BACON-WATERCRESS SALAD

Bacon-Watercress Salad image

Provided by Food Network Kitchen

Time 35m

Yield 4 servings

Number Of Ingredients 14

6 slices bacon
3 oranges
1 clove garlic, coarsely chopped
Kosher salt
2 tablespoons red wine vinegar
Freshly ground pepper
1/3 cup extra-virgin olive oil
1 medium bunch watercress, tough stems removed
1 cup fresh parsley leaves
1 small head escarole, outer leaves removed, torn
1/3 cup roughly chopped toasted hazelnuts
1/3 cup roughly chopped dried dates
1/3 cup crumbled blue cheese
Toasted cornbread, for serving (optional)

Steps:

  • Cook the bacon in a large skillet over medium-high heat until crisp, 8 to 10 minutes. Transfer to a paper towel-lined plate to drain.
  • Meanwhile, segment the oranges: Cut the ends off, then cut away the peel and white pith. Working over a bowl, cut along both sides of each membrane with a paring knife to remove the segments, allowing them to drop into the bowl. Discard any seeds.
  • Put the garlic on a cutting board and sprinkle with 1/4 teaspoon salt, then mash into a paste with the flat side of a large knife. Whisk the vinegar and garlic paste in a large bowl and season with salt and pepper, then whisk in the olive oil. Add the watercress, parsley and escarole and toss to coat. Divide the salad among plates and crumble the bacon on top. Sprinkle with the oranges, hazelnuts, dates and blue cheese. Serve with cornbread, if desired.

GNOCCHI WITH TOMATOES, PANCETTA & WILTED WATERCRESS

Gnocchi With Tomatoes, Pancetta & Wilted Watercress image

"We use just a touch of pancetta-cured Italian-style bacon-to balance the sweet tomatoes and peppery watercress. Make it a meal: A salad tossed with a red-wine vinaigrette completes dinner. We like the texture of 'shelf-stable' prepared gnocchi found in the Italian section of most supermarkets, but frozen and fresh refrigerated gnocchi also work well here." EatingWell, June 2007.

Provided by Manami

Categories     Cheese

Time 30m

Yield 4 serving(s)

Number Of Ingredients 10

2 ounces pancetta, chopped (sliced thin)
3 garlic cloves, minced
2 large tomatoes, chopped
1/2 teaspoon sugar
1/4 teaspoon crushed red pepper flakes
2 teaspoons red wine vinegar
1/4 teaspoon salt
1 lb gnocchi
4 ounces watercress, tough stems removed, coarsely chopped (6 cups packed)

  • Stir in vinegar and salt.

WATERCRESS SALAD - YOGITRITION
Always buy a watercress that is fresh and crisp with dark green leaves for salads. Avoid wilted or discolored leaves since this means the watercress is beginning to go off. Don’t sprinkle too much dressing on the vegetables – this will make the salad soggy and watery. Avoid adding any hard stems or roots to the salad. Always serve fresh.
