MY MUM'S SALMON MORNAY



My Mum's Salmon Mornay image

This recipe came printed on the bottom of an ovenproof dish my mum had given to her about forty years ago. It became a family favourite, especially for parties so I usually double the quantity when I make it. As it is usually served with several other dishes I guessed at how many serves it makes.

1 (310 g) can canned red salmon, drained
45 g butter
1/2 cup plain flour
salt and pepper, to taste
600 ml milk
1/2 lemon, juice and zest of
1 pickle, sliced (optional)
3 shallots, chopped (green onions)
1/2 tablespoon mayonnaise
1 egg, beaten
1/2 cup cheese, sharp grated
1/2 cup breadcrumbs, soft
1/2 tablespoon butter, melted

Steps:

  • Melt butter, add flour, salt and pepper and cook approximately 1 minute.
  • Add milk and stir constantly until it boils and thickens, add other ingredients, other than breadcrumbs and melted butter.
  • Pour into casserole dish and top with buttered breadcrumbs (breadcrumbs mixed with melted butter).
  • Place in moderate oven 180 deg C (350 deg F) until mornay is heated through and breadcrumbs are golden brown, approximately 25mins.
  • Serve with rice.

Based on a recipe from Australian magazine Recipe+. The original called for canned tuna which I have changed to canned salmon. Upon making this I have changed some of the quantities to suit our tastes - the original recipe called for 350 grams of broccoli, 1 tablespoon butter, 1 tablespoon of lemon zest and 1 cup fresh bread crumbs. Would also consider adding cauliflower and carrot to make it more a complete meal on the plate.

300 g pasta (small spiral)
200 g broccoli (cut into small florets)
1/2 cup peas (frozen)
1/2 cup corn kernel (frozen)
2 tablespoons butter
2 tablespoons plain flour
2 cups milk (I use low fat warmed)
1 cup cheddar cheese (grated)
400 g canned salmon (red or pink)
1 1/2 cups fresh breadcrumbs (soft)
1 teaspoon lemon zest (finely grated)
1/4 cup chives (finely chopped)

Steps:

  • Cook pasta as per manufacturers directions until tender but firm to the bite adding broccoli and peas and corn in the last 2 minutes.
  • Drain and return to pan.
  • While pasta is cooking melt butter in a large saucepan over moderate heat and add the flour and cook for a minute or two.
  • Add warmed milk and using a balloon whisk, whisk well to remove any lumps, bringing to the boil and then reduce the heat and simmer uncovered for 5 minutes or until sauce thickens stirring all the time.
  • Add the cheese and stir till melted and then add salt and pepper to taste and then add the flaked salmon.
  • Add the cheese salmon sauce to the pasta, broccoli, peas and corn mix and gently stir to combine.
  • Spoon mix into a 2 litre (8 cup) capacity oven proof dish.
  • Preheat oven-grill (broiler) to high.
  • Combine the breadcrumbs, zest and chives and sprinkle over the pasta.
  • Cook under grill (broiler) for 3 to 4 minutes or until goden brown.
  • Serve at once.

A delicious and simple meal. Served with plain rice, my kids love it. Can also substitute canned tuna (or chicken) for the salmon. As the first reviewer has pointed out, it works just as well if you substitute more milk for the cream. If I do that I generally add a bit more cheese though.

30 g butter
1 medium onion, finely chopped
1 stalk celery, chopped
1 1/2 tablespoons plain flour
3/4 cup milk
1/2 cup cream
1/3 cup of grated tasty cheese
1 (130 g) can canned corn niblets, drained
1 (185 g) can salmon or 1 (185 g) can tuna, drained
1/3 cup breadcrumbs
1/4 cup tasty cheese, extra

Steps:

  • Melt butter in medium saucepan, add onion and celery.
  • Stir constantly over medium heat for about 3 minutes or until onion is soft.
  • Add flour, stirring constantly over medium heat for 1 minute or until mixture is bubbly.
  • Gradually stir in combined milk and cream- stir constantly over high heat until mixture boils and thickens.
  • Remove from heat, add cheese, corn and salmon - stir gently until cheese is melted.
  • Spoon mixture into ovenproof dish, sprinkle with combined breadcrumbs and extra cheese.
  • Bake in moderate oven for about 15 minutes or until mornay is heated through and bread crumbs have browned. Leaving the lid off for all or part of the time will help them brown better.
  • Serve on plain rice.

1 teaspoon lemon-pepper seasoning, divided
4 salmon fillets (6 ounces each)
3 tablespoons butter, divided
1-1/2 teaspoons all-purpose flour
1/8 teaspoon salt
Dash pepper
Dash cayenne pepper
1/4 cup 2% milk
1/4 cup heavy whipping cream
1/4 cup shredded Swiss cheese

Steps:

  • Sprinkle salmon with 1/2 teaspoon lemon-pepper. In a large skillet, cook salmon in 2 tablespoons butter for 4-6 minutes on each side or until fish flakes easily with a fork. , Meanwhile, in a small saucepan, melt remaining butter. Stir in the flour, salt, pepper, cayenne and remaining lemon-pepper until blended. Gradually add milk and cream. Bring to a boil; cook and stir for 1-2 minutes or until thickened. Remove from the heat; stir in cheese until melted. Serve with salmon.

1 (7 ounce) can salmon, drained and flaked
1 egg, beaten
1 tablespoon olive oil
2 green onions, finely chopped
2 cups finely crushed saltine cracker crumbs
lemon pepper to taste

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • In a medium bowl, mix together salmon, egg, olive oil, green onions, and 2/3 cup cracker crumbs. Season with lemon pepper. Form mixture into 8 patties. Coat patties with remaining cracker crumbs, and arrange in a single layer on a baking sheet.

