EASY UPSIDE DOWN CAKE

Steps:
- Drain pineapple; reserve 3/4 cup juice.
- Stir together melted butter and brown sugar in 12-inch skillet with heat-proof handle. Arrange pineapple slices in sugar mixture. Place cherry in center of each pineapple slice.
- Prepare cake mix according to package directions, replacing water with reserved 3/4 cup juice. Pour batter evenly over pineapple.
- Bake at 350 degrees F., 40 to 45 minutes or until toothpick inserted in center comes out clean.
- Cool 5 minutes. Loosen edges and invert onto serving platter.
- Note: Cake can be baked in 13x9-inch baking pan instead of skillet. Prepare and assemble cake as above except cut two pineapple slices in half and place whole slices along edges of pan and halved slices in center. Place cherries in center of slices. Bake and cool as above.
- Mini Upside Down Cakes:
- Drain 1 can (20 oz.) DOLE® Crushed Pineapple, reserve juice.
- Grease 24 muffin cups. Stir 1/3 cup melted butter with 2/3 cup packed brown sugar.
- Evenly spoon mixture into bottom of cups; spoon about 1 tablespoon crushed pineapple over sugar mixture.
- Prepare cake mix as above. Evenly pour batter into cups.
- Bake 20 to 25 minutes.
- Invert onto serving platter. Makes 24.

BACKYARD CITRUS UPSIDE-DOWN CAKE
Steps:
- Position a rack in the center of your oven and preheat the oven to 350°F. Butter a 9-inch round cake pan and line it with parchment paper.
- Start by making the upside-down layer:
- In a medium saucepan over low heat, melt the butter. Remove the pan from the heat and add ½ cup of the sugar and 2 tablespoons of water. Whisk the mixture until the sugar dissolves and the mixture is glossy and thickened a little. Pour the melted butter and sugar into the prepared cake pan and smooth into an even layer to cover the bottom. Place the cake pan in the freezer until the butter and sugar layer freezes; leave the pan in the freezer until you are ready to transfer the batter to the pan.
- In a small bowl, gently toss the lemon slices with the remaining 2 tablespoons of sugar. Leave the lemon slices in the sugar to macerate for 10 minutes.
- While the upside-down layer freezes, make the cake batter:
- Sift the flour, baking powder, baking soda, and salt into a large bowl. Set aside. Combine the eggs with the olive oil in another large bowl and beat vigorously with a whisk until well combined. Add the yogurt and sugar. Make a well in the flour mixture and add the wet mixture in three additions, folding in each addition until no dry bits of flour remain. Set aside.
- Fan the lemon slices out to cover the melted butter and sugar in the cake pan, overlapping the slices by as much as 1⁄8 inch. Pour the cake batter directly on top of the lemon slices.
- Bake for about 1 hour, until a cake tester inserted into the center comes out with only a few moist crumbs clinging to it. Transfer to a wire cooling rack and let cool for 15 minutes. Invert the cake onto a serving plate and carefully remove the parchment-paper lining. Allow the cake to cool for 1 hour more before serving.
- Note: This cake can be made with nearly any citrus, my favorite being lemon because I like it to be bitter and tart. The only citrus I would not use is raw grapefruit, oro blanco, or lime. The rinds of grapefruit and oro blanco are much thicker than lemons and oranges and they will take longer to bake. Lime and grapefruit also retain too much of the bitter quinine flavor and will make for an odd-tasting cake
UPSIDE-DOWN MEATBALL CASSEROLE

- Heat oven to 400°F. Spray 13x9-inch (3-quart) baking dish with cooking spray.
- In medium bowl, mix all Meatball ingredients. Shape mixture into 28 (1 1/2-inch) balls. Place in ungreased 15x10x1-inch rectangular pan. Bake uncovered 20 to 25 minutes or until thoroughly cooked and no longer pink in center; remove from oven, and reduce oven temperature to 350°F.
- Meanwhile, in small bowl, mix ricotta cheese, 1/3 cup Parmesan cheese, the Italian seasoning, 1/4 teaspoon pepper and 1/8 teaspoon salt; mix well.
- Spread cooked meatballs in bottom of baking dish. Drop spoonfuls of ricotta mixture between meatballs. In 4-cup glass measuring cup, microwave pasta sauce covered on High 2 to 3 minutes, stirring halfway, until heated through and steaming. Pour heated pasta sauce on top of meatball and ricotta layer.
- In large resealable food-storage plastic bag, add biscuit pieces; toss with 2 tablespoons Parmesan cheese and 2 tablespoons bread crumbs, shaking bag to coat. Spread biscuit pieces on top of hot pasta sauce layer; sprinkle any remaining bread crumb mixture on top. Bake 33 to 38 minutes or until biscuits are deep golden brown and baked through. Cool 10 minutes before serving. Top with basil.

