Try this Authentic Shish Tawook recipe - a popular Lebanese grilled chicken skewers recipe. It's tender juicy chicken marinated in yogurt, lemon and garlic.

2 pounds boneless skinless chicken breast (cut into large chunks)
½ cup plain whole milk yogurt
¼ cup lemon juice
¼ cup olive oil
6 garlic cloves (crushed)
1 tablespoon tomato paste
1 teaspoon paprika
¾ teaspoon cinnamon
½ teaspoon oregano
½ teaspoon ground ginger
1 teaspoon salt
¼ teaspoon black pepper

Steps:

  • In a large bowl, add the ingredients for the marinade (yogurt, lemon juice, olive oil, garlic, tomato paste, all the seasoning and salt/pepper) and whisk to combine.
  • Place the chicken cubes in the same bowl and coat the chicken in the marinade. Cover, and let rest/marinate in the fridge for at least 4 hours.
  • Thread the chicken on skewers right before grilling. Add one wedge of onions to each skewer, if desired.
  • Grill on medium heat for 5-8 minutes per side.
  • Serve with pita bread, lettuce and garlic sauce, if desired.

Grilled, marinated, Mediterranean-style chicken. This recipe was inspired by the Lebanese restaurant for which I used to work. Its flavor is so unique and outside the box and will have everyone trying to guess the ingredients because its flavor is so mouth watering! Goes great with a plain or bland rice pilaf. Also fatoosh or tabbouleh salad goes well with it as a side. You'll need metal skewers or a grilling basket (I prefer the basket).

6 skinless, boneless chicken breast halves
salt to taste
8 large cloves garlic, chopped, or more to taste
½ cup olive oil
2 tablespoons apple cider vinegar, or more to taste
2 tablespoons red wine vinegar, or more to taste
2 tablespoons white balsamic vinegar, or more to taste
2 tablespoons lemon juice, or more to taste
1 tablespoon red pepper flakes
1 tablespoon ground allspice

⅛ teaspoon pomegranate syrup

Steps:

  • Season chicken breasts with salt. Cut each breast into 3 to 4 pieces. Place in a large bowl; stir in garlic. Add olive oil, apple cider vinegar, red wine vinegar, white balsamic vinegar, lemon juice, red pepper flakes, allspice, sumac, and pomegranate syrup. Mix well with your hands.
  • Cover chicken mixture with plastic wrap, pressing against the surface to remove any air. Refrigerate for at least 4 hours and up to overnight.
  • Preheat an outdoor grill and 2 grill baskets with the cover closed for 10 minutes. Divide chicken evenly between the grill baskets. Grill until golden brown, 10 to 15 minutes per side.

¼ cup vegetable oil
¾ cup plain yogurt

  • Preheat an outdoor grill for medium-high heat and lightly oil grate. Thread the chicken, onions, and pepper onto metal skewers. Cook on preheated grill until the chicken is golden and no longer pink in the center, about 5 minutes each side. Sprinkle the parsley over the skewers.

2 lbs boneless chicken breast (cut into cubes/Kabab chunks)
1 cup lemon juice
slice lemon (optional)
15 cloves garlic (crushed)
6 tablespoons plain yogurt
6 tablespoons olive oil
2 tablespoons red vinegar (or apple cider vinegar)
1 teaspoon white pepper (ground)
1/3 teaspoon ground ginger
1/2 teaspoon ground thyme (or ground oregano)
1/3 teaspoon paprika
1 teaspoon salt (or to taste)
1 teaspoon tomato paste
4 teaspoons Garlic Paste (Lebanese style)
4 loafs pita bread
4 tomatoes (grilled)
2 cups French fries
8 salted pickles (Lebanese style cucumber pickles)

Steps:

  • Cut the chicken breasts into cubes of about 2 inches each. The cubes shouldn't be too small otherwise they'll dry quickly on the grill.
  • Place chicken cubes in a bowl, add all marinade ingredients and rub with hands until all ingredients assimilated well.
  • Let marinate in a covered container in the fridge for at least 4 hours, preferably overnight.
  • Skewer the chicken right before grilling.
  • Grill on a BBQ on medium heat for 12-15 minutes maximum turning frequently. Overcooking can dry the chicken.
  • Alternatively, you can lay the skewers on the edges of a deep Pyrex dish and bake in the oven at 400F for 15 mins.
  • Once cooked, remove the chicken cubes and place in a pot while covering the lid tightly. Let rest for 5 minutes to help the chicken self-steam and turn juicier and softer.
  • Spread 1 teaspoon of Lebanese garlic paste along the center/diameter of a pita bread.
  • Add 4-5 chicken kabobs.
  • Garnish with salted cucumber pickles, French fries, grilled tomatoes or peppers (optional)., Roll and enjoy. You could also toast the wrap roll through a panini grill for 2-3 minutes.

Steps:

  • In a medium bowl, combine all ingredients.
  • Place in the refrigerator to marinate for at least 2 up to 24 hours.
  • Place about 5 chicken chunks on the skewers alternating between the vegetables and the chicken.
  • Place them on the grill for 15 minutes or until done.
  • Don't forget to turn skewers during cooking.

This is my sister-in-law's recipe for Chicken Shish-tawuk ( I would love to know the correct spelling for this.

4 boneless skinless chicken breasts
1/4 cup flour
3 lemons
1 tablespoon tomato paste
2 tablespoons plain yogurt
1 tablespoon yellow mustard
2 minced garlic cloves
1 pinch salt
1 pinch black pepper
1 pinch cinnamon
1/2 teaspoon allspice (I use 7 Spice)
1/2 teaspoon Season-All salt
bamboo skewer, soaked in water

Steps:

  • Wash chicken breasts with cool water, then cut them into equal sized cubes.
  • In a mixing bowl, squeeze the juice of 1/2 lemon over chicken cubes and coat them with the flour and a pinch of salt. Cut two lemons and put the pieces in the bowl with the chicken.
  • Cover and refrigerate for 15 minutes.
  • During that 15 minutes, in a mixing bowl, mix tomato paste, yogurt, mustard, garlic cloves, salt, black pepper, cinnamon, 7 spice/allspice, season-all and the juice of 1/2 lemon together.
  • Rinse flour and lemon mixture off of the chicken cubes and discard the lemons.
  • Coat the chicken with the spice mixture, cover bowl with saran wrap and refrigerate for at least 3 hours.
  • I like to eat this meal with fattoush salad and baba ghannouj, and use the marinating time to prepare those things.
  • Preheat the oven to 350 degrees.
  • Fry the chicken cubes until they are almost completely cooked. Allow them to cool to the touch.
  • When they have cooled, put about 6 cubes on each skewer.
  • Mix the remaining sauce with 3T of water in the bottom of a Pyrex baking dish and balance the chicken skewers over the top.
  • Bake the chicken for about 15 minutes until the sauce thickens and the chicken is thoroughly cooked.
  • Serve with pita bread and/or rice.
