SPARKLING WHITE SANGRIA
With sparkling wine and fresh fruit, this white sangria is pretty and festive -- perfect for a party!

- In a large pitcher, combine the brandy, orange liqueur and sugar. Squeeze juice from one lime and one orange half into the pitcher. Stir until the sugar dissolves. Slice the remaining orange half into thin slices and add to pitcher, then add chopped apples and nectarines. Add the sparkling wine, lemon-lime soda and a large bunch of frozen grapes. Place ice cubes in glasses (do not put them in the pitcher or they'll water the drink down) along with small bunches of frozen grapes and pour sangria over top. Spoon chopped fruit into glasses, garnish with lime slices if desired and serve.
- Note: Superfine sugar dissolves much faster than regular sugar. It is available at most supermarkets. This recipe makes a fairly sweet sangria; if you prefer it dry, use less sugar.

- In a small saucepan, combine the sugar, water and vanilla. Bring to a boil over medium heat. Reduce heat; simmer, uncovered, for 3-5 minutes or until sugar is dissolved, stirring occasionally. Remove from the heat; cool to room temperature. Discard vanilla bean., Divide the fruits between 2 large pitchers. Add the wine, orange juice, liqueur, Cognac, lemon juice, lime juice and vanilla mixture. Refrigerate for at least 4 hours. Just before serving, stir in carbonated water.

- Cut your fruit, add to a large jug or pitcher.
- Add your sugar, liquor of your choice, and juice. Stir gently then let stand at room temperature for one hour to masticate fruit.
- Pour in your chilled sparkling wine and (if you have room) the mix (or you can add it to the glass or skip it altogether; like I do!).
- Serve Sparkling Sangria immediately over ice. Garnish with sliced fruit, basil or mint, or all three!

- Put the chopped fruit in a bowl and sprinkle over the sugar and cinnamon, then stir to coat. Cover and leave to macerate in the fridge for at least 1 hr, or ideally overnight.
- Fill a large jug with ice. Stir the macerated fruit mixture to ensure the sugar is dissolved, then tip into the jug with the wine and brandy. Stir, then top up with the sparkling water and serve.

I found this recipe in the August 08 Family Circle magazine. It has been a hit every time I make it. Family and friends always ask me for the recipe. It has been one of the best sangria recipe that I have found.

- Combine white wine, pomegranate juice, red wine, schnapps, apple pieces, and peach in a large pitcher. Stir will to blend flavors. Refridgeratd for at least 2 hours or overnight. Before serving, add 7up and club soda. Serve over ice with orange curlicue garnish.
