I love Russian potato pies. I altered this recipe from one by Linda Johnson on her cooking show titled "From Russia with Love." Enjoy!

Number Of Ingredients 15

1 cup warm water
1/4 cup margarine
1 teaspoon salt
1/4 cup powdered milk
1 tablespoon yeast
2 cups white flour
1/4 cup whole wheat flour
4 medium hot cooked potatoes
1/2 cup sour cream
1 1/2 teaspoons salt
1 teaspoon onion powder
1 medium onion, chopped in big pieces
1 1/2 tablespoons oil
margarine, to brush over top
sour cream, to your liking

Steps:

  • Mix together the warm water, margarine, salt and milk powder. Slowly stir the flour into the liquid ingredients until it makes a soft dough. Spray a medium-sized bowl with vegetable oil spray and place the dough in the bowl. Spray the top of the dough with vegetable oil spray. Cover and let rise in a warm place until double in size.
  • Divide the dough into 12 equal pieces. Let the dough rest for 5 - 10 minutes. Prepare filling by mixing all ingredients and stirring well. Roll out each piece of dough and put a couple of spoonfuls of filling in the middle of the dough. Add a little sour cream and roll the dough up like little loaves of bread.
  • Let the loaves rise until double in size. Bake at 350 degrees for 20 - 30 minutes. They should be golden brown. Place on a wire rack and brush a little margarine on top of each little loaf.
  • In a small skillet heat 1 1/2 Tbsp oil and saute onion a few minutes. Serve onion on top of the potato pies with a dollop of sour cream.

1 cup milk
1 orange, zested and juiced
2 ½ cups all-purpose flour, plus more for dusting pans
2 teaspoons baking powder
1 teaspoon baking soda
1 tablespoon ground allspice
1 tablespoon ground cinnamon
½ teaspoon sea salt
2 cups white sugar
1 cup salted butter, at room temperature
½ cup brown sugar
3 eggs, lightly beaten
2 ½ cups cooked, mashed sweet potatoes
1 tablespoon almond extract

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease and flour two 9-inch round cake pans; line bottoms with greased parchment paper.
  • Combine milk and 2 tablespoons orange juice in a bowl; set aside at room temperature for at least 10 minutes.
  • Mix orange zest, flour, baking powder, baking soda, allspice, cinnamon, and sea salt together in a bowl.
  • Beat white sugar, butter, and brown sugar together in a large bowl using an electric mixer on high speed until creamy. Reduce speed to low; slowly add 1/3 of the beaten eggs and mix until well incorporated. Repeat process until all eggs are added. Add sweet potatoes and almond extract; mix until smooth.
  • Stir flour mixture into butter mixture 1/3 at a time, alternating with milk-juice mixture. Beat on low speed until just incorporated. Divide batter evenly between prepared pans.
  • Bake in the preheated oven until a toothpick inserted in the center comes out clean, 35 to 45 minutes. Cool in pans for 10 minutes; invert onto rack to cool completely, about 15 minutes.

Of all the Southern sweet potato pie recipes that I've tried, this has got to be my favorite! I'm not the biggest fan of sweet potatoes, but the spices in this recipe makes the pie taste amazing!

2 sweet potatoes, peeled and cut into chunks
1 (9 inch) refrigerated pie crust
1 cup white sugar
2 eggs, beaten
2 tablespoons butter
1 teaspoon vanilla extract
1 tablespoon all-purpose flour
1 teaspoon pumpkin pie spice
½ teaspoon salt
½ cup buttermilk
¼ teaspoon baking soda

Steps:

  • Place sweet potatoes into a large pot and cover with water; bring to a boil. Reduce heat to medium-low and simmer until tender, 10 to 15 minutes. Drain well and let cool.
  • Preheat oven to 350 degrees F (175 degrees C). Line the bottom of a pie plate with pie crust.
  • Mash sweet potatoes with a potato masher or fork. Measure 2 cups of the mash into a large bowl. Mix in sugar eggs, butter, and vanilla extract.
  • Mix flour, pumpkin pie spice, and salt together in a separate bowl. Add to the sweet potato mixture.
  • Combine buttermilk and baking soda in a small bowl. Add to the sweet potato-flour mixture. Stir batter well; pour into the prepared crust.
  • Bake in the preheated oven until set, about 1 hour 10 minutes. Let cool on rack until firm, at least 20 minutes.

