SNAPPER WITH ROASTED GRAPE TOMATOES, GARLIC, AND BASIL

Steps:
- Position a rack in the middle of the oven and preheat to 350 degrees F.
- Toss the tomatoes with 1 tablespoon of the olive oil, garlic, vinegar, pepper flakes, and salt, to taste. Spread out on a baking sheet and roast until the tomatoes get juicy, about 15 minutes. Transfer tomatoes to a bowl and toss with the basil.
- Dry the fish very well all over. To keep the fish from curling in the pan, lightly slash a cross-hatch pattern into the skin of the fish with a sharp knife. Brush the rounded flesh side of the fish with the remaining olive oil. Season with salt and pepper, to taste. Heat a large non-stick skillet over medium-high heat. Place the fish, seasoned side down, in the oil, and cook undisturbed over high heat, until the fish turns both opaque along the edges and golden on the bottom, about 3 minutes. Lightly salt the skin side of the fish. Flip the snapper and turn off the heat and let the fish cook in the residual heat of the pan until the fillets are firm but still juicy, about 1 minute more.
- Divide the fish among 4 plates. Top with the tomatoes and serve.

Steps:
- Set a pan of water to boil.
- Peel the potatoes and chop them into eighths.
- Put them in the pan of hot water to boil for 15-20 minutes, until cooked.
- Meanwhile, chop the cherry tomatoes into eighths and set aside.
- Add the pine nuts to the tomatoes.
- Finely chop the fresh basil leaves into the tomato mixture.
- When the potatoes are cooked and soft, mash them.
- Stir the cream cheese and olive oil into the mashed potatoes. Season with salt and pepper to taste.
- Add the tomato mixture to the mashed potatoes and mix gently.
- Add the mozzarella cheese to the mashed potatoes and gently stir to mix. Do not stir too much as the mozzarella can become "stringy" if mixed too much.
- Serve hot!
- Note: These mashed potatoes can also be stored in the fridge and reheated in the microwave if you have leftovers!

- In a 450 degree oven, roast cherry tomatoes in olive oil and minced garlic until slightly browned and squished (keep an eye on this process).
- Remove from oven and either use immediately or refrigerate for no more than 2 days.
- In a large heavy pan, pour the olive oil and heat on medium-hot heat, and never on a hot setting (olive oil burns easily).
- Add the slices of garlic and cook briefly until golden . . . making sure that the garlic does not burn.
- Add the roasted tomatoes.
- Add freshly-grated parmesan cheese, about a handful or ½ cup.
- Add freshly-cracked sea salt to taste.
- Simmer on low heat while pasta cooks.
- In a tall pot, boil water with about 2 Tbsp. sea salt.
- Add thin spaghetti (spaghettini) noodles and cook until 'al dente', no more than 7 minutes.
- Do not throw away the pasta water!
- With a hand-held strainer, remove the pasta from the water, tapping against the side of the pan, and place in the roasted tomato-garlic-Parmesan sauce.
- Add adding the pasta to the tomato-garlic sauce, add some of the hot pasta water (½ cup or so) to the tomato-garlic sauce and pasta to help 'cream' it.
- Add more grated Parmesan cheese (about 1 cup).
- Add freshly-picked basil leaves (about 1 cup).
- Blend gently.
- Salt and pepper according to your taste preferences.
- Add more Parmesan cheese to your taste preferences.
- Prepare ahead of time, your favorite Italian meatballs or purchased high-quality pre-made frozen Italian meatballs.
- Heat meatballs and immediately add to the sauce mixture while the pasta is cooking.

- Place 4 quart jars or 8 pints along with the two-piece caps in hot, soapy water. Rinse well and drain. Heat jars and lids in simmering water (180 degrees) and allow them to stand there until ready to use.
- Select fresh Roma Tomatoes at their peak of quality. Use firm tomatoes, free of cracks and spots. Remove the stem and using a paring knife make a small "X" cut through the skin on the top of the tomato. Place large stock pot on the stove filled with water and bring to a rolling boil. Place the tomatoes in a wire basket and lower them into the boiling water. Blanch tomatoes 30 to 60 seconds or until the skin at the top of the tomato starts to peel away from the "X" mark carved into the top. Dip the tomatoes immediately into cold water to stop the cooking process. Once again using the paring knife, slip the skins off the tomatoes beginning at the "X" mark and leave the Roma Tomatoes whole. Place the peeled tomatoes into another large sauce pot adding just enough water to cover by one inch. Bring the water to a rolling boil and cook tomatoes 5 minutes. While tomatoes are cooking, remove the canning jars from the hot water along with the lids and place on a towel. Add 2 tablespoons of lemon juice in each jar. Carefully pack the hot tomatoes into the jar placing 2 Basil leaves and 4 cloves of garlic into each jar at alternating levels for eye appeal. Carefully ladle the hot cooking liquid over the tomatoes leaving one half inch of head space. Top with 1 teaspoon each of salt and Hot Sauce.
- Move the jar gently to remove any air bubbles that may have formed around the tomatoes. Repeat two or three times. Screw down the lid and rim firmly onto the jar and place in a simmering water bath for approximately 45 minutes. Remove from hot water and set aside to cool. Once cool, check lids for proper sealing, label and store in a cool, dark place.
