2 (3 lb) flounder or 2 (3 lb) sole, cleaned and scaled
2 limes, juice of
3/4 cup Spanish olive oil, divided
2 onions, peeled and thinly sliced, divided
1 large green bell pepper, cored, seeded, and thinly sliced, divided
3 bay leaves
salt & freshly ground black pepper
1/2-3/4 teaspoon crushed red pepper flakes
1 tablespoon minced garlic
2 1/4 teaspoons kosher salt
1 teaspoon dried oregano, crumbled
1 cup tomato puree
2 tablespoons white wine vinegar
1 cup dry white wine
chopped fresh parsley leaves, for garnish

Steps:

  • Rinse the fish well under cold running water and pat dry on both sides as well as inside the cavity.
  • Make several slits about 1/3-inch deep on both sides of the fish.
  • Place the fish in a non-reactive shallow dish or platter and pour the lime juice over the fish.
  • Set aside while you continue with the preparations.
  • Preheat the oven to 375ºF.
  • Rub the bottom of a shallow glass or ceramic dish large enough to hold the fish with 2 tablespoons of the olive oil.
  • Saute 1/2 of the onion slices and 1/2 of the pepper slices in 2 tablespoons olive oil and then place along the bottom of the baking dish.
  • Tear 2 of the bay leaves into small pieces and sprinkle over the vegetables.
  • Drizzle with 2 tablespoons more of the remaining Spanish olive oil and season with salt, black pepper, to taste, and crushed red pepper flakes.
  • Place the fish on top of the sliced vegetables.
  • Using a mortar and pestle, combine the garlic, kosher salt and oregano and mash to form a paste. (We used a small food processor.).
  • Spread the garlic paste inside the cavity of the fish and into the slits on top.
  • Place the remaining bay leaf inside the cavity of the fish.
  • In the same small bowl that you used to make the garlic paste, combine the tomato puree and vinegar and stir to combine.
  • Pour this tomato mixture all over the fish.
  • Top with the remaining onion and pepper slices and drizzle the remaining olive oil and the wine over the top.
  • Season again with salt and black pepper, cover the dish loosely with aluminum foil, and bake until the fish flakes easily when pierced with a fork, 45 to 50 minutes.
  • Garnish with the parsley and serve hot or warm, with the pan juices drizzled over all.
  • Serve with white fluffy rice, ripe plantains and a nice leafy salad & vinegar & Olive oil dressing, a loaf of hot Cuban or Italian bread to sop up all the sauce and a nice bottle of wine.

6 pounds pork shoulder or pork butt
8 cloves garlic
6 teaspoons granulated salt
6 teaspoons ground black pepper
6 ounces fresh lemon juice
6 ounces fresh lime juice
8 teaspoons ground achiote
8 teaspoons ground coriander (culantro)
8 teaspoons oregano
6 ounces pure olive oil
6 ounces chopped onions
4 ounces basil
4 ounces green olives
4 ounces pure olive oil
2 ounces green onions
2 ounces green peppers
1 lemon, sliced (peel and all)
1 red bell pepper
1 yellow bell pepper
8 ounces ground achiote
4 ounces fresh lemon juice
4 ounces fresh lime juice
4 ounces pure olive oil
2 ounces fine diced garlic
2 tablespoons ground coriander
2 tablespoons ground cumin
4 teaspoons salt
4 teaspoons granulated black pepper
2 sour oranges, sliced into rounds
Serving suggestion: rice and beans

Steps:

