CANDIED SWEET POTATOES
These perfect candied sweet potatoes are soft, buttery, extra saucy, caramelized, and sweet. I especially love this Thanksgiving side dish because you can prepare the elements of this recipe ahead of time AND purchase the ingredients in advance, too.

Steps:
- Peel then slice the sweet potatoes into 1/2 inch thick slices. Place in a greased 9×13 inch or other 3 quart baking dish. Sprinkle salt on top and toss to coat. I just use nonstick spray to grease.
- Preheat oven to 375°F (191°C).
- Cut stick of butter in half. (Helps it melt easier.) Combine all the butter, water, maple syrup, brown sugar, cinnamon, nutmeg, and ginger into a medium saucepan over medium heat. Cook and stir until the butter has melted. Stop stirring and bring to a gentle boil. Boil for 2 minutes without stirring. Remove sauce from heat and stir in the vanilla extract. (And orange zest, if using.)
- Pour sauce over potatoes and toss to coat.
- Bake for 1 hour, stopping and stirring the sweet potatoes every 20 minutes. After the first 20 minutes, I cover the dish with aluminum foil so the potatoes bake evenly.
- Remove from the oven, sprinkle with rosemary and sea salt (if using), then cool uncovered for 10 minutes before serving. The sauce is thin right out of the oven but thickens as it cools.
- Cover and store leftovers in the refrigerator for up to 1 week. Sauce will be thick after refrigeration, but thins out as you warm the leftovers up. Simply warm in the microwave.

- Preheat oven to 350 degrees.
- Add sweet potatoes, sugar, butter, eggs, sweetened condensed milk, and vanilla to a bowl and mix with an electric mixer until creamy. Spread in a 9×13 pan.
- Mix topping ingredients together until everything is incorporated and sprinkle over sweet potatoes.
- Bake for 40-50 minutes until topping is golden brown.

- Boil 30 minutes potatoes or until tender.
- Let cool and then peel and cut into 1-inch thick slices.
- Place butter in a large saucepan or skillet and melt.
- Stir in sugar and water and cook over medium heat for 5 minutes.
- Lower heat and add potatoes.
- Simmer for 20 minutes, tossing lightly to coat.
- Sprinkle with coconut before serving.
- Note: I reduced the amount of butter and sugar. Original quantities: 1/2 cup of butter and 1 cup brown sugar.

- Heat oil in a large skillet over medium heat. Add sweet potatoes; cook, turning occasionally, 3 minutes. Add garlic; cook, stirring constantly, 1 minute. Add wine and stock; simmer, stirring occasionally, until almost all liquid has evaporated, about 20 minutes. Add brown sugar and salt; cook, carefully turning potatoes to brown both sides, about 20 minutes. Transfer caramelized sweet potatoes to a plate. Let cool slightly.

- In a large skillet cook onions in margarine over medium high heat for 3-4 minutes, or until onions are nearly tender, stir frequently.
- Stir in sweet potatoes and water.
- Cover and cook over medium heat for 12 to 15 minutes or until sweet potatoes are NEARLY tender, stirring occasionally. Notice that in last step you are cooking a bit longer.
- Uncover skillet; add brown sugar and rosemary.
- Cook over medium low heat for 4-5 minutes or until onions and sweet potatoes are glazed, stirring gently occasionally.

- Preheat oven to 450 degress F.
- In a bowl, whisk the coconut oil, syrup, cinnamon and salt. Put the potato and peaches in 2 separate bowls. Pour 3/4s of the syrup mixture over the sweet potato and 1/4 over the peaches and toss each. Spread the potato in an even layer in a large baking dish and roast for 10 minutes. Toss the potato and roast for 5 minutes more. Add the onion and roast for 15 minutes. Toss the potato and onion, add the peaches in an even layer, and roast 10 minutes, or until the potato and onion are fork tender and the peaches have caramelized.

EMBER-ROASTED SWEET POTATOES WITH COCONUT CARAMEL

- Stir together 1 can coconut milk, coconut sugar, and salt in a medium saucepan. Bring to a boil over medium-high; immediately reduce heat to medium-low to maintain a light simmer. Simmer, stirring occasionally, 30 minutes. During the last 5 to 8 minutes of cooking time, begin stirring often, scraping bottom of pan to incorporate the darker caramel bits into sauce. Once sauce has turned a dark amber and has thickened to coat the back of a spoon, remove from heat. Stir in coconut oil and vanilla.
- Stir together remaining can coconut milk and ginger in a separate medium saucepan. Bring to a boil over medium-high. Remove from heat, and let stand 30 minutes. Pour through a fine wire-mesh strainer into a bowl, and discard solids. Stir into coconut-caramel mixture.
- Wrap each sweet potato in heavy-duty aluminum foil. Place sweet potatoes on bottom grate of grill.
- Light 1 charcoal chimney starter filled with briquettes. When briquettes are covered with gray ash, pour coals over sweet potatoes. Roast sweet potatoes, rotating occasionally, until completely tender, 40 minutes to 1 hour. Remove potatoes from coals, and let cool 10 to 15 minutes. Remove foil, and cut potatoes in half. Top evenly with butter and desired amount of coconut-caramel mixture.
