YOGURT AND OLIVE OIL BECHAMEL



Yogurt and Olive Oil Bechamel image

This is a contemporary version of the classic bechamel from a gifted Greek cook Aglaia Kremezi. I couldn't wait to try this. Even my hubby thought it was good, which is about all I can get out of him when he has to eat yogurt. I love the touch of Gruyere cheese, but you may leave it out or add in your favorite cheese.

Number Of Ingredients 7

4 tablespoons olive oil
4 tablespoons all-purpose flour
2 cups whole cold milk
1 cup whole-milk yogurt
2/3 cup grated gruyere cheese
sea salt, to taste
1 pinch ground black pepper or 1 pinch white pepper

Steps:

  • Whisk the olive oil and the flour together in a saucepan over medium heat. Continue to whisk for about a minute until the mixture starts to froth. Remove from the heat, whisk for a couple of minutes, then pour in the cold milk, while continuing to whisk. Now whisk in the yogurt.
  • Set the saucepan over the heat and, whisking, bring to a boil to thicken. The mixture may look curdled, but don't worry about it, it'll smooth out once it is boiled and thickened.
  • Stir in the grated Gruyere cheese; add in the salt to taste, and the pepper.

Here, a classic French sauce, revisited. Make sure the milk is cold or at room temperature. If the liquid is too hot, the roux won't have time to properly disperse in the liquid before the mixture comes to a boil; this is what causes sauces to lump. The main thing to watch for here is scorching. Stir often with a rubber spatula, especially at the bottom and edges of the pan, so that the mixture doesn't stick and begin to burn. If it does, immediately pour the sauce into another pot and continue to cook over very low heat.

2 tablespoons extra virgin olive oil
2 tablespoons finely chopped shallot or onion (optional)
2 tablespoons flour
2 cups low-fat (1 percent) milk
Salt to taste
Freshly ground white or black pepper

Steps:

  • Heat the oil over medium heat in a heavy medium saucepan. Add the shallot or onion, and cook, stirring, until softened, about three minutes. Stir in flour, and cook, stirring, for about three minutes until smooth and bubbling but not browned. The paste should have the texture of wet sand. Whisk in the milk all at once, and bring to a simmer, whisking all the while, until the mixture begins to thicken. Turn the heat to very low, and simmer, stirring often with a whisk and scraping the bottom and edges of the pan with a rubber spatula, for 10 minutes, until the sauce has thickened and lost its raw flour taste. Season with salt and pepper. Strain while hot into a heatproof bowl or a Pyrex measuring cup.

  • Melt the butter in a medium saucepan. Stir in the flour until a paste forms. Remove the pan from the heat and whisk in the cream. Set the saucepan over moderately high heat and whisk in the milk.
  • Add the half-onion, bay leaf and cloves to the sauce and simmer over moderately low heat, whisking often, for 12 minutes. Remove from the heat, whisking occasionally until just warm.
  • Preheat the oven to 500°. Soak the currants in warm water. Set a colander over a large bowl.
  • In a large, deep skillet, heat 2 tablespoons of the oil. Add the beef and lamb and cook over moderately high heat, breaking up the meat, until it begins to brown, 5 minutes.
  • Heat 2 tablespoons of the oil in the skillet. Add the garlic and diced onions and cook over moderate heat, stirring occasionally, until softened, about 6 minutes.
  • Arrange the eggplant slices on 2 large, rimmed baking sheets. Brush both sides of the eggplant with olive oil, season with salt and pepper and bake on the upper and lower racks of the oven for 10 minutes, or until tender.
  • In a medium skillet, heat the remaining 2 tablespoons of oil. Add the diced bell peppers and cook over moderate heat, stirring occasionally, until softened, about 7 minutes.
  • Arrange the eggplant in a 10-by-17-by-2-inch oval baking dish. Spread the bell peppers and meat filling over the eggplant. Spread the béchamel sauce over the meat and sprinkle the cheese on top.
