Seared Sea Scallops With Tropical Salsa image

I haven't tried it yet but it sounds so good. Simple prep with pineapple, mango, cucumber, red bell pepper, cilantro, lime juice and jalapeno. Sounds refreshing for a summer dinner or nice lunch. I would consider it for a first course too.

1/2 cup pineapple, diced
1/2 cup mango, diced
1/2 cup cucumber, diced
1/2 cup red bell pepper, seeded and diced
3 tablespoons cilantro
4 teaspoons fresh lime juice
1 jalapeno, seeded, minced
salt
pepper
20 sea scallops

Steps:

  • In a bowl combine all the ingredients except for the salt, pepper and scallops.
  • Toss well. Season with salt and pepper and set aside.
  • Heat a large nonstick frying pan over medium-high heat.
  • Coat the pan with cooking spray.
  • Season the scallops with salt and pepper.
  • Add half the scallops and sear, turning once, about 2 minutes. Remove and keep warm.
  • Repeat with the remaining half of the scallops.
  • Top with the salsa and serve.

8 large scallops
1 tablespoon olive oil
Salt and pepper

Steps:

  • Put the dragon fruit in the fridge for a few hours and allow it to get very cold. This will allow you to dice it finely. Season the scallops with salt and pepper. Heat the olive oil in a skillet on medium high heat and pan sear the scallops until golden brown (about 2 to 3 minutes on each side).
  • In a separate bowl, combine the dragon fruit, lemon juice, and chopped chives. Top the scallops with the dragon fruit salsa and serve

These summery grilled scallops are served with a kicky corn salsa, made bright green with puréed raw tomatillos, punched up with jalapeño and lime. Look for dry-packed or diver scallops, which means they are quite fresh (and haven't been dipped in a solution of sodium bisulphite, a commonly used preservative). Large scallops, about 2 ounces each, are ideal for grilling or pan-searing. Serve with small boiled potatoes.

12 medium tomatillos, husks removed, roughly chopped (about 1 cup)
1 jalapeño, seeds and veins removed to lessen heat if desired
2 large ears fresh sweet corn, kernels removed (about 1 1/2 cups)
2 medium sweet red bell peppers, or a mixture of colors, finely diced
1 small red onion, finely diced
2 tablespoons lime juice
Salt to taste
12 large sea scallops (about 1 1/2 pounds)
Salt and pepper
2 tablespoons extra-virgin olive oil
Lime wedges, for garnish
Cilantro sprigs, for garnish

Steps:

  • Prepare a charcoal fire for grilling (or use a ridged stovetop grill pan).
  • Make the salsa: Place the tomatillos and jalapeño in a blender or food processor and pulse to make a rough purée. Transfer to a bowl. Stir in corn, bell peppers, onion and lime juice. Add 1/2 teaspoon salt. Let salsa rest for a few minutes, then taste and adjust salt.
  • Season sea scallops with salt and pepper on both sides and drizzle with olive oil. Rub with fingers to distribute and coat scallops with seasoning.
  • When the grill is medium hot, set the scallops on it in a single layer. Leave for 3 minutes, until well browned. (It's O.K. to lift an edge to peek, but don't try to turn the scallops until they have colored well or they'll stick to the grill.) When they are nicely crisped and browned turn each scallop with tongs and cook for another 3 minutes, until cooked through.
  • Transfer scallops to a serving platter and spoon some salsa over them. Garnish with lime wedges and cilantro sprigs. Pass the salsa at the table.

1/3 cup diced green melon
3 cups diced pineapple
3 tablespoons finely diced red onions

24 sea scallops (about 1 1/4 inch diameter)

Steps:

  • In bowl combine all salsa ingredients and mix well.
  • The sweet vs tart balance can be adjusted to your taste by adding more sugar or lime juice.

  • Right when butter starts to turn color, add scallops and cook 1 1/2-2 minutes on each side or until they are lightly browned.

8 sea scallops, dry (can sub bay scallops if larger scallops are not available)
1 dash cumin, on each scallop
1/4 teaspoon salt
1/8 teaspoon ground pepper
1/2 lb grape tomatoes (or cherry)
1 tablespoon capers
1 teaspoon lemon juice, fresh
1/4 cup red onion, minced
1 teaspoon jalapeno pepper, minced (seeded and de-ribbed)
1/2 teaspoon brown sugar
1/2 teaspoon cumin
cooking spray
1 teaspoon butter
1/4 teaspoon brown sugar
1 teaspoon olive oil

Steps:

  • Rub scallops with cumin, salt and pepper. Can sit in refrigerator from 5 minutes or longer up to 2 hours.
  • Quarter grape tomatoes, add capers, lemon juice, red onions, jalapeño peppers, brown sugar, cumin, salt, and pepper; toss lightly together in a small bowl.
  • Spray a skillet with non cooking spray, over medium heat, melt together butter, oil, and brown sugar.
  • Add scallops 4 at a time, searing and browning on one side, turning over at the end of 3 minutes, and brown on second side. Continue with last 4 scallops.
  • Place two cooked scallops on each plate, and top with fresh tomato caper salsa.