  • For the pork marinade: Rinse the pork with warm water and place on a half-sheet pan preferably 1 to 2 inches deep. Carefully stab 8 to 10 slits with the tip of a chef's knife in different areas of the meat. (Note: If you are using a pork shoulder instead, cut under the thick cap of fat using a fillet knife, cutting while pulling the fat out of the way to one side, revealing the meat; do not remove the layer of fat, just detach it to make way for stabbing slits with your knife.) Using your hands, fill all the slits with garlic cloves, pressing them down into each slit. Add salt and pepper and spread evenly. Pour lemon and lime juices over the pork. Add the achiote, coriander and oregano. Using your hands, massage and spread evenly. Pour the olive oil and spread evenly. Let the pork rest at room temperature for 2 hours.
  • For the blending ingredients: Add the onions, basil, olives, olive oil, green onions, green peppers, lemon, red pepper, yellow pepper and 2 quarts water to a blender. Blend until thick. Set aside.
  • For the mojo marinade: Stir together the achiote, lemon and lime juices, olive oil, garlic, coriander, cumin, salt, pepper and orange slices in a bowl.
  • Preheat the oven to 350 degrees F.
  • Transfer the pork to a deeper roasting pan, preferably 4 inches deep. Add the blending mixture by pouring it evenly over the pork. Now pour the mojo marinate evenly over the pork. Add water, making sure to pour on the sides of the pan and not on top of the pork, and fill at least two-thirds of the way. Cover the pork with foil, sealing tight, and place in the oven. Roast 3 1/2 hours, then remove the foil and turn the oven up to 425 degrees F. Continue to roast for an additional hour.
  • Serve hot with your favorite rice and beans.

2 1/2-3 lbs whole fish, with or without head
2 -3 slices lemons
2 -3 slices onions
2 -3 slices celery
salt and pepper
onion salt
4 tablespoons lemon juice
bacon, strips
2 -3 tablespoons butter

Steps:

  • Soak the fish in cold, salted water for 15-30 minutes; drain and dry slightly.
  • Preheat oven to 400.
  • Season cavity with lemon slices, celery, onion, salt, and pepper and 2 TBS lemon juice.
  • Close the fish and place bacon strips on top or around fish.
  • Sprinkle with salt, pepper, onion salt and remainder of lemon juice.
  • Cover with pats of butter and bake until flesh is white and flakes apart with fork (about 30 minutes for a 2 1/2 pound fish or 40-45 minutes for a 3 pounder).
  • the fish may be broiled at the end to brown the bacon.
  • Cut into 1 1/2 inch wide sections and serve with lemon wedges.
  • Serves 2-4, depending on size of fish.
  • Note: Other vegetables such as potatoes and tomatoes may be cooked with the fish if desired.

4 1/2 pounds new potatoes, very thinly sliced
9 tablespoons extra-virgin olive oil, divided
Fine sea salt and freshly ground black pepper
3 lemons, thinly sliced
1/2 cup coarsely chopped fresh flat-leaf parsley
1 whole 6-pound turbot, fluke, or halibut or six 1-pound branzino
6-8 fresh or dried bay leaves

Steps:

  • Preheat oven to 400°F. Put potatoes in a large bowl. Drizzle with 4 tablespoons oil and toss to coat. Season with salt and pepper. Line a large rimmed baking sheet with parchment paper and grease parchment with 1 tablespoon oil. Layer potato slices evenly on parchment; season with salt and pepper. (If using a smaller fish, such as branzino, par-cook the potatoes in the oven for 15 minutes now.) Arrange half of the lemon slices over potatoes and sprinkle with parsley.
  • Set fish over potatoes and rub with 2 tablespoons oil; season skin and cavity with salt and pepper. Top with remaining lemon slices and arrange bay leaves over fish. Drizzle with remaining oil. Bake until fish is just cooked through, 40-60 minutes (depending on size). Using a butter knife or metal spatula, flake flesh off the bone and serve immediately.

1 ½ cups thinly sliced white onions
2 tablespoons minced garlic
4 cups seeded, chopped plum tomatoes
1 ½ cups dry white wine
⅔ cup sliced stuffed green olives
¼ cup drained capers
⅛ teaspoon red pepper flakes
4 (6 ounce) fillets sea bass
2 tablespoons butter
¼ cup chopped fresh cilantro

Steps:

  • Heat oil in a large skillet over medium heat. Saute onions until soft. Stir in garlic, and saute about 1 minute. Add tomatoes, and cook until they begin to soften. Stir in wine, olives, capers, and red pepper flakes. Heat to a simmer.
  • Place sea bass into sauce. Cover, and gently simmer for 10 to 12 minutes, or until fish flakes easily with a fork. Transfer fish to a serving plate, and keep warm.
  • Increase the heat, and add butter to sauce. Simmer until the sauce thickens. Stir in cilantro. Serve sauce over fish.