My mom recently asked me for this recipe, and I thought I'd post it here. (The reason she asked me for it, is because I took her copy of "The Vegetarian Epicure" when I left for college 15 years ago!) This is a satisfying winter meal. The kind for vegetarians to serve to skeptical omnivores. While I haven't tried it, I think this would make a good vegan recipe with the sub of Earth Balance for butter, and silken tofu (maybe with a little curry or turmeric mixed in?) replacing the layer of cream cheese.

1 1/4 cups flour
1 teaspoon sugar
1 teaspoon salt
4 ounces softened cream cheese
3 tablespoons butter
1 small head cabbage (about 3 cups shredded)
1/2 lb mushroom
1 yellow onion
marjoram, basil, tarragon, salt and fresh ground pepper
3 tablespoons butter
4 ounces softened cream cheese
4 -5 hard-boiled eggs
dill

Steps:

  • Make a pastry by sifting together the dry ingredients, cutting in the butter and working it together with the cream cheese.
  • Roll out 2/3 of the pastry and line a 9-inch pie dish.
  • Roll out the remaing pastry and make a circle large enough to cover the dish.
  • Put it away to chill.
  • Preheat oven to 400.
  • Shred a small head of cabbage coarsely.
  • Wash the mushrooms and slice them.
  • Peel and chop the onion.
  • In a large skillet, melt 2 tbs butter.
  • Add onion and cabbage. Sauté for several minutes, stirring constantly.
  • Add at least 1/8 tsp each of marjoram, tarragon and basil (all crushed) and some salt and pepper.
  • Stirring often allow the mixture to cook until the cabbage is wilted and the onions soft. Remove from the pan and set aside.
  • Add another tbs of butter to the pan, and sauté the mushrooms lightly for about 5 or 6 minutes, stirring constantly.
  • Spread the cream cheese in the bottom of the pie shell.
  • Slice the eggs and arrange the slices in a layer over the cheese.
  • Sprinkle them with a little chopped dill, then cover them with the cabbage.
  • Make a final layer of the sautéed mushrooms and cover with the circle of pastry.
  • Press the pastry together tightly at the edges and flute them.
  • With a sharp knife, cut a few short slashes through the top crust.
  • Bake in a 400 degree oven for 15 mintues, then turn the temperature down to 350 degrees and continue baking for another 20-25 minutes or until the crust is light brown.

2 lb. russet potatoes, peeled, cut into 2" pieces
1 tsp. kosher salt, divided, plus more
4 Tbsp. unsalted butter, divided
1 head of Savoy cabbage
3 thick-cut bacon slices (about 3 oz.), finely chopped
½ onion, thinly sliced
2 Tbsp. apple cider vinegar
1 tsp. thyme leaves
1 tsp. freshly ground black pepper
2 large eggs
¾ cup heavy cream
1¼ cups coarsely shredded sharp cheddar, preferably Irish

Steps:

  • Preheat oven to 400°F. Place potatoes in a medium pot, pour in cold water to cover, and season with salt. Bring to a boil; reduce heat to low and cook until potatoes are fork-tender, 20-25 minutes. Drain and return potatoes to pot; add 2 Tbsp. butter.
  • Meanwhile, trim very base of cabbage, then pull off outer leaves, being careful not to tear them, until you have 10 total. Cut out any tough ribs; discard. Cook leaves in a large pot of boiling salted water until tender, about 8 minutes. Transfer to a bowl of ice water and let cool. Transfer to clean kitchen towels and pat dry. Thinly slice remaining cabbage.
  • Cook bacon in a 10"-diameter ovenproof skillet, preferably cast-iron, over medium, stirring occasionally, until bacon is beginning to crisp, about 6 minutes. Add sliced cabbage and onion and cook, stirring occasionally, until tender and starting to caramelize (vegetables will be golden brown), 20-25 minutes. Add vinegar, scraping up browned bits, then mix in thyme, pepper, and ½ tsp. salt. Remove from heat.
  • Mash potatoes with a potato masher until soft. Whisk eggs and cream in a small bowl, then add to potatoes and mash to combine. Add bacon mixture, cheese, and ½ tsp. salt and mix well. Taste and add more salt if needed. Wipe out and reserve skillet.
  • Break up 1 Tbsp. butter into smaller pieces and dot around reserved skillet. Line with a single layer of cabbage leaves, overlapping slightly and allowing them to hang over edges of skillet. Scrape in potato mixture and spread out to the edges, flattening out evenly with a rubber spatula. Fold overhanging leaves up and over filling and top with more cabbage leaves, overlapping them slightly to create a single layer. Break up remaining 1 Tbsp. butter and dot over top.
  • Roast cabbage pie until lightly browned, 30-35 minutes. Let cool 10 minutes before cutting into wedges.
