This Raspberry Jello Salad could not be easier to make, and it looks so beautifully bright and festive on a holiday table.

Steps:
- Pour raspberry gelatin into the bottom of a 9 by 13 inch baking dish. Pour boiling water over the gelatin, and stir to dissolve.
- Add applesauce and stir.
- Carefully add frozen raspberries, and press them down in an even layer.
- Cover and refrigerate, 2 hours or until set.
- An hour or two before serving, stir sour cream and mini marshmallows together and spread over the set raspberries. Cover and refrigerate until ready to serve.

RASPBERRY CREAM CHEESE JELLO SALAD
Steps:
- Open can of pears and drain 1 cup of the pear juice into a bowl. Set bowl aside and throw away the rest of the juice.
- Add 1 cup of water to pear juice and microwave the liquid for 2-3 minutes or until water is boiling.
- Add box of raspberry jello to the boiling liquid and stir until all jello has dissolved. Set bowl in fridge and allow it to cool for about 7-10 minutes (you don't want the jello to set, you just want it to cool down).
- Dump pears and softened cream cheese into a large blender. Add in cooled jello and Cool Whip. Blend until completely combined.
- Pour jello into 9 x 13 inch pan and set in the fridge until jello is completely set (should take 3-4 hours - you could also let it set up overnight).
- Serve topped with whipped cream and fresh raspberries.

- In a saucepan, bring water to a boil. Whisk in pudding mixes and jello. Return to a boil, stirring constantly, and boil for 1 minute. Remove from the heat, pour into a container, and cool completely.
- Refrigerate jello mixture for several hours or overnight. Gently fold in cool whip and raspberries, being careful not to stir to vigorously. Keep refrigerated until ready to eat.

- Mix strawberry jello with 1 1/2 cup hot water until dissolved.
- Stir in 1 cup whole cranberries and can crushed pineapple.
- Pour into large jello ring mold (*see note above), refrigerate until set.
- Spread with a thin layer of sour cream, let set.
- Mix raspberry jello with 1 1/2 cup hot water until dissolved.
- Stir in frozen raspberries.
- Slowly pour (or spoon) raspberry jello mixture on top of sour cream layer. refrigerate until set.

- Mix together pudding, Jell-o, water, and lemon juice in saucepan over medium heat until it boils.
- Once it comes to a full rolling boil, remove from heat and pour into large bowl.

- Preheat oven to 400°F. Butter a 9x13" pan and set aside. Crush pretzels in a food processor or blender and then stir in melted butter and sugar until combined. Press evenly into pan and bake for 8-10 minutes. Refrigerate for 30 minutes or until cool.
- In a medium size bowl, beat the cream cheese with an electric mixer. Mix in sugar and then stir in cool whip.
- Drop about 8 spoonful's over the top and carefully spread out on top of pretzel crust. Make sure to go all the way to the edges so the jello mixture doesn't leak through. You can use your finger with a paper towel to run along the edges to make them clean lines. Refrigerate for about 1 hour, or until set.
- Boil water in a small pan with jello over medium high heat. Stir until the sugar is dissolved (about 2 minutes). Then remove from the heat and mix in the frozen raspberries. Let sit for about 5-10 minutes and allow to thicken slightly. Once the pot is cool enough to handle I like to put it in the refrigerator for 10-15. Once it has thickened slightly pour on top of cream cheese mixture and refrigerate until jello is firm, at least 2 hours (I like to leave overnight).
- Once the dessert is firm, slice and serve.

- Preheat oven to 350*F.
- In a bowl combine pretzels, ¼ cup white sugar and butter. Mix well.
- Spread on the bottom of a 9x13 casserole dish and press down to create a tight crust.
- Bake for 10 minutes then remove from the oven and cool completely.
- Once the crust is cooled, make cream cheese layer.
- In a bowl blend 1 cup sugar, cream cheese and vanilla together.
- FOLD in the cool whip.

- Add raspberries and mix until raspberries are thawed.
- Mixture should begin to thicken as the frozen berries will quickly bring the temperature down. When the mixture is egg white consistency (thick, but soupy) (about 10 minutes) pour over the cream cheese layer.
- Chill completely then serve.

Raspberry cranberry jello salad is a classic holiday dish that can be made in advance and refrigerated until you're ready to serve it. The recipe will take you 10-15 minutes to make, but the finished product is worth the time investment.

- Empty the jello packets into a large mixing bowl. Pour over 2 cups of boiling water. Stir with a whisk for two minutes until completely dissolved.
- Stir in *HALF* of the pink lemonade can (if using a 12 oz size) and the softened vanilla ice cream. The ice cream will melt and distribute evenly.
- Next stir in the cranberry sauce. It will also break apart and un-gel in the warm jello mixture.
- Follow this by folding in the raspberries. You may need to change from a whisk to a large spoon at this point.
- Spray the bundt pan or chosen dish well with nonstick cooking spray. We found a six cup capacity pan worked the best, with a little extra jello mixture left over. You can place any extra in smaller bowls also sprayed with nonstick spray.
- If using a flexible mold you should place it on a plate. Since it's not rigid it moves around a lot when trying to move from counter to the fridge!
- Pour or scoop in the jello mixture into the containers.
- Cover with cling film to avoid the jello absorbing any odors from your refrigerator. Sometimes Saran Wrap doesn't stick well and you may have to place aluminum foil on top of it to get a nice seal.
- Allow to set in the refrigerator for at least an hour. I like to go for 2 to 3. Overnight is great too!
- Once the jello is set, place in a warm water bath for 10 seconds to help loosen the edges. Invert on a plate. If it doesn't slide out, maintain a firm grip on both the plate and the back of the bundt pan and shake vigorously. You may have to repeat the water bath. See notes in the post for more information on this.
- Once on the platter, garnish as you desire. Use nuts, whipped cream, berries and fresh herbs like mint.
