ORANGE CREAMSICLE COOKIES
Orange Creamsicle Cookies are butter cookies made with orange zest and added food coloring to remind you of an orange creamsicle treat.

Steps:
- Preheat oven to 350°F.
- In a large bowl using a hand-held mixer, beat butter, cream cheese, orange zest, and granulated sugar until blended.
- Add in egg, vanilla, orange extract, and the red and yellow food coloring.
- Add in flour, baking powder, and ½ cup confectioners' sugar. With the mixer on low, gradually beat into a creamed mixture.
- Using a 2-tablespoon cookie scoop, create balls and roll them in the remaining confectioners' sugar.
- Place on a parchment-lined baking sheet. Using your hands or the bottom of a drinking glass flatten balls into rounds. Place approximately 6 dough balls on each sheet.
- Bake until they no longer appear wet on top, 8-11 minutes. After about 5 minutes cooling on the pan (they will be soft), place on cooling racks to cool completely.

- Add remaining dry ingredients; mix well.
- Roll heaping tablespoons of dough into balls.
- Place 2 inches apart on a lightly greased baking sheet.
- Bake for 12-14 minutes or until tops are very lightly browned.
- Cool 5 minutes on sheet then transfer to wire racks to cool completely.

- Heat oven to 375°F. Make and bake drop cookies as directed on pouch. Cool completely, about 30 minutes.
- In food processor, process half of the cookies to coarse crumbs. Remove to medium bowl. Continue to process remaining cookies to coarse crumbs; add to bowl. Stir in melted butter until well blended. In ungreased 13x9-inch (3-quart) glass baking dish, press cookie crumb mixture firmly in bottom. Set aside.
- In small bowl, place gelatin, and add boiling water; beat with whisk until blended. Stir occasionally about 2 minutes or until mostly dissolved. In medium bowl, beat dry pudding mixes and milk with whisk about 2 minutes or until thick. Stir in dissolved gelatin. Let stand 5 minutes, stirring occasionally.
- In large bowl, beat cream cheese and powdered sugar with electric mixer on medium speed until smooth, scraping down side of bowl frequently. Beat in 2 cups of the whipped topping. Spread over cookie crust.
- Pour pudding mixture over cream cheese layer; spread evenly over top. Drop remaining whipped topping by spoonfuls over pudding layer; carefully spread until even. Refrigerate 5 hours.
- When ready to serve, sprinkle orange segments on top. Cut into 6 rows by 3 rows. Cover and refrigerate any remaining pieces.

- 1. Preheat oven to 350^. Sift together the first 3 ingredients in a large bowl . Set aside. In a large mixer bowl; beat together the butter, brown sugar, and granulated sugar until light and fluffy. Add dry instant pudding, then dry jell-O, mixing well. Add eggs and orange extract, mixing until well blended. Slowly add flour mixture, mixing well. Using a standard ice cream scoop(2 oz.) , or rounded Tablespoonful;drop dough onto an un-greased cookie sheet. For 2 oz. cookies, bake at 350^ for 16-18 minutes. For rounded Tablespoon- size cookies, bake 12-14 minutes.Cool on sheet one minute, then transfer cookies to wire rack to cool.
DREAMSICLE COOKIE MIX IN A JAR
Cookie mix in a quart jar for gift giving. Layer ingredients in a 1 quart wide mouth jar in order given. Press each layer firmly before adding next ingredient. Attach a card to jar with the recipe directions on it.

DREAMSICLE DESSERT
Steps:
- Mix gelatin mix with 1 cup boiling water till dissolved. Add 1 cup cold water plus 3 ice cubes and stir into the hot gelatin mix. Set aside 5 minutes to cool.
- Add the instant pudding to the gelatin mixture, stir for about 2 minutes and then let set for approximately 15 minutes to thicken. Fold in the mandarin oranges and Cool Whip.
- Refrigerate for approximately 30 minutes or can be frozen for a more ice cream like dessert.
