MARBLED BANANA BREAD
Save your ripe bananas for this healthy marbled bread-it's just over 200 calories per slice and made with half whole-wheat flour. A small amount of melted chocolate swirled in assures chocolate in every bite.

- Preheat the oven to 350 degrees F. Lightly mist a 9-by-5-inch metal loaf pan with nonstick cooking spray and dust well with all-purpose flour to cover the pan completely, tapping out the excess. Put the chocolate in a medium microwave-safe bowl and microwave on high in 30-second intervals, stirring, until melted and smooth, 1 minute to 1 minute 30 seconds. Set aside to cool slightly while preparing the batter. Combine the bananas and sugar in a large bowl and mash with a potato masher or fork until mostly smooth with just a few small pieces of banana left. Add the oil and eggs and stir until combined. Using a wooden spoon or rubber spatula, mix in both flours, the baking powder, baking soda and salt. Stir in the buttermilk and vanilla. Stir 1 cup batter into the melted chocolate. Fill the loaf pan with half the banana batter and then half the chocolate batter. Repeat the layers and gently swirl together using a spoon or knife. Bake until golden brown on top and a toothpick inserted in the center comes out clean, about 45 minutes. Cool in the pan 15 minutes, and then turn out onto a wire rack to cool completely. Serve warm or at room temperature. Cook's Note: To prepare your loaf pan for baking, you can also use a nonstick spray with flour already in it. Flouring the pan helps the bread rise well and prevents any collapse after it comes out of the oven. WHOLE WHEAT CHOCOLATE CHIP BANANA BREAD
This is my personal twist on a recipe I found by Fiona Haynes on About.com. I make it with whole wheat, white flour, more bananas and chocolate chips. To die for!

Steps:
- Preheat oven to 350 degrees.
- Spoon flour gently into measuring cups and level with a knife.
- Stir flour, baking soda and salt together in a medium bowl. Put aside.
- Place sugar and butter in a large bowl and beat at low speed with a mixer until well blended.
- Add one egg at a time and blend well after each one.
- Add in mashed banana, yogurt and vanilla extract, and beat until blended.
- Add chocolate chips and mix until they are spread throughout the batter.
- Add flour mixture and blend until just moist. Do not over-mix.
- Spray an 8 1/2 x 4 1/2-inch loaf pan with nonstick cooking spray.
- Pour batter into pan.
- Bake at 350 degrees for 60-70 minutes (until a toothpick inserted in the middle comes out clean).
- Remove from pan after 10 minutes or so and cool on a wire rack.

WHITE WHOLE WHEAT BREAD
This is from the King Arthur website and is for a loaf made with white whole wheat. These directions are for a 1 1/2 pound loaf, but you can adjust to a 1-pound or a 2-pound loaf based on the flour/liquid/yeast proportions your bread machine requires. I am posting this recipe here b/c this is our go-to bread recipe (I typically make a couple of loaves a week) and I wanted easy access to it in my Zaar Cookbook.

- Put all ingredients in bread pan.
- May add an optional 1/4 c of seeds (such as sesame, sunflower, or flax, or a combination). Sometimes I also add 1/4 c of wheat germ, oat bran or wheat bran instead of flax seeds.
- Program for basic white bread.
- Press start.
- 3 hours cooking time is based on a 1 1/2 pound white loaf with a light crust in my bread machine. Baking time will vary according to settings you choose on your machine.
BABY BEAR'S WHOLE WHEAT BANANA BREAD
"Just right!" Delicious, moist, and wholesome. This bread (a favorite with my brothers) uses no refined grains or sugars. Plus, it uses up those overripe bananas sitting on the counter! White whole wheat flour is made from a softer grain than regular WW, so it has a more tender texture but the same health benefits. Using it allows you to get all the fiber and nutrition of whole grains, but not risk turning out a hard, dry loaf! :) Besides white whole wheat, the bananas, applesauce, and wheat germ ensure that this bread is moist and flavorful. It freezes very well, so eat one loaf now and save the other one for later -- if you have any left over to freeze, that is!

- Stir together dry ingredients.
- Beat oil, applesauce, and honey together; add eggs and beat well.
- Add bananas and beat to combine.
- Add dry ingredients to wet, alternating with hot water; mix well after each addition.
- Pour into two greased 5x9 loaf pans; bake at 325 degrees for 60-70 minutes, or until tests done (it takes 75 minutes for me, but I think my oven is messed up, so it may need a shorter amount of time for you).
- Invert loaves onto wire rack to cool completely.
WHOLE WHEAT BANANA BREAD
I actually abandoned my "family" banana bread in favor of this one... It's more a like a cake than a bread. I have increased the bananas from the original recipe, and I prefer to omit the nuts. I like mine warm with butter on top. Yummy!

- Melt butter.
- Put the butter, sugar, bananas and eggs in a blender. Blend until nice and smooth.
- Now transfer to a mixing bowl.
- In a separate bowl, stir together flours, salt, and baking soda.
- Add dry ingredients to banana mixture alternately with hot water.
- Stir in chopped nuts.
- Cut a piece of waxed or parchment paper the size of the bottom of your loaf pan.
- (This helps the loaf come out in one piece while still warm).
- Put the paper in the loaf pan and spray the pan well with non-stick spray.
- Scoop the batter into the pan.
- Bake in a preheated 325 degree F oven for one hour and 10 minutes.
- Test with a cake tester to make to make sure it's done.
- Sometimes it takes a little bit longer.
- If the top gets too brown, cover it with a piece of aluminum foil so it doesn't get too much darker.

- Preheat oven to 350°F.
- Grease 9x5-inch loaf pan.
- Mix six first ingredients in a medium bowl.
- Add raisins and chocolate chips; set aside.
- Mix bananas, eggs, oil and vanilla.

VERY MOIST WHOLE WHEAT BANANA BREAD
This is my own adaptation of banana bread, and it has turned out very moist. Lower sugar, more nutrient dense, too. Has a very fine texture due to the whole grain wheat. Try it, and you'll see! This freezes well for later use.

- Preheat oven to 350 degrees.
- Combine margarine, oil, sugar, stevia, and mashed bananas in a large bowl. Mix until creamy.
- Add vanilla, eggs, and milk to the creamed mix.
- In a separate bowl, measure out whole wheat flour. To get a finer texture, you can blend it. This helps to achieve the moistness and unique texture of the bread.
- Add baking soda and salt to flour, and mix.
- Add flour mixture to the creamed mixture.
- Put bread batter into a greased 9"x5" pan, and spread flat into pan.
- Bake 50-60 minutes, depending on the power of your oven.
- Cool in pan for 5 minutes before removing to a cooling rack. :).
