Wild rice seems to add elegance to any dish or meal, but I find that many people prefer it to be mixed with brown rice to vary the taste. Little hands on time makes this a great addition to any meal.

1 Cup Brown Rice
1/2 Cup Wild Rice
3 Cups Chicken Broth (Low sodium preferred)
1 teaspoon Kosher Salt
1 Large Shallot (Minced)
1/4 teaspoon Garlic Powder
1/4 teaspoon Onion Powder
1/2 teaspoon Ground Cumin
1/2 Cup Toasted Pecans (or pistachios, chopped)
2 Whole Green Onions (Sliced, green and white parts)
3 Tablespoons Unsalted Butter

Steps:

  • In skillet or saucepan add both rices, chicken broth and salt, bring to a boil. Reduce heat to low and cover. Simmer for 30 minutes.
  • Meanwhile mince the shallot. Combine the spices of garlic powder, onion powder and cumin. At 30 minutes stir the spice mixture and shallot into the rice and quickly return the cover so as to not let too much steam out.
  • Continue to cook for 10-15 minutes more or until the broth is mostly absorbed. Remove from heat, leave the lid on and let it continue to steam for 10 minutes.
  • Fluff and add chopped toasted pecans (or pistachios), green onions (reserve some green onions to top dish at the very end, just for looks) and butter. Mix and then add salt and pepper to taste.

Steps:

  • Cook and stir in brown rice, wild rice, onion and celery in margarine until onion is tender.
  • Stir in mushrooms, sage, marjoram, thyme and stock.
  • Heat to boiling, stirring occasionally.
  • Pour into ungreased 1 1/2-quart casserole.
  • Cover tightly.
  • Bake in 350-degree oven until all liquid is absorbed, about 1 hour.

Steps:

  • In small bowl, blend all seasoning ingredients. Set aside.
  • In medium saucepan, bring water to a boil.
  • Add margarine, brown rice & wild rice, and reduce heat. Cover & simmer 30 minutes.
  • Water should be about half absorbed and brown rice beginning to soften.
  • Stir in seasoning mix. Simmer additional 20-30 minutes.
  • Let sit, still covered, 10 minutes.
  • Mix in fresh parsley and fluff with fork before serving.

1 Tbsp canola oil
1 small onion (diced)
1 carrot (chopped in small dices)
1 celery (chopped in small dices)
4 mushrooms (chopped in small dices)
2 cloves garlic (minced)
1 cup brown rice (washed and rinsed)
1/2 cup wild rice (washed and rinsed)
1 tsp Italian Seasoning
4 cups soup stock or water
2 tbsp chopped parsley (fresh or frozen)

Steps:

  • Heat canola oil over medium heat in a heavy-bottomed pot with a tight-fitting lid.
  • Add the onion, carrot and celery and saute until soft, about 5 minutes.
  • Add mushrooms and garlic and saute for 2-3 minutes.
  • Stir in brown rice, wild rice and seasoning being sure to coat in oil. Allow to cook for 1 to 2 minutes until spices start smelling fragrant.
  • Stir in stock or water and scrape up any browned bits.
  • Bring to a boil then reduce to a simmer and cook, covered until the rice is tender, about 50 minutes. Do not peek or stir!
  • After 50 minutes test the rice. If the rice is still wet and not yet cooked,recover and cook in ten minute increments until done. If the rice is dry but not done, add a bit of water and cook for another 10 minutes.
  • Add parsley and toss gently with a fork. Allow to rest for 5 minutes before serving.

I created this a few years ago at Thanksgiving as substitute for stuffing for the vegetarians. The whole family has adopted it, as we do not cook a whole turkey anymore, just a turkey breast. I suppose it probably could be used to stuff a turkey. It is a bit of trouble to cook the two rices and the vegetable mixture in separate pans, but I find that the taste and texture turns out much better than when I've tried to cook them together.

1/2 cup wild rice
2 cups brown rice (brown jasmine rice is great)
4 1/2 cups vegetable broth or 4 1/2 cups chicken broth
3 -5 leaves fresh sage, finely chopped
1/3-1/2 cup chopped fresh parsley
salt, to taste
pepper, to taste
2 tablespoons olive oil
1 onion, chopped (or 3/4 onion and one shallot)
3 stalks celery, sliced
5 mushrooms, sliced
1 clove minced garlic (optional)

Steps:

  • Boil wild rice in two cups water about 50 minutes until tender.
  • Meanwhile, place brown rice and 4 cups broth in another pot and bring to a boil, then reduce to low heat, cover, and cook for 50 minutes or until done.
  • Pour the olive oil into a sauté pan.
  • When it is hot, add the onion, celery, and mushrooms, and cook for about 5 minutes.
  • Add the parsley and sage, garlic if using, and a sprinkling of salt and pepper, then continue cooking until vegetables are soft.
  • Mix both rices and vegetable mixture, add a bit more vegetable broth if it is too dry, reheat if necessary, and serve.

1 1/2 cups wild rice
3/4 cup short grain brown rice
6 cups chicken broth
kosher salt & freshly ground black pepper

1 onion, minced
1 cup celery, diced

2 apples, cored and cut into 1/2-inch dice
1/3 cup pecans, lightly toasted pecans coarsely chopped

Steps:

  • In a large saucepan, simmer the wild rice in 4 1/2 cups broth, salt to taste, until the grains start to break open; drain off any liquid, return to the pot and stretch a clean kitchen towel beneath the lid and let sit 10 to 15 minutes.
  • Meanwhile, in a smaller saucepan, simmer the brown rice, with 1 1/2 cups broth, salt, until tender and all the liquid has been absorbed, 35 to 40 minutes; turn off heat and stretch a clean kitchen towel under the lid and let sit 10 to 15 minutes.
  • In a large skillet, heat oil, over medium heat, and cook the onion, stirring often, until it begins to soften, about 3 minutes.
  • Add celery and a generous pinch of salt, and continue cooking another 3 or 4 minutes; stir in garlic, if using, and cook 30 seconds.
  • Remove from heat and transfer to a large bowl; add rices and toss well.
  • Increase the heat in the skillet to medium high and add the butter; when the foaming subsides, add apple, stirring until they begin to caramelize, about 5 minutes.
  • Remove from heat and add to the rice mixture; add remaining ingredients, toss and season to taste with salt and pepper.
  • Preheat oven to 325 degrees F; grease a large baking dish with butter or oil.
  • Transfer rice mixture to baking dish, cover with aluminum foil, and warm in oven for 20 to 30 minutes.
  • NOTE: The rices can be cooked up to 3 days in advance. The entire dish is better the second day, so you can make it a day ahead and heat the day you are serving it.

  • 1. Plump the cranberries in the wine for about 20 minutes. Drain the cranberries and reserve the liquid.
  • 2. To make the brown rice, sweat the onions in the reserved cranberry liquid until the onions are translucent. Add the brown rice and stock. Bring the liquid to a boil and cover the pot tightly. Cook in a 350°F(175°C) oven until the rice is tender and has absorbed all the liquid, about 40 minutes.
  • 3. To prepare the wild rice, bring the apple cider, stock and wild rice to a boil in a medium sauce pot. cover the pot tightly, and cook in a 350°F(175°C) oven until the rice is tender and has absorbed all the liquid, about 90 minutes.
  • 4. Place the unpeeled shallots on a bed of coarse salt in a 375°F(190°C) oven until the exterior is very crisp about 20 minutes. Allow the shallots to cool. Remove the skin and shred the flesh.
  • 5. Combine both rices and the plumped cranberries. Garnish with the roasted shallots.

1/2 onion, diced

5 cups low-sodium chicken broth
