This recipe was popular at a restaurant in Winston-Salem called Berry's. I love serving this salad to guests who comment that it is very pretty. Not only that, it is also a tasty and very nutritious dish!

- Arrange spinach and strawberries on individual salad plates or in a large salad bowl. Place the next six ingredients in a blender or food processor. With unit running, add oil and vinegar in a steady stream. Blend until thickened. Drizzle over salad; serve immediately.

- For the salad: Preheat the oven to 400 degrees F. In a small bowl, mix the ramen noodles, almonds, sunflower seeds and melted butter. Transfer to a baking sheet and toast in the oven, stirring occasionally, until browned, about 10 minutes. Remove from the oven and set aside to cool.
- Tear the lettuce and combine with the spinach, strawberries and cheese in a large salad bowl.
- For the dressing: Dissolve the sugar in the vinegar. Combine the oil, paprika, salt and garlic and then add to the sugar-vinegar mixture. Mix well and store in the refrigerator until ready to serve.
- Just before serving, sprinkle the crunchy topping over the salad green and toss the salad with enough dressing to coat the greens.
STRAWBERRY CHICKEN SALAD
Easy and healthy salad recipe made with romaine lettuce, onions, avocados, strawberries, grilled chicken, and then tossed in a delicious mustard vinegarette.

- Mix all the dressing/marinade ingredients to a bowl and refrigerate until ready to use.
- Season the chicken breast with some salt and pepper. Place it into a ziplock bag or an air-tight container and pour over 1/3 of the prepared marinade. Let it marinate in refrigerator at least an hour. Keep the remaining 2/3 of the dressing marinate in a separate container without touching the raw meat.
- Meanwhile, roughly chop the lettuce and onion. Peel and slice avocado cut the strawberries into halves.
- Next, brush the grill or a heavy-bottomed pan with avocado oil and heat over medium-high heat.
- Carefully place the marinated chicken onto the preheated grill and grill until each side is nicely golden brown and marks appear, about 10-12 minutes or internal temperature reads 165 degrees F.
- Once the chicken has finished cooking, remove from the grill and let sit for 5 minutes. Slice into 1-inch pieces.
- For assembling, place the chopped lettuce and onion into a salad bowl. Add avocados and strawberries. Place the sliced chicken on top of the veggies.
- Drizzle with the reserved dressing/marinade on top and garnish with shaved parmesan.

- In a blender, combine the cranberry sauce, vinegar, jam and salt. Cover and process until smooth. While processing, gradually add oil in a steady stream. Refrigerate until chilled., To serve, combine the spinach, half of the kiwi, 1/2 cup raspberries and cranberry sauce in a large bowl. Add 1/2 cup dressing; toss to coat. Transfer to a serving platter. Arrange the turkey, macadamia nuts and remaining fruit over top; drizzle with remaining dressing. Serve immediately.

STRAWBERRY SPINACH WON TON SALAD
My sister's friend caters, and gave her this recipe. I've yet to have someone try it and not rave about it! You can substitute raspberries for the strawberries as well. I've also sprayed my won-tons with olive oil and baked them at 400* for 5 minutes instead of deep frying them.

- Set oil at 350* and deep fry the won tons until lightly brown and crisp. Or spray with olive oil spray and bake 400* for 5 minutes.
- Cook bacon and crumble, or buy pre-cooked bacon and cut into pieces.
- Put the almonds in a frying pan over medium heat, and continue to move around until lightly browned, and set aside until cooled.
- Slice strawberries.
- For Dressing, mix red wine vinegar, mustard, salt, sugar and raspberry jam. Then add oil and shake or mix well. Refrigerate after serving.
- Layer salad ingredients. Serve dressing on the side.

- For the salad, place the spinach in a large bowl. Top with the strawberries and almonds and lightly toss.
- For the dressing, combine all the ingredients together in a jar, close with a lid, and shake like crazy until well combined and smooth. You could also use a blender, but don't add the poppy seeds until all the other ingredients have been blended - stir in the poppy seeds at the end.
- Toss the salad with the dressing or serve the dressing on the side. The dressing will keep, well covered, in the refrigerator for at least a week. Serve the salad with crispy wontons on top, if desired.
- For the fried wontons, heat 1/2 cup or so of vegetable or canola oil in a stainless steel skillet until it is hot (and sizzles when you test a piece of the wonton).
