We got this from my step-son. His step-dad makes this at home for him. We tried it and love it. You could add lots of things to this like cheese, onions, peppers, or even hot sauce, but we think it's great as is. (My husband adds ketchup, but he does that to all of his eggs, ick!) I have tried omitting the step of pre-crisping the tortillas strips (in order to save on fat and calories) and it just wasn't the same. The small amount of fat and time in this step makes all the difference in taste.

Time 15m

Yield 4 serving(s)

Number Of Ingredients 3

3 corn tortillas
8 eggs
1 tablespoon canola oil

Steps:

  • Heat oil in medium skillet.
  • Cut tortillas into thin strips. Add to oil and saute' til crispy.
  • While those are cooking break all eggs into bowl and whisk.
  • Add scrambled eggs to crispy tortilla strips and cook until desired done-ness. I like mine a little soft, but hubby likes em cooked til dry, must be why he needs the ketchup ;).

MEXICAN-STYLE BEANS AND EGGS

Mexican-Style Beans and Eggs image

Provided by Food Network

Categories     main-dish

Time 25m

Yield 4 servings

Number Of Ingredients 17

1 cup whole peeled tomatoes
1/2 cup chicken stock
1/4 small yellow onion
2 small cloves garlic, peeled
1 chipotle chile in adobo
4 teaspoons ground cumin
2 tablespoons vegetable or olive oil
Two 14-ounce cans of pinto or black beans, with liquid
4 large eggs
Salt, to taste
Lime juice, to taste
Lime wedges
Cotija, crumbled
Avocado, peeled and sliced
Cilantro leaves, roughly chopped
Jalapeno, finely chopped
White onion, finely chopped

Steps:

  • In a blender, finely puree the tomatoes, stock, onion, garlic, chile and cumin until smooth.
  • Heat the oil in a large nonstick pan set over medium-high heat. Once hot, pour contents of the blender into the pan and season lightly with salt. Simmer until the sauce reduces by half, about 3 minutes. Stir the beans and their liquid into sauce. Cook until the sauce simmers and thickens slightly, about 2 minutes.
  • Crack the eggs into pan, leaving enough space between each egg so they do not touch the sides of the pan or each other. Reduce the heat to medium-low, so the sauce barely simmers, and cover pan. Continue to gently cook until the whites are set but the yolks remain runny, about 4 more minutes. Serve with the garnishes of your choosing.

I often eat this beloved Mexican breakfast dish for dinner. Serve the eggs with warm corn tortillas.

Provided by Martha Rose Shulman

Categories     breakfast, dinner, easy, quick, weekday, main course

Time 20m

Yield Serves four

Number Of Ingredients 8

1 tablespoon canola oil
1 small white onion, finely chopped
2 to 3 serrano or jalapeño chilies, minced (more to taste, seeded if desired)
1 garlic clove, minced
3/4 pound tomatoes, cut into small dice, or 3/4 of a 14-ounce can, drained
3 to 4 tablespoons chopped cilantro
Salt to taste
6 to 8 large eggs

Steps:

  • Heat the oil over medium heat in a large, heavy nonstick skillet. Add the onion. Cook, stirring, for about three minutes until just tender. Turn the heat to medium-high, and add the chilies, garlic, tomatoes and half the cilantro. The mixture should sear in the pan. Cook, stirring often, until the tomatoes have cooked down and the mixture is lightly browned, five to eight minutes. Season to taste with salt, and turn the heat down to medium. The tomatoes should not be watery.
  • Beat the eggs in a medium bowl, and add salt to taste and the remaining cilantro. Add to the pan and cook, stirring every few seconds to create large curds, until the eggs are scrambled. Taste, adjust seasoning and serve.

MEXICAN-STYLE SCRAMBLED EGGS

Mexican-Style Scrambled Eggs image

In traditional Mexican cooking, this dish is known as Migas. Typically consisting of eggs, day-old tortillas, onions, garlic, and chiles, it's an inexpensive and easy way to feed a crowd. Make sure to use baked rather than fried tortilla chips, because they are far less greasy.

Provided by Vicki Butts (lazyme) @lazyme5909

Categories     Eggs

Number Of Ingredients 9

6 large eggs, lightly beaten
1 cup(s) baked tortilla chips, broken into 1/2-inch pieces
1/4 teaspoon(s) salt
1/8 teaspoon(s) pepper
2 tablespoon(s) unsalted butter
1 onion, chopped medium
2 garlic cloves, minced
1 jallapeno, stemmed, seeded, minced
2 ounce(s) pepper jack cheese, shredded (1/2 cup)

Steps:

  • Whisk together the eggs, tortilla chips, salt, and pepper.
  • Melt the butter in a 10-inch nonstick skillet over medium-high heat, swirling to coat the pan. Add the onion, red pepper, garlic, and jalapeno and cook until softened, about 5 minutes.
  • Add the eggs and cook while gently pushing, lifting, and folding them from one side of the pan to the other until they are nicely clumped, shiny, and wet, about 2 minutes.
