CROCK POT FRESH BLACK-EYED PEAS WITH BACON RECIPE
Steps:
- Rinse the black-eyed peas and drain well.
- Put the rinsed fresh peas in a 4- to 6-quart slow cooker.
- Dice the bacon and set aside.
- Peel and chop the onion. Chop the bell peppers.
- Place a large skillet over medium heat. Add the bacon to the skillet and cook until softened and most of the fat has rendered. Add the onion, bell peppers, and celery; continue cooking until vegetables are tender, stirring frequently.
- Stir in garlic and cook for 1 minute longer.
- Transfer the bacon and vegetable mixture to the slow cooker along with the water.
- Cover and cook on low for 5 to 7 hours, or until peas are tender.
- Add the tomatoes, chili powder, salt, pepper, and oregano; continue cooking for 1 to 2 hours longer.

- Add the dried peas to the slow cooker. NO NEED TO PRESOAK.
- Add the chicken broth, can of diced tomatoes, bacon, ham, onion, garlic, oregano and pepper. Stir. WAIT TO ADD THE SALT.
- Cover and cook on HIGH FOR 7 hours. Do not open the lid during the cooking time.
- Add the salt to taste.
- For creamier beans remove 1 cup of the beans and mash. Add back to the slow cooker and stir.

Steps:
- Fry bacon in heavy medium skillet until crisp.
- Remove using slotted spoon and drain on paper towels; set aside for garnish.
- Add minced onion to bacon drippings and cook over medium-high heat until just translucent, stirring constantly, about 3-4 minutes.
- Add garlic and stir 1 minute.
- Add celery seed and dill seed and stir 30 seconds.
- Blend in vinegar and honey and boil 2 minutes, stirring constantly.
- Whisk in olive oil in thin stream; remove from heat and whisk dressing until smooth.
- Pour over black-eyed peas; season to taste with salt and pepper.
- Add red onion slices and toss gently.
- Let stand at room temperature at least 1 hour.
- Arrange escarole on serving platter and mound pea salad over greens.
- Garnish with bacon and parsley and serve.

- Place peas in large saucepan. Add enough water to cover by 3 inches. Bring to boil; simmer on medium-low heat 2 min. Remove from heat. Let stand, covered, 1 hour.
- Cook and stir carrots, onions and bacon in skillet on medium heat 8 min. or until onions are crisp-tender. Meanwhile, bring broth, tomatoes and water to boil in saucepan.
- Drain peas; place in slow cooker. Add cooked vegetables, broth mixture, ham and cumin; stir. Cover with lid; cook on LOW 5 to 6 hours (or on HIGH 2-1/2 to 3 hours).
- Stir in greens. Cook, covered, 30 min. or just until greens are tender. Serve with rice.

SLOW COOKER BLACK EYED PEAS
This is pretty close to the way my mom used to make black eyed peas when I was a kid. I think she was trying to duplicate the way that my dad's mom made them for him. My family loves them, even the kids.

- Rinse black eyed peas, and follow package directions for quick soak (Boil for two minutes, then let sit for one hour). Rinse again, drain and place in slow cooker.
- Dissolve 3 chicken bullion cubes in a cup of hot water. (I usually put them in a coffee mug of water and microwave for about a minute and a half to dissolve.) Pour into the slow cooker. Add additional water if needed so that there is about 3/4 inch of liquid covering the peas.
- Add the remaining ingredients and stir just to get them wet. Note: If using fresh instead of dried minced onion, the amount would be about 1/2 cup. I use dried because they are already minced very finely and my family doesn't even notice it's in there that way. I also use refrigerated minced garlic and crumbled bacon from costco. That way I always have the ingredients on hand. Add a little salt and pepper.
- Cover and cook on low for about 7 hours. Taste and add additional garlic, salt and pepper if needed according to your preference. Serve with corn bread.

- Place bacon in a 5-quart Dutch oven and cook over medium-high heat, turning occasionally, until evenly browned and crisp, about 10 minutes. Drain bacon slices on paper towels and crumble when cool enough to handle.
- Heat bacon drippings over medium-high heat. Cook and stir onion, celery, and garlic in the drippings until tender, about 5 minutes. Add chicken broth, black-eyed peas, salt, and pepper. Bring to a boil and skim the top if necessary.
- Reduce heat to a simmer. Add bacon and adjust salt and pepper to taste. Cover and simmer until peas are tender, 30 minutes to 1 hour, depending on how tender you like them.
