WILTED GREENS WITH BACON VINAIGRETTE
Steps:
- Place romaine in a serving bowl. In a skillet over medium heat, cook bacon until crispy. Remove bacon and crumble over greens. To the pan, add sugar and vinegar, and simmer until sugar is dissolved, scraping up bacon bits that cling to the bottom of the pan. Season with salt and pepper, to taste. Pour hot dressing over greens and toss. Serve immediately.
WILTED CURLY ENDIVE
This is from TOH. Mmmmm... I love my greens! I have some homemade cider vinegar to use for this one. Escarole, kale or other dark greens would work as well.

- Cook bacon until crisp; remove witha slotted spoon to paper towels to drain.
- Reserve 3 tablespoons of the drippins. Cut or tear endive from center stalk. Discard the stalks.
- In a large saucepan, bring water and 1 1/2 teaspoons of salt to a boil. Add endive; cover and cook for 3 minutes. Drain.
- Stir in bacon, reserved drippings, vinegar, onion, pepper and remaining salt. Mix well and serve immediately.

- In a large salad bowl, toss together both endives and the onion. Sprinkle with the vinegar, oil and salt and toss again. If a little more oil or vinegar is needed, do so in small increments and taste as you go. The salad should be well seasoned and dressed but not soggy.
- Voila!

- Toss greens together, then divide into 2 batches.

Add onion to drippings in pot and sauté until beginning to soften, about 4 minutes. Add half of endive with water still clinging to leaves. Cover pot and cook until endive is wilted, stirring once, about 4 minutes. Add remaining half of endive and chopped garlic. Cover and cook until endive leaves are wilted but still bright green, stirring once, about 4 minutes. Add cannellini, beef broth, and bacon. Cook bean mixture until heated through, stirring often, about 5 minutes. Season to taste with salt and pepper.

- Combine sugar and flour in small bowl. Gradually whisk in vinegar, then egg. Whisk in broth.
- Cook bacon in heavy large skillet over medium heat until crisp and brown. Whisk in vinegar mixture. Stir until dressing comes to simmer and thickens. Season dressing to taste with salt and pepper. (Can be prepared 1 hour ahead. Let stand at room temperature. Rewarm over low heat before continuing.)
- Place endive in large bowl. Toss with enough dressing to coat. Serve, passing remaining dressing separately.
