6 skinless, boneless chicken breast halves
salt and pepper to taste
½ cup honey
½ cup prepared mustard
1 teaspoon dried basil
1 teaspoon paprika
½ teaspoon dried parsley

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Sprinkle chicken breasts with salt and pepper to taste, and place in a lightly greased 9x13 inch baking dish. In a small bowl, combine the honey, mustard, basil, paprika, and parsley. Mix well. Pour 1/2 of this mixture over the chicken, and brush to cover.
  • Bake in the preheated oven for 30 minutes. Turn chicken pieces over and brush with the remaining 1/2 of the honey mustard mixture. Bake for an additional 10 to 15 minutes, or until chicken is no longer pink and juices run clear. Let cool 10 minutes before serving.

2 tablespoons honey
1 teaspoon dried oregano
1 teaspoon water
1/4 teaspoon garlic powder
1/8 to 1/4 teaspoon cayenne pepper
4 boneless skinless chicken breast halves (4 ounces each)
4 sandwich buns, split
1 cup shredded lettuce
8 thin tomato slices

Steps:

  • In a small bowl, combine the first six ingredients. Broil chicken 4 in. from the heat for 4-7 minutes on each side or until a thermometer reads 170°, brushing occasionally with mustard mixture. Serve on buns with lettuce and tomato.

1/2 cup grilled onions reserved from Grilled Honey-Mustard Chicken with Onions and Spinach Salad
2 tablespoons honey mustard reserved from Grilled Honey-Mustard Chicken with Onions and Spinach Salad
1 tablespoon mayonnaise
1 baguette
2 ounces sliced Swiss cheese
2 cups baby spinach

Steps:

  • Thinly slice chicken breasts. Finely chop onions and combine with honey mustard and mayonnaise. Cut a baguette into 4 pieces and halve each lengthwise. Layer bottom halves with chicken, Swiss cheese, and onion mixture. Top with baby spinach and sandwich with top halves.

Steps:

  • In a small saucepan, bring vinegar to a boil.
  • Remove from heat and whisk in mustard powder; cover and allow to stand 6 hours or overnight.
  • Whisk in the honey and egg yolks, and replace the pan on low heat, cooking and stirring until mixture is thickened, about 5 minutes.
  • Remove from heat and cool.
  • Store mustard refrigerated in airtight container for up to 1 month; pairs well with sandwiches, chicken, ribs, and soft pretzels.