CREAMY SALMON BAKE



Creamy Salmon Bake image

The original recipe comes from Australian Good Food and was contributed by a reader and called for 425 grams of Tuna in Oil but as we don't really care for canned tuna I used red salmon (bones and skin as well, drained). After the first making I made a few minor adjustment which I have added as optional ingredients. This is a quick easy recipe that uses pantry staples for during the week. Suggested you serve with a green salad which we did on the first time but much prefer steamed vegetables.

900 g potatoes (waxy, desiree recommended)
20 g butter (or margarine)
2 tablespoons plain flour
1 cup milk (250ml warmed, I use microwave)
415 g salmon (drained and flaked)
1 cup cheddar cheese (120 grams grated)
1 spring onion (scallion, finely sliced) (optional)
1 tablespoon butter (or margarine melted) (optional)
ground paprika (optional)

Steps:

  • Preheat oven o 200C or 180C fan forced.
  • Grease a 6 cup capacity baking dish.
  • Cook ptatoes in a large sauepan of salted boiling water, until just starting to soften, depending on the size this could take 6 to 12 minutes; drain and set aside.
  • Meanwhile, melt butter or margarine in a saucep[an on medium-low heat and add flour and cook stirring for 1 minute to cook off the flour, gradually whisk in the milk and stir till smooth and thick.
  • Remove from heat and stir in the salmon and season to taste (if using spring onion add at this stage).
  • Finely slice potatoes and arrange 2/3 of potato over base of prepared dish and then top with salmon mixture and then remaining potato (overlapping) and brush with melted butter.
  • Bake for 20 to 30 minutes (or until potatoes have a slight brown tinge), top with cheese and sprinkle with paprika (if using) and bake for another 10 to 15 minutes until golden and bubbling.
  • Serve with a salad or steamed vegetables.

ITALIAN BROCCOLI & SALMON BAKE

Take a fresh look at broccoli with this creamy pasta bake

250g penne
300g broccoli, cut into large florets
25g butter
25g plain flour
600ml milk
100g mascarpone
8 sundried tomatoes (preserved in olive oil), drained and thickly sliced
2 tbsp small capers (optional) rinsed to remove excess salt or vinegar
8 anchovy fillets, halved (optional)
10 large fresh basil leaves, roughly torn
4 fresh skinless salmon fillets
50g mature cheddar, finely grated

Steps:

  • Preheat the oven to 190C/gas 5/fan 170C and get out an ovenproof dish (measuring 20 by 30cm, and about 5cm deep). Meanwhile, put a large pan of water on to boil for the pasta. When it is boiling rapidly, tip in the pasta with a generous sprinkling of salt. Give it a stir, return to the boil and cook for 6 minutes. Add the broccoli, then return the water to the boil and cook for 4 minutes more, until the broccoli is on the firm side of just tender. Drain well.
  • While the pasta is cooking, put the butter, flour and milk in a large pan and heat, whisking or stirring continuously, until it thickens to make a smooth sauce. Remove from the heat and stir in the mascarpone, sun-dried tomatoes, capers (if using), anchovies (if using) and basil, then add the pasta and broccoli and season well.
  • Halve the salmon fillets widthways (you will see that there is an obvious divide on each fillet) then place the pieces in a single layer on the base of the ovenproof dish. Spoon the broccoli mixture on top, then scatter with the grated cheddar. (You can chill this for up to 4 hours if you want to get ahead.)
  • Bake for 30 minutes until the mixture is just starting to bubble round the edges and the mixture is pale golden - don't let it go too dark or the fish will overcook.

400 g tinned salmon (cheap one drained and de-boned)
50 g chicken noodle soup
1 cup cooked rice
1 small onion
30 g butter
1 cup milk
1 tablespoon flour
2 teaspoons curry (or more to taste)
2 tablespoons fruit chutney
1 cup cheese, grated

Steps:

  • make up the chicken noodle soup, using only half the water.
  • Fry the onion, diced, in the butter til limp.
  • Stir in the curry powder, then the flour.
  • Add the milk and the salmon and the soup.
  • Cook, stirring until slightly thickened.
  • Spread half the rice in a greased casserole dish,dot with half the chutney, cover with half the salmon mix.
  • Repeat.
  • sprinkle over the cheese.
  • bake in a moderate over until brown.
  • I haven't given baking times, because you can make this in the morning, and reheat in the evening, obviously it would take longer, and the oven temp should be a little lower.

2 sweet potatoes
1 tbsp olive oil or rapeseed oil
2 salmon fillets, skin removed
2 garlic cloves, thinly sliced
170g baby spinach
1 lemon, zested and ½ juiced, ½ thinly sliced
75g mascarpone
5 tbsp milk

Steps:

  • Heat oven to 200C/180C fan/gas 6. Pierce the sweet potatoes a few times each and microwave on high for 5 mins until soft (alternatively, bake for 35-40 mins). Keep warm until ready to serve.
  • Heat half the oil in a frying pan and lightly brown the salmon on both sides - don't worry about it being cooked through at this point. Transfer the salmon to a plate, wipe out the pan and heat the remaining oil. Cook the garlic for 30 seconds, without letting it brown, then add the spinach, lemon zest and juice and some seasoning. Stir in the mascarpone and 2 tbsp of the milk and cook until the spinach has wilted.
  • Tip the spinach mix into an ovenproof dish and top with the lemon slices and salmon fillets. Bake for 5-8 mins until the salmon is cooked through.
  • Meanwhile, scoop the sweet potato flesh from the skins and mash with the remaining milk and some seasoning. Serve the sweet potato mash alongside the salmon and creamy spinach.