- Preheat oven to 425°. In a saucepan, cook sausage, onion and green pepper over medium heat until meat is no longer pink; drain. Stir in 2 tablespoons flour, basil and fennel. Add tomato sauce. Bring to a boil; cook and stir for 2 minutes. , Transfer to an ungreased 13x9-in. baking dish. Sprinkle with mozzarella cheese. Place remaining 1 cup flour in a large bowl. LEMON UPSIDE-DOWN CAKE

- Prepare a grill for indirect heat. If using a charcoal grill, build the hot coals on one side only. If using a gas grill, heat one side only to medium-high heat.
- Whisk together the flour, salt, baking powder, baking soda and cinnamon in a small bowl. Whisk together the eggs, milk, olive oil, sugar, 1 teaspoon vanilla, lemon juice and zest in a large bowl. Pour the dry ingredients into the wet ingredients and whisk to combine. Set aside.
- Place a shallow enameled Dutch oven over direct heat. Add the butter and melt. Continue to toast the butter until it becomes brown and nutty, 1 to 2 minutes. Swirl the butter up the sides of the Dutch oven as you are toasting it to prevent the cake from sticking.
- After the butter has browned, whisk in the brown sugar and allow it to melt. The mixture will resemble wet sand and won't get completely smooth.
- Take the Dutch oven off the heat and shingle the lemon slices in, covering the whole surface. Keep in mind that this will be the top of your cake. Pour the batter into the Dutch oven and put it back over indirect heat. Close the grill and bake until a toothpick inserted into the center of the cake comes out dry, 50 minutes to 1 hour. Remove the cake from the grill and allow it to cool for 5 minutes. Invert the cake onto a platter and continue to cool until ready to serve.
- Meanwhile, place a 2-cup glass jar with a lid in the freezer for 20 minutes. When the jar is cold, pour in the cream and add the sugar and the remaining 1 teaspoon vanilla. Vigorously shake until you end up with soft whipped cream, about 5 minutes.
- Cut the cake into 8 slices and serve with a dollop of whipped cream on top.
- (Alternatively, you can bake the cake in a 350 degrees F oven for 50 minutes.)

- Set oven to 350 degrees.
- In a large oven-proof skillet brown the sausage; drain fat.
- Add in the chopped onion, garlic, oregano and dryed chili flakes (if using); cook until tender.
- Stir in tomatoes, breaking them up with a fork slightly; bring to a boil, then season with salt and pepper.
- Simmer about 30 minutes, stirring occasionally.
- Stir in Mozzarella cheese.
- Sprinkle 1/4 cup Parmesan cheese, or more, if desired over tomato mixture (do not mix in).

- Preheat oven to 350 degrees F (175 degrees C).
- Place the cauliflower florets onto a baking sheet, and brush with olive oil. Bake in the preheated oven until beginning to brown, about 30 minutes. Set aside.
- While cauliflower is baking, place ground beef and onion into a large pot over medium heat, and cook and stir until the meat is browned, about 10 minutes. Break the meat apart into crumbles as it cooks. Remove from heat.
- In a saucepan, bring the water to a boil, and stir in the salt, black pepper, cumin, oregano, curry powder, and turmeric.
- Mix the cooked cauliflower and garlic into the ground beef and onion in the large pot, and stir in the white rice. Pour the spiced water into the pot over the rice, and bring to a boil. Reduce heat to a simmer, and cover the pot; cook until the rice is tender and the water has absorbed, 15 to 20 minutes. Remove from heat, and allow to stand covered for 5 to 10 minutes to help dry out the rice.
- To serve, place a large serving platter on top of the uncovered pot, and flip to turn out the contents onto the platter.

- Heat olive oil in a large skillet over medium heat. Add potatoes, red bell pepper, garlic and onion, and cook, stirring occasionally until potatoes are tender. Cover the pan with a lid for faster cooking.
- Preheat the oven to 350 degrees F (175 degrees C). Line the bottom of an 8 or 9 inch cake pan with parchment paper. Set aside.
- Fry bacon in a skillet over medium heat, or cook in the microwave, until crisp. Drain, crumble and set aside. Sprinkle the cheese in the bottom of the prepared pan. Sprinkle bacon crumbles evenly over the cheese. Scoop the potato mixture into the pan so it is evenly distributed. Whisk together eggs and milk with a fork, and season with a little salt and pepper. - Bake for 20 minutes in the preheated oven, just until the egg is set. Remove from the oven and run a knife around the outer edge. Flip onto a serving plate, and remove the parchment paper. Serve and enjoy.
