Add salt, pepper, and lemon juice.
  • Drain pasta. Transfer to skillet with scallops; bring to a simmer. Add half the parsley. Cook until pasta is heated through and tender, about 1 minute. Remove from heat. Grate generously with grated cheese. Add the rest of the parsley. Serve in warm bowls.

SEIZED SCALLOPS WITH BROCCOLI RABE

Seized Scallops With Broccoli Rabe image

Provided by Jacques Pepin

Categories     dinner, main course

Time 25m

Yield Six servings

Number Of Ingredients 15

1 1/4 pounds broccoli rabe
3 tablespoons olive oil
1 teaspoon finely chopped garlic
1/4 teaspoon red pepper flakes
1/3 cup water
1/2 teaspoon salt
1 pound medium-size sea scallops (about 30 to the pound)
1 tablespoon virgin olive oil
1/8 teaspoon salt
1/4 teaspoon dried thyme
1/4 teaspoon freshly ground black pepper
2 tablespoons balsamic vinegar
4 tablespoons virgin olive oil
1/2 teaspoon salt
1/4 teaspoon freshly ground black pepper

Steps:

  • For the broccoli rape: With a sharp knife peel off and discard the thick, fibrous skin covering the larger broccoli rabe stems. Cut the vegetable into 1 1/2-to-2-inch pieces. Rinse well and dry thoroughly.
  • No more than 30 minutes before serving time, heat the olive oil in a saucepan. Add the garlic and pepper flakes to the hot oil and stir for about 4 seconds, then add the broccoli, water and salt. Cover and cook for 5 minutes. By then, most of the liquid should be gone. Set the broccoli rabe aside while you prepare the scallops.
  • For the scallops: Remove the small sinew, which tends to be tough, from each scallop. Rinse the scallops in cool water to remove any sand and dry them thoroughly. In a bowl mix the scallops with the olive oil, salt, thyme and pepper.
  • At serving time, heat a skillet for about 3 minutes, until very hot. Add the scallops, spreading them to create one layer, and cook them over high heat for about 2 minutes, turning them occasionally so they brown well on all sides. Cover the skillet and set it aside off the heat for about 1 minute so the scallops continue to cook in the residual heat.
  • Meanwhile, in a small bowl mix together the sauce ingredients. Divide the broccoli rabe among six plates and arrange the scallops on top, about five per plate. Spoon some sauce over the scallops and serve immediately.

LINGUINE WITH SCALLOPS

Linguine With Scallops image

Provided by Pierre Franey

Categories     dinner, pastas, main course

Time 40m

Yield 4 or more servings

Number Of Ingredients 14

1 1/2 pounds fresh bay or sea scallops
1 bunch broccoli, about 3/4 pound
Salt to taste if desired
2 tomatoes, about 1 pound, peeled
1 pound fresh mushrooms
10 cups water
2 tablespoons olive oil
1/4 cup finely chopped shallots
1/4 to 1/2 teaspoon dried hot red pepper flakes
Freshly ground pepper to taste
3/4 cup heavy cream
9 ounces linguine, preferably fresh
2 tablespoons butter
1/4 cup coarsely chopped basil or finely chopped parsley

Steps:

  • If bay scallops are used, leave them whole. If sea scallops are used, cut them into quarters.
  • Cut the broccoli into florets. Peel the stems and cut each lengthwise into quarters. There should be about 4 cups of flowerets and stems. Drop the broccoli into boiling salted water and when the water returns to the boil cook exactly 1 minute. Drain.
  • Cut away the outer thick portion of the tomatoes and cut the pieces into lengthwise strips, each about 1/4-inch thick. There should be about 2 cups.
  • Chop the inner portion of the tomatoes with their seeds. There should be about 3/4 cup.
  • Cut the mushrooms into thin slices. There should be about 3 cups.
  • Heat the water to make it ready for the linguine when it is added.
  • Heat the olive oil in a skillet and add the mushrooms. Cook, stirring, about 3 minutes. Add the shallots and stir.
  • Add the chopped inner portion of tomatoes, the red pepper flakes, salt and pepper. Cook, stirring, about 1 minute and add the cream. Bring to the boil and add the scallops. Cook 30 seconds and add the parboiled broccoli pieces. Add the tomato strips and stir.
  • Meanwhile, when the water is boiling, add the linguine. If fresh pasta is used, it will require about 1 to 1 1/2 minutes of cooking time. If dried pasta is used, cook it to the desired degree of doneness, about 7 to 9 minutes.
  • Drain the pasta and return it to the kettle in which it cooked. Pour the scallop and broccoli sauce over the pasta. Add the butter and basil and blend gently but well. Serve immediately.

  • Peel and finely slice 1 clove of garlic, deseed and finely chop the chilli, then place in a frying pan on a medium heat with 1 tablespoon of olive oil.Strip the leaves off 1 sprig of rosemary, finely chop, add to the pan and cook for 1 minute.Tip in the beans (juice and all) to warm through, then add the vinegar and season with sea salt and black pepper.
  • Leave to tick away, adding splashes of water, if needed.Trim the broccoli, halving any thicker stems lengthways, cook in a pan of boiling salted water for 6 minutes, or until just tender, then drain.Meanwhile, strip the remaining rosemary into a pestle and mortar, peel and add the remaining ½ clove of garlic along with the anchovies, pound well, then muddle in 2 tablespoons of extra virgin olive oil (or use oil from the anchovy tin) and a squeeze of lemon juice.Season the scallops with a pinch of salt.
  • Place a frying pan on a high heat with 1 tablespoon of olive oil, and cook the scallops and pancetta for 1 to 1½ minutes on each side, depending on the size of the scallops.Pick in the sage leaves for the last minute, add a squeeze of lemon juice and toss together, then remove from the heat.Toss the drained broccoli with a drizzle of the anchovy dressing, to taste (save the rest for another day).Spoon the beans on to a serving plate and top with the dressed broccoli, then the scallops, crispy pancetta and sage.
